Bow Tie Pasta with Sausage and Sweet Peppers image

1 pkg (8 oz.) dried large bow tie pasta
3/4 lb Italian sausage links
2 med red sweet peppers, cut into 3/4 inch pieces
1/2 cup vegetable or beef broth
1/4 tsp coarsely ground black pepper
1/4 cup snipped fresh Italian parsley

Steps:

  • Cook pasta according to package directions; drain. Return to saucepan.
  • Meanwhile, cut sausage into 1 inch pieces. In a large skillet, cook sausage and sweet peppers over medium heat until sausage is no longer pink. Drain off fat. Stir in broth and black pepper into skillet. Bring to boil; reduce heat. Simmer uncovered 5 minutes.
  • Remove from heat. Pour over pasta; add parsley. Toss gently to coat. Transfer to warm serving dish.
