Meet the Cook: This soup's one my mother taught me to make. It's good all year but especially when the weather's cold. In winter, I serve it with grilled cheese sandwiches. It would also be a nice lunch with a side salad or homemade corn bread. Even our grandchildren - we have four - like it. It's a good way of getting them to eat their vegetables. 1 pound beef stew meat, cut into 1/2-inch cubes
1 small meaty beef soup bone (beef shanks or short ribs)
2 tablespoons vegetable oil
4 cups water
1 can (28 ounces) diced tomatoes, undrained
1 cup chopped carrots
1 cup chopped celery
1/4 cup chopped celery leaves
1 tablespoon salt
1/2 teaspoon dried marjoram
1/2 teaspoon dried basil
1/4 teaspoon dried savory
1/4 teaspoon dried thyme
1/8 teaspoon ground mace
1/8 teaspoon hot pepper sauce

Steps:

  • In a Dutch oven or soup kettle, brown the stew meat and soup bone in oil. Add the remaining ingredients; bring to a boil. Reduce heat; cover and simmer for 4-5 hours or until meat is tender. Skim fat. Remove meat from bone; cut into 1/2-in. cubes. Return to soup; heat through.

1 large onion, chopped
8 fresh baby carrots, sliced
1 tablespoon olive oil
2 tablespoons all-purpose flour
1 can (14-1/2 ounces) reduced-sodium chicken broth
1 can (28 ounces) diced tomatoes, undrained
1/2 teaspoon sugar
1/8 teaspoon pepper
Dash salt
1/2 cup refrigerated nondairy creamer
1/4 teaspoon vanilla extract
2 tablespoons minced fresh basil

Steps:

  • In a large saucepan, saute onion and carrots in oil until tender. , Stir in flour until blended; gradually add broth. Stir in the tomatoes, sugar, pepper and salt. Bring to a boil. Reduce heat; cover and simmer for 30 minutes. Cool slightly., Transfer to a blender. Cover and process until smooth. Return to the pan; stir in creamer and vanilla. Heat through (do not boil). Garnish with basil.

This soup paired with a grilled cheese sandwich is the best. My family used to always eat the tomato soup in a can, but DH didn't like it, so I was on a mission for a homemade tomato soup and my neighbor gave me his recipe. DH loved it and the whole family was happy. I hope you enjoy too.

1/4 cup chopped celery
2 tablespoons chopped green onions
1 tablespoon butter
2 teaspoons flour
8 ounces stewed tomatoes
1 cup water
1/4 cup dry white wine
1 chicken bouillon cube
2 slices bacon, cooked crisp and crumbled

Steps:

  • Cook celery and onion in butter till tender but not brown.
  • Blend in flour.
  • Add remaining ingredients, except bacon; cook and stir until slightly thick.
  • Reduce heat; cook slowly 15 minutes, stirring occasionally.
  • Garnish with bacon.

3 cups dried garbanzo beans
4 cups water
6 cups water for soaking chickpeas
2 cups diced ham
ham bone
1/2 medium onion, diced
2 garlic cloves, diced
1 cup ham stock
1 (28 ounce) can diced tomatoes with basil oregano and garlic
1 (19 ounce) can tomato juice
2 bay leaves
1 1/2 teaspoons salt
1 1/2 teaspoons dried basil
1/2 teaspoon dried thyme
1/2 teaspoon cayenne pepper

Steps:

  • Put chickpeas in a large pot with 6 cups water. Bring to a boil. Boil 2-3 minute Turn off heat and cover pot. Let soak about 2 hours.
  • Drain chickpeas and discard water. Add 4 cups water, ham bone, ham stock, onions, garlic, and bay leaves. Turn on High and bring to a boil. Boil on high for 15 minutes. Reduce to medium heat cover and simmer for 30 minutes.
  • Add salt, tomato juice, Dice tomatoes, basil, thyme and cayenne pepper. Continue to boil for 30 mins or until chickpeas are soft. Remove bone and bay leaves before serving.

2 tablespoons olive oil
1 tablespoon butter
1 large yellow onion, diced
4 large garlic cloves, minced
2 teaspoons finely chopped fresh thyme leaves
1 (28 ounce) can crushed tomatoes
6 large sun-dried tomatoes packed in oil, chopped small
2 tablespoons balsamic vinegar
1/2 teaspoon baking soda
1 cup half-and-half cream
1 teaspoon salt
1/2 teaspoon white pepper

Steps:

  • In a large saucepan, heat olive oil and butter over medium-high heat.
  • Add onion and saute' until translucent, about 2 minutes, stirring often.
  • Add garlic and thyme and saute' for 2 minutes.
  • Add crushed tomatoes, sun-dried tomatoes and balsamic vinegar.
  • Bring to simmer, about 3 minutes, stirring frequently.
  • Reduce to low and stir in baking soda.
  • Add half and half, stir well and bring to a simmer. DO NOT BOIL.
  • Use an immersion blender to puree' soup in the saucepan or puree' soup in batches in a food processor or blender.
  • Season with salt and pepper.
  • Serve hot.

This is a nice slow cooker soup. I like soups and slow cooking is the best. I like having dinner waiting on me when I get home.

1 lb beef stew meat-cubed
2 Tbsp oil
4 c beef stock
28 oz tomatoes, canned and cut up-undrained
1 c sliced carrot
1 c chopped celery
1/4 c snipped celery leaves
1 tsp salt
1/2 tsp marjoram, dried-crushed
1/2 tsp basil, dried-crushed
1/4 tsp savory dried-crushed
1/4 tsp thyme, dried-crushed
1/8 tsp mace
several dash(es) hot pepper sauce

Steps:

  • 1. Trim fat from meat. Place oil and meat in skillet; brown meat and drain.
  • 2. Place browned meat in slow cooker. Stir in remaining ingredients.
  • 3. Cover and cook on low setting for 8 - 10 hours.
  • 4. Skim fat off of soup and stir soup well.

The peanut butter adds richness to the soup, yet it is not readily identifiable upon tasting. This soup takes on a whole new personality when served cold.

1/2 cup(s) peanut butter, creamy
1 teaspoon(s) salt
1/2 teaspoon(s) black pepper, coarsely ground
1/2 teaspoon(s) paprika

2 tablespoon(s) butter, room temperature
1 pinch(es) red pepper flakes

Steps:

  • Combine tomato puree and peanut butter in a large heavy-bottomed pot and blend with a wooden spoon or whisk until smooth.
  • Add salt, pepper, paprika and broth. Stir to blend. Bring to a boil. Reduce heat and simmer 10 minutes.
  • Add butter and red pepper flakes and stir to blend.
  • Remove from heat and allow to sit 5 minutes to marry flavors. Serve hot with croutons.

- 3/4 cup creamy peanut butter
- 1 tsp. salt
- 1/2 tsp. coarsely ground black pepper
- 1/2 tsp.paprika
- 1 cup low sodium beef stock
- 2 tbsp. butter, softened to room temperature
- pinch red pepper flakes

Steps:

  • Mix tomato puree and peanut butter in large pot and blend with a wooden spoon or whisk til smooth. Add salt, black pepper and paprika. Add stock and bring to boil. Reduce heat and simmer 10 minutes. Add butter. add red pepper flakes and stir to blend. Allow to sit 5 minutes to marry flavors. Serve hot or cold.
