CINNAMON SAUTEED BANANAS



Cinnamon Sauteed Bananas image

I believe this is an old Helen Corbitt recipe. It is an excellent, easy dessert and complements so many things.

4 large bananas (firmly ripe or slightly underripe)
2 tablespoons sugar
1 teaspoon cinnamon
1 tablespoon lemon juice
2 tablespoons unsalted butter

Steps:

  • Cut bananas crosswise into 1/4" slices.
  • Toss slices in a bowl with the sugar, cinnamon and lemon juice.
  • Heat saute pan over medium-high heat, add butter.
  • When butter is bubbly, add the bananas.
  • Holding the pan by the handle, toss the bananas every 10 seconds or so for 2-3 minutes until tender.
  • (The slices should hold their shape and be carmelized) Serve on a warm plate-- good with ice cream or angel food cake or by itself!

2 tablespoons butter
4 bananas, peeled and sliced in 1/2 crosswise and then lengthwise
1 orange, juiced
2 tablespoons sugar
Dash salt
Tangy-Sweet Cream, recipe follows
4 tablespoons sour cream
2 tablespoons light brown sugar
1 teaspoon finely grated orange zest
1/4 teaspoon ground cinnamon

Steps:

  • In a large saute pan, add the butter and melt it over medium-high heat. Add the bananas and saute until they begin to caramelize. Add the orange juice, sugar and salt and cook an additional 1 to 2 minutes. The bananas should be nicely browned, and the orange juice and sugar will have formed a glaze. (If needed, add a tablespoon of water.) Serve on a dessert plate with a tablespoon of Tangy-Sweet Cream.;
  • In a medium bowl, mix all the ingredients until creamy and smooth.

2 cups unsalted raw pecans
4 large eggs
8 tablespoons (1 stick) unsalted butter, melted, plus more for greasing the waffle iron
1/4 cup honey
1 1/2 teaspoons pure vanilla extract
1/2 teaspoon baking soda
Pinch of salt
Sautéed Bananas
1 tablespoon unsalted butter
1 teaspoon coconut oil or vegetable oil
3 very ripe bananas, sliced
1 cup honey
1 tablespoon ground cinnamon

Steps:

  • To Make The Waffles
  • Preheat a waffle iron according to the manufacturer's directions. Preheat the oven to 200°F.
  • In a food processor, pulverize the pecans until finely ground. Add the eggs, butter, honey, vanilla, baking soda, and salt, and blend well.
  • Grease the waffle iron using a partially wrapped stick of cold butter. Hold the butter by its wrapped end and rub the other end all over the waffle iron's cooking surface. Add 1/4 cup batter and cook for a few minutes, until golden brown. Set right on the oven rack to crisp up and keep warm while you cook more.
  • To Prepare The Bananas
  • Melt the butter with the oil in a sauté pan over medium heat. Add the bananas and cook for about 6 minutes, turning once, until golden brown. Set aside.
  • Mix the honey and cinnamon until well blended.
  • Place the waffles on warmed plates, top with the bananas, honey, and serve.

Steps:

  • Heat 1 tablespoon butter in a 10-inch heavy skillet over moderately high heat until foam subsides, then sauté half of bananas, cut sides down first, turning over once, until golden, 1 1/2 to 2 minutes total. Transfer with a slotted spatula to 2 dessert bowls. Heat 1 tablespoon butter and sauté remaining bananas in same manner, transferring to 2 more bowls.
  • Melt remaining 2 tablespoons butter in skillet over moderate heat, then add brown sugar, cream, cardamom, and a pinch of salt and simmer, stirring occasionally, until sauce is slightly thickened, about 2 minutes. Remove from heat and stir in lime juice.

1 cup packed brown sugar
3 tablespoons bourbon
1/3 cup chopped pecans, plus 2 tablespoons for garnish
4 ripe bananas, halved lengthwise then halved again
1 pint premium vanilla ice cream, slightly softened

Steps:

  • Heat grill to high. Melt the butter in a large saute pan on the grates of the grill. Whisk in the sugar and cook until melted and smooth. Standing back, carefully add the bourbon and cook for 2 minutes. Add 1/3 cup pecans and cook for 30 seconds. Add the bananas and spoon the sauce over the bananas constantly until softened, about 4 to 5 minutes.
  • Scoop the ice cream into bowls and top with the bananas and sauce. Garnish with the remaining chopped pecans and serve.

2 teaspoons granulated sugar
1/4 teaspoon salt
1 1/2 cups reduced-fat (2 percent) milk
2 large eggs
1 tablespoon plus 1 teaspoon melted unsalted butter, plus more for skillet
3 bananas, peeled and sliced
1 tablespoon brown sugar
2 ounces semisweet chocolate, melted

Steps:

  • In a bowl, whisk together flour, granulated sugar, and salt. Make a well in the center. Add milk, eggs, and 1 tablespoon butter; whisk to combine. Cover, and refrigerate 1 hour (or up to 1 day).
  • Preheat oven to 250 degrees; place a baking sheet in oven. Heat a medium nonstick skillet over medium high. Lightly coat skillet with butter. Pour 1/3 cup batter into skillet, and quickly swirl skillet so batter evenly coats bottom. Cook crepe until edges are dry, 1 to 2 minutes. Loosen with a wide spatula, and using both hands, grip edges with fingertips and quickly turn over. Cook 1 minute more. Slide onto sheet to keep warm. Repeat with remaining batter (you should have 12 crepes).
  • Heat 1 teaspoon butter in skillet over medium. Add bananas and brown sugar; cook, stirring occasionally, until bananas are lightly browned on one side, about 3 minutes. Fold crepes into quarters; top with bananas and chocolate.

½ cup heavy cream
1 tablespoon butter
2 tablespoons white sugar
4 ounces bittersweet chocolate, chopped
¼ cup heavy cream
1 tablespoon butter
1 tablespoon white sugar
4 bananas, peeled and halved lengthwise
⅓ cup dark rum

Steps:

  • In a small saucepan, combine 1/2 cup cream, 1 tablespoon butter and 2 tablespoons sugar over medium heat and bring to a boil. Remove from heat and stir in chopped chocolate until smooth. Set aside.
  • In medium bowl, whip 1/4 cup cream with electric mixer until stiff peaks form. Set aside.
  • In large skillet melt 1 tablespoon butter over medium heat. Sprinkle 1 tablespoon sugar evenly over surface of pan and cook until it begins to turn golden. Place bananas cut side down in pan and pour rum over bananas. Continue to cook, basting with sauce, until bananas begin to soften.
  • To serve, place two warm banana slices on a plate, spoon a little rum sauce over the top, drizzle with chocolate sauce and top with whipped cream.

1/2 cup water
1/4 cup brown sugar, packed
1/4 cup raisins
1 teaspoon lemon juice

Steps:

  • Melt butter. Dissolve cornstarch in water. Add to skillet. Add brown sugar and raisins.
  • Boil for 2 minutes, stirring constantly.
  • Remove from heat, add lemon juice.
  • Slice bananas and stir into mixture. Serve immediately. (Do not cook the bananas.).

1 tablespoon butter
1 1/2 teaspoons toasted peanut oil, divided
1 tablespoon honey
2 tablespoons firmly packed brown sugar
3 tablespoons low-fat milk
1 tablespoon dark raisin
1 tablespoon walnuts, coarsely chopped
2 firm bananas
2 tablespoons dark rum

Steps:

  • In a small saucepan, melt the butter over medium high.
  • Stir in 1 tablespon peanut oil, honey and brown sugar, stir until sugar is dissolved, about 3 minutes.
  • Sit in milk, 1 tablespoon at a time.
  • Stir and cook until the sauce thickens slightly, about 3 minutes.
  • Remove sauce from heat and stir in raisins and chopped walnuts.
  • Set aside and keep warm.
  • Peel the bananas, cut each crosswise into 3 sections and then cut each section in half lengthwise.
  • Add the additional 1/2 teaspoon peanut oil to a nonstick frying pan and place over medium-high heat.
  • Add the cut bananas and saute until they begin to brown, 3 to 4 minutes each side turning once.
  • Transfer to individual serving plates.
  • Pour the rum into the pan, bring to a boil, and deglaze the pan.
  • Cook until rum is reduced by half.
  • Add the carmel sauce to the rum and warm.
  • Spoon warm sauce over the bananas and serve immediately.

1 garlic clove, finely chopped

1 (15 ounce) can black-eyed peas, rinsed and drained
1/4 teaspoon sea salt
1 tablespoon butter
1 large ripe plantain, halved lengthwise and cut into chunks (or 2 firm bananas)

Steps:

  • Heat oil in a large high-sided skillet over medium heat.
  • Add onion and cook about 10 minutes or until golden and tender, stirring frequently.
  • Stir in garlic, ginger and cayenne and cook for 1 minute, stirring constantly. Add tomatoes and peas and bring to a simmer. Cook 15 minutes or until peas are tender and flavors blended. Stir in salt.

French Vanilla Ice Cream with Sauteed Bananas and Phyllo Triangles image

4 sheets phyllo dough, 13 by 17
3 tablespoons butter, melted, plus 2 tablespoons butter
1/2 cup sugar
2 teaspoons ground cinnamon
2 bananas, thickly sliced
2 bananas, sliced on an angle
2 tablespoons dark brown sugar
2 shots spiced rum
1 pint French vanilla bean ice cream

Steps:

  • Preheat oven to 400 degrees F.
  • Spread a cookie sheet with parchment paper. Top with a layer of phyllo and brush the sheet with the melted butter. Mix sugar and cinnamon. Scatter a layer of sugar across the butter coated pastry. Repeat with 2 more layers of pastry, then top with a final sheet of dough then cut pastry into long triangles, working from side to side of the cookie sheet, using a sharp paring knife or pizza wheel. Cover the pastry with another sheet of parchment paper and another cookie sheet. Place pastry in the hot oven and bake 15 minutes or until golden. Remove pastry from oven to cool.
  • Begin other recipes in your menu while pastry bakes.
  • When you are ready to serve dessert, heat a medium nonstick skillet over medium high heat. Add 2 tablespoons butter. When butter melts, add bananas and saute 3 minutes. Sprinkle with brown sugar to coat bananas. When sugar melts around fruit, add rum and flame it. Pour rum from shot glass, not from the bottle, to prevent flame ups. When flame goes out and alcohol has evaporated, spoon warm bananas into cocktail glasses. Top with small scoops of French vanilla ice cream and garnish with phyllo triangles. Serve extra triangles on a pretty plate for sweet snacking.

2 - 3 tablespoons sugar, or to taste
1/4 cup rum, Cointreau or fruit juice
zest and juice of 1 orange
4 bananas, peeled and sliced lengthwise

  • In an nonstick pan, heat butter, sugar, and liquids until sugar dissolves. Add bananas and cook on low to medium heat until barely soft. Serve warm, garnished with zest, alone or with whipped cream or ice cream.
