1 cup milk
1 tablespoon Worcestershire sauce
1 teaspoon chopped fresh sage leaves or 1/4 teaspoon dried sage leaves

1/2 teaspoon ground mustard
1/4 teaspoon pepper
1 garlic clove, finely chopped or 1/8 teaspoon garlic powder
1 egg
3 slices bread, torn into small pieces
1 small onion, chopped (1/4 cup)
1/2 cup ketchup, chili sauce or barbecue sauce

Steps:

  • Heat oven to 350°F.
  • Mix all ingredients except ketchup. Spread mixture in ungreased loaf pan, 8 1/2x4 1/2x2 1/2 or 9x5x3 inches, or shape into 9x5-inch loaf in ungreased rectangular pan, 13x9x2 inches. Spread ketchup over top.
  • Insert meat thermometer so tip is in center of loaf. Bake uncovered 1 hour to 1 hour 15 minutes or until thermometer reads 160°F.

1 egg
1 (4 ounce) packet saltine crackers, finely crushed
¼ cup barbecue sauce
½ yellow onion, chopped
½ teaspoon dried sage
½ teaspoon steak seasoning
2 tablespoons brown sugar
2 tablespoons Worcestershire sauce
3 slices bacon
¾ cup barbecue sauce
2 tablespoons brown sugar
1 tablespoon Worcestershire sauce

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Mix the venison, egg, cracker crumbs, 1/4 cup barbecue sauce, onion, sage, steak seasoning, 2 tablespoons brown sugar, and 2 tablespoons Worcestershire sauce in a mixing bowl with your hands until evenly combined. Pack into a 3x7-inch loaf pan, and lay the bacon strips over top.
  • Bake in the preheated oven until no longer pink in the center and the bacon is crispy, about 35 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Meanwhile, stir 3/4 cup barbecue sauce, 2 tablespoons brown sugar, and 1 tablespoon Worcestershire sauce in a sauce pan over medium heat. Simmer 5 minutes, whisking constantly. Pour the sauce over the cooked meatloaf, and let rest 5 minutes before serving.

3 medium onions, sliced thin
6 cloves garlic, peeled and chopped
3 large ripe tomatoes, cored and chopped
1 cup bread crumbs
1 1/2 pounds lean ground beef
1 large egg
1 teaspoon dried oregano
2 tablespoons finely minced Italian parsley
Pinch crushed red pepper flakes
Salt and freshly ground black pepper to taste
1 tablespoon extra-virgin olive oil

Steps:

  • Preheat oven to 350 degrees.
  • Place the onions in a heavy skillet, preferably nonstick. Cover and cook on low heat about 10 minutes, until the onions are soft and just beginning to brown. Stir in the garlic and cook a minute or so longer. Remove one-third of this mixture from the pan and set aside.
  • Add one-third of the tomatoes to the pan and cook about five minutes, until the excess liquid has evaporated. Transfer mixture to food processor and process to chop very fine.
  • Place the finely chopped onion mixture in a bowl and mix well with the bread crumbs, the beef, the egg, oregano, half the parsley, the red pepper and salt and pepper. Form the mixture into a loaf and place in a shallow baking dish. Bake 90 minutes.
  • While the meatloaf is baking, return the reserved onion mixture to the skillet. Add the remaining tomatoes and the olive oil. Simmer over medium heat about 10 minutes. Add the reserved parsley and season to taste with crushed red pepper, salt and freshly ground black pepper. Set this sauce aside until you are ready to serve the meatloaf, then reheat the sauce and serve it alongside.

2 tablespoons butter
1 yellow onion, diced
2 ½ pounds ground chuck
1 cup dry bread crumbs
¾ cup buttermilk
½ cup ketchup
2 eggs, beaten
1 tablespoon Worcestershire sauce
2 ½ teaspoons salt
1 teaspoon ground black pepper
1 teaspoon hot sauce
½ teaspoon dried tarragon
½ teaspoon Italian seasoning
¼ cup brown sugar
1 tablespoon Dijon mustard
1 teaspoon cider vinegar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with a silicone baking mat.
  • Melt butter in a skillet over medium-high heat. Saute onion in hot butter until soft and translucent, 6 to 7 minutes. Cool to room temperature.
  • Combine cooled onion, beef chuck, bread crumbs, buttermilk, ketchup, eggs, Worcestershire sauce, salt, black pepper, hot sauce, tarragon, and Italian seasoning in a bowl; mix together with a fork and let sit until breadcrumbs absorb moisture, about 10 minutes.
  • Turn meatloaf mixture out into the center of the prepared baking sheet and form into a 9x5-inch loaf.
  • Bake in the preheated oven for 45 minutes. While meatloaf is baking, whisk brown sugar, mustard, and cider vinegar together in a small bowl. 1 cup dried breadcrumbs
1 cup frozen chopped spinach, thawed and squeezed dry
1/2 cup chopped cremini mushrooms
1/2 cup pitted prunes, chopped

2 tablespoons chopped fresh flat-leaf parsley

  • Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment paper.
  • Combine the meatloaf mix, breadcrumbs, spinach, mushrooms, prunes, dill, parsley, Worcestershire, eggs, garlic, onion, 1/4 cup of the ketchup, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large mixing bowl. Using your hands, mix together until well combined.
  • Transfer the mixture to the prepared baking sheet and form it into a compact oval-shaped loaf, about 9 inches by 5 inches. Bake the meatloaf for 30 minutes.
  • Stir together the apricot preserves, soy sauce, ginger, vinegar and remaining 1/4 cup ketchup in a small bowl for the glaze. Remove the meatloaf from the oven and brush the top and sides all over with the glaze. Return to the oven and bake until the glaze starts to caramelize and a thermometer inserted in the center of the meatloaf registers 160 degrees F, about 25 minutes more. SAVORY SPICY MEATLOAF AND SAUCE

I modified this recipe from my mom's original. This recipe uses steak sauces, so it's more flavorful than regular versions, I think. And the sauce uses the same ingredients as the meatloaf recipe, so you just need to get everything out once! Feel free to adjust the spices to your tastes, and the measurements are what I guesstimate them to be. I just eyeball it, and you can too. I'd say this yields about 5-6 slices, or 2-3 servings for 2 people. This is the first recipe I've posted, so sorry if it's a little disorganized. Enjoy!

5 lbs ground beef
1/2 cup Italian style breadcrumbs
1/2 cup finely chopped onion
1/2 cup finely chopped bell pepper
1 lb hot Italian sausage (optional)
2 tablespoons emeril's italian spice essence
3 (26 ounce) jars spaghetti sauce

Steps:

  • Wash your hands.
  • Form your ground beef into a tube on a large cutting board. Cut a slice down the middle of the tube forming a pocket along it's length.
  • Remove the Italian Sausage (optional) from casing and place it into the pocket, then sprinkle all other ingredients over it (except the Spaghetti Sauce).
  • Knead your ground beef tube with your hands until all ingredients are mixed thoroughly.
  • Form your meatballs rolling them with the palms of your hands.
  • If you are making meatloaf instead of meatballs, form your meatloaf tightly and bake it on a broiler pan (so the grease will drain through the holes) at 350 degrees for 30-45 minutes. During the last 10 minutes of cooking, pour your favorite Spaghetti Sauce over your meatloaf. When the meatloaf is done, it is ready to serve.
  • Place your meatballs on tin foil in a large roasting pan. Roast at 350 degrees for about 35 minutes. This recipe makes about 50 meatballs. You may need to use 2 roasting pans depending on your pan size. Remove from oven when done.
  • Pour your sauce (I always use Paul Newman's Sockarooni Sauce) into a crockpot until it is about 1/2 full. Add your meatballs and cover with a bit more sauce. Freeze any extra meatballs or set them aside in your fridge for a second serving later.
  • Set your crockpot on high. Your meatballs will be ready to serve in about 1 hour.
  • Try to keep the crowd back once word spreads about the juicy Italian flavor. Whatver else is happening at your party, a line will always be formed in front of your meatballs.

1 1/2 lb lean ground turkey
1 cup buttermilk
1 tablespoon Worcestershire sauce

BETTER THAN MOM'S SWEET AND SAVORY MEATLOAF



Better Than Mom's Sweet and Savory Meatloaf image

I never thought I'd find, let alone be able to make, a meatloaf better than my mother's electric skillet recipe. But when I wanted to make it last night, I realized that I didn't have her recipe. So I came to recipezaar and read a few popular ones and came up with my own based off my ingredients at hand and the popping flavors of herbs that I personally love. Well, don't tell mamma, but I think I'll be making it this way from now on. I'm telling you, this was the most moist, flavorful, savory and sweet (even a little spicy) meatloaf I've ever had. And I can't believe I just made it up! (I'm a little new at this.) The sauce is on the sweet side, but the herbs and spices inside give it a little kick which creates a perfect balance. Use less and more of what you need to get the taste suited to your liking. Chili powder might give it even more of a kick. Enjoy! Tip 1 - The moisture factor: A lot of meatloaf recipes call for milk, tomato paste, condensed milk, or water to add moisture. I was out of milk, didn't want to open full cans of paste or condensed milk just to waste the rest, and I didn't want to have to settle for boring water, so leftover chucky pasta sauce was a perfect substitute. It not only added some veggies, but the additional seasonings and vinegar already in the sauce meant that I didn't have to use additional vinegar, veggies, or waste full cans of ingredients just to get what I needed. Tip 2 - The healthy and economic factors/alternatives: I've had gastric surgery and as such found that ground beef was a little too fatty for my liking. I'm going to try this with ground turkey next time. I'll need to up the moisture (pasta sauce) content and will probably need to use a nonstick cooking spray (unnecessary when using fatty ground beef) on the loaf pan so that the sides won't stick. I eat a slice and then cut and freeze the remaining slices to take as lunch or have for future dinners for the rest of the week. Saves me a ton of money!

1/4 cup barbecue sauce

1 1/2 lbs ground beef (may substitute ground sirloin or ground turkey)
1 medium onion, diced
1 tablespoon garlic, minced
3/4 cup chunky pasta sauce (I used tomato, onion, garlic variety. You may need to add more if you use a less fatty meat.)
1/2 tablespoon parsley
1/2 tablespoon basil
1/2 tablespoon garlic powder
1/2 tablespoon marjoram
1 cup breadcrumbs (or ground croutons)
1 tablespoon kosher salt (regular salt is just fine)
1 1/2 tablespoons black pepper
2 eggs, lightly beaten
2 tablespoons packed brown sugar

Steps:

  • PREP: Place oven rack on middle setting and preheat oven to 350 degrees. If using a less fatty meat, use a non-stick cooking spray to lightly coat the inside of your loaf pan. (If using ground beef, it is unnecessary to spray or grease your pan.). Lightly press the separate 2 tbsp of the packed brown sugar into the bottom of your loaf pan. Put like ingredients into prep bowls for ease in mixing later - this helps when you'll only have one hand (especially at least the dry ingredients of bread crumbs, salt, and pepper). Hint: thaw meat fully and bring cold ingredients (eggs, pasta sauce, sauce ingredients, etc) to room temperature prior to combining - this will aid in even cooking and correct cook time. (Waiting for items to reach room temperature is the bulk of your prep time, so your actual "work" prep time v. "waiting" prep time is about 5 min of work and 15-20 min of waiting.).
  • SAUCE: Stir the remaining tbsp of brown sugar and the rest of the sauce ingredients in a bowl until combined. Sauce should be slightly runny. With a spatula, lightly drizzle some rows of the sauce over the brown sugar in the bottom of the loaf pan. Do not fully cover. Set the remaining majority of the sauce aside.
  • LOAF: In a small skillet, sweat the diced onion over low heat. Half way through, add the garlic. (The onions and garlic do not cook inside the loaf and therefore you must heat them before.) Do not let them brown or carmelize. In a large mixing bowl, gently break up the meat with one hand (keep your other hand free and clean to hold the bowl and add in your other ingredients). When they are cool enough, slowly add in the onions and garlic until completely folded. Then add the pasta sauce, parsley, basil, garlic powder, and marjoram until blended. Next, you will alternate combining the dry ingredients (bread crumbs, salt, pepper combination) and half of the beaten eggs. Repeat dry ingredients and eggs until fully mixed. Shape mixture into a loaf and transfer it into your loaf pan. Gently press the loaf down and against the sides until you have a flat top service (as the meat cooks, it will pull away from the sides and form the classic "loaf" shape"). Pour the majority of the sauce over the top of your loaf and spread it evenly until covered (I like to keep just a tiny bity of sauce to drizzle over the loaf when there is about 10 min of cook time left, but you can add it all at this point if you like).
  • Bake for 1 hour to 1 hour 15 minutes, checking occassionally. Add more sauce when and if necessary. Let cool for at least 10 minutes before serving.

1 cup fat-free (skim) milk
1 tablespoon Worcestershire sauce
1 teaspoon chopped fresh sage leaves or 1/4 teaspoon dried sage leaves
1/2 teaspoon salt
1/2 teaspoon ground mustard
1/4 teaspoon pepper
1 garlic clove, finely chopped, or 1/8 teaspoon garlic powder
1/4 cup fat-free cholesterol-free egg product
3 slices bread, torn into small pieces
1 small onion, chopped (1/4 cup)
1/2 cup ketchup, chili sauce or barbecue sauce

Steps:

  • Heat oven to 350°F.
  • Mix all ingredients except ketchup. Spread mixture in ungreased loaf pan, 8 1/2x4 1/2x2 1/2 or 9x5x3 inches, or shape into 9x5-inch loaf in ungreased rectangular pan, 13x9x2 inches. Spread ketchup over top.
  • Insert meat thermometer so tip is in center of loaf. Bake uncovered 1 hour to 1 hour 15 minutes or until thermometer reads 180°F.
  • Let stand 5 minutes; remove from pan.

My variation on the stuffing meatloaf recipies that are so popular. The original version was too bready for me and my boyfriend. This version is easy and quick to make and is good hot or sliced cold for sandwiches. I buy the stuffing mix that comes in the canister - sometimes the store brand, sometimes the name brand.

1 lb ground sirloin
1 lb ground pork
1/3 cup onion, finely chopped
1 cup beef broth
1 cup herb stuffing mix
1 teaspoon Worcestershire sauce
1 teaspoon garlic powder
2 eggs, lightly beaten
2 tablespoons hickory flavored barbecue sauce
2 tablespoons ketchup
1 teaspoon Worcestershire sauce

Steps:

  • For Meatloaf:
  • Preheat oven to 350 degrees.
  • In a large bowl, mix chopped onion and stuffing mix, and pour in the broth and let set while you prepare the pan.
  • Line a jelly roll pan or cookie sheet with deep sides with foil. Set a baking rack large enough to hold the meatloaf in the pan and spray lightly with cooking spray, or brush lightly with oil.
  • In the large bowl, mix in remaining ingredients until evenly blended.
  • Form the meat mixture into a large loaf pan, pressing down with a rubber spatula or large spoon until the meat is evenly pressed into the pan.
  • Cut a piece of foil slightly smaller than the top of the meatloaf and press it onto the top. (This foil keeps the meatloaf from falling through the rack as it cooks.)
  • Run a dull knife around the sides of the meatloaf to loosen it from the pan.
  • Invert the meatloaf onto the prepared rack on the cookie sheet and tap the bottom of the loaf pan so it slides out on the rack.
  • You will now bake the meatloaf with no pan. The lets the grease drain away as it cooks.
  • Bake about 60 minutes, then remove from oven and glaze the top with the three remaining ingredients blended into a sauce.
  • Return to oven and cook about 15 minutes further or until any juices run clear.
  • Note: You can substitute ground turkey for the pork. Serve with more of the sauce used for the glaze.

This is based on my mother's recipe, although she did not use bread crumbs, but cracker crumbs. We don't buy crackers, but always have a couple of slices of bread available to turn into crumbs. I've even used pumpernickel crumbs - very good in this meatloaf!

2 lb ground meat - use one kind, or a combination of beef, pork, turkey, veal, whatever you have on hand.
1 envelope lipton onion soup mix
8 oz tomato sauce
2 eggs, beaten
1 1/2 c bread crumbs, any type
1/2 tsp black pepper (or less to taste)
2 Tbsp worcestershire sauce

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Break the ground meat up into loose chunks. Mix in all the other ingredients well, but don't mix too hard, as it will make it too dense.
  • 3. Form into a loaf shape in a pan that is about 1-2 inches bigger all the way around. Lining the pan with crinkled aluminum foil helps with the baking, and the cleanup. (Or, fill muffin cups with mixture.)
  • 4. Bake: for whole loaf, 60-70 minutes. Use meat thermometer and cook to at least 165 degrees. For muffin tin, it only takes about 20 minutes.
  • 5. Let cool slightly before slicing or removing from muffin pan.
  • 6. If you want to top it with something, mix together 1-2 tablespoons worcestershire sauce and 1/2 cup ketchup and brush on during last 15 minutes of cooking.

I found this recipe on the back of some generic-brand bread crumbs a long time ago, and with some generous tweaking (including replacing the breadcrumbs with healthier oatmeal) it has become my favorite meatloaf recipe. I've made this with ground beef and ground chicken, so you don't have to use ground turkey if you'd prefer not to. As you can tell from the ingredients, this is going to be spicy, so be warned!
