Sauteed Potatoes With Onions and Garlic image

1 1/2 pounds small red-skinned potatoes
Salt to taste
2 tablespoons vegetable oil
1/2 cup thinly sliced onion
1 tablespoon butter
1 teaspoon finely chopped garlic
Freshly ground pepper to taste
2 tablespoons finely chopped parsley

Steps:

  • Place potatoes, unpeeled, in a saucepan with water to cover and salt.
  • Cook potatoes until tender, about 20 minutes. Drain and let cool. When cool enough to handle, peel them. Cut potatoes into 1/4-inch slices.
  • Heat oil in a nonstick skillet large enough to hold potatoes in one layer. When oil is quite hot, add potatoes. Cook over high heat, shaking skillet and stirring gently, until lightly browned. Turn potatoes with a spatula. Cook for a few minutes more until light brown.
  • Drain excess fat from skillet and add onion. Cook a few minutes until onion is lightly browned. Add butter, garlic, salt and pepper. Toss and blend well. Sprinkle with parsley and serve immediately.

10 to 12 small waxy potatoes, about 1 1/2 lbs
Salt and freshly ground pepper to taste
2 tablespoons olive oil
1/2 cup thinly sliced white onions
1 tablespoon butter
2 tablespoons finely chopped parsley

Steps:

  • Place potatoes in a saucepan, add cold water to cover and salt to taste. Bring to a boil and cook until the potatoes are tender, about 20 minutes. Drain thoroughly and let cool.
  • Cut the potatoes, with skins on, into 1/4-inch slices.
  • Heat the oil in a large nonstick skillet and when quite hot add the potatoes, salt and pepper to taste. Cook until they start to brown on one side, about 3 minutes. Add the onions; shake the skillet to toss and redistribute the potatoes. Brown evenly, about 4 minutes more.
  • Add butter and parsley, toss well and stir gently. Serve immediately.

1 1/2 pounds (about 3 potatoes) round, white thin skinned potatoes
1 large sweet onion
Coarse salt
1 tablespoon vegetable oil, 1 turn of the pan
2 tablespoons butter

Steps:

  • Heat a 10-inch heavy skillet over medium high heat.
  • Slice potatoes and onions very thin. Salt potatoes and onions. Add oil and butter to the pan. When the butter foams, add potatoes and onions to the skillet.
  • Place a dinner plate on top of potatoes and weight it with any heavy object: a sack of flour, heavy canned goods, etc. Let the potatoes and onions crust, 2 to 3 minutes, then turn, replace weights, and let them crust again. Keep turning the potatoes and onions over for about 20 minutes, until they are evenly golden and crusted.

1 large potato
2 tablespoons olive oil
1 whole onion, sliced
1 cup whole mushroom
1 tablespoon Braggs amino acids
pepper
sea salt or kosher salt

Steps:

  • Preheat Oven to 400 degrees.
  • Wash and dry one large potato. Rub 1 tbsp olive oil onto the potato skin. Pierce potato skin with fork and wrap in foil (for crispy skin leave the foil open slightly at top). Cook the potato in the oven for 2-3 hours. 15 mins before the potato is done microwave the sliced onion for 4 mins on medium power. Heat one tablespoon of olive oil in a pan. Add mushrooms and cooked onions to the heated oil. Add 1 tablespoon Bragg's Amino Acids to the onion and mushroom mixture. Add pepper and sea salt to taste. This is a delicious sauteed kale recipe that I got from my mom and tweaked a bit. It tastes so good that even my 18-month-old son will eat it! Serve with extra olive oil and salt, if desired. We enjoy this recipe with plenty of salt and oil. I do not measure exactly. It's a recipe you can play around with!

½ cup extra-virgin olive oil, divided
1 bunch kale, stemmed and torn into pieces
1 large onion, chopped

  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender but still holding their shape, about 15 minutes. Drain.

1kg waxy potato, such as Maris Peer or Desirée
6-8 tbsp sunflower or olive oil

Steps:

  • Cut 1 kg waxy potatoes into chunks.
  • Bring a large pan of water to the boil, then cook the potatoes for 3 mins. Drain, shake out onto a kitchen paper-lined tray and leave to cool.
  • When ready to serve, heat 6-8 tbsp sunflower or olive oil in a large non-stick frying pan until you can feel a strong heat rising.
  • If your pan isn't large enough, fry the potatoes in two batches - rather than crowding them. Have kitchen paper ready to drain them on. Add the potatoes in a single layer, not too tightly packed.
  • Turn the heat to medium-high, so that the potatoes sizzle, but don't stir until they start to brown underneath.
  • Turn them all evenly 2 or 3 times until nicely browned all over - this can take about 7 mins.

1 pound baby red potatoes
1 pound fresh green beans, trimmed.
1 1/2 Tbsp extra virgin olive oil
1 clove garlic, minced.
freshly ground black pepper
3 Tbsp fresh chives (parsley or basil or rosemary works also, depending on your personal taste)
2 tsp onion powder
3 Tbsp chopped yellow onion (any onion will do in a pinch)

Steps:

  • 1. 1. Bring a large pot of water to a boil. Add the potatoes; cook about 20 minutes or until almost tender. Add the beans; cook about 3 minutes more or until tender. Drain well.
  • 2. 2. In a large skillet, heat the oil over medium heat. Add the garlic; cook and stir for 30 seconds. Add the potatoes, beans, onions, onion powder, and salt and pepper to taste. Cook about 2 minutes more or until heated through, tossing to coat. Add the chives after turning off the stove and toss once more to allow the seasonings to coat.
