How to make Sweet And Spicy Bacon Wrapped Turkey Breast

Number Of Ingredients 11

5 pounds bone-in turkey breast
1/2 teaspoon ground cumin
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/4 teaspoon ground allspice
1/8 teaspoon garlic powder
1/4 teaspoon ground chipotle chile powder
5 teaspoons olive oil
2 tablespoons honey
1 1/2 package good quality bacon

Steps:

  • Preheat the oven to 350 degrees F. If the turkey has a pop-up timer in it, remove it. It's useless. Combine the spices with three tsp of the olive oil until it forms a paste. Work some of the past under the skin of the turkey the best that you can. Combine the remaining olive oil and honey with the remaining spice mixture. It should be a consistency that you can use a basting brush to brush the mixture on the turkey. If it isn't, add a little more oil. Brush some of the mixture on the turkey. Then, start wrapping the bacon on the turkey. You can either layer it simply or weave it (see photo). Once it is completely covered, baste the bacon layer with more of the glaze. Place in oven and bake for one hour. Baste, then bake for another hour, basting after 30 minutes. If the bacon starts to get too brown you can loosely tent it with some foil. The cooked turkey should register 180 degrees F. Let stand, tented with foil, for about 10 minutes, then carve as desired. On the off chance there is any leftover bacon, use it on turkey sandwiches the next day.
