This quiche has three types of cheese in it making it rich and custardy. It is very versatile. Any kind of meat, vegetable or herb can be added. I like it with spinach or asparagus. I've even fixed it with just fresh basil in it.

1 (9 inch) unbaked pie shells
3 eggs
1/2 cup milk
1 teaspoon sugar
6 ounces cheddar cheese, grated
6 ounces monterey jack cheese, grated
8 ounces small curd cottage cheese
1/4 cup flour
3 tablespoons butter, room temperature
1 teaspoon baking powder
1/2 cup cooked bacon or 1/2 cup cooked sausage

Steps:

  • Beat together the eggs, milk and sugar.
  • Add the cheeses, flour, butter, baking powder and meat of your choice and mix well.
  • Pour into a 9-inch unbaking pie shell or quiche pan.
  • Bake in a preheated 400 degree oven for approximately 60 minutes.
  • If the crust starts getting too brown, wrap some foil around the crust.

7 large eggs
5 large egg yolks
1 cup heavy whipping cream
1 cup half-and-half cream
1 cup shredded part-skim mozzarella cheese
3/4 cup shredded sharp cheddar cheese, divided
1/2 cup shredded Swiss cheese
2 tablespoons finely chopped oil-packed sun-dried tomatoes
1-1/2 teaspoons salt-free seasoning blend
1/4 teaspoon dried basil

Steps:

  • Preheat oven to 350°. In a large bowl, combine eggs, egg yolks, whipping cream, half-and-half, mozzarella cheese, 1/2 cup cheddar cheese, Swiss cheese, tomatoes, seasoning blend and basil; pour into a greased 9-in. deep-dish pie plate. Sprinkle with remaining cheddar cheese., Bake 45-50 minutes or until a knife inserted in the center comes out clean. Let stand 10 minutes before cutting.
