¼ cup vegetable oil
1 small onion, diced
1 tablespoon minced garlic
1 pound smoked sausage, cut into bite-sized pieces
1 ½ cups uncooked white rice
2 cups water
¾ (8 ounce) can tomato sauce, or to taste
1 teaspoon adobo seasoning
salt and ground black pepper to taste

Steps:

  • Heat the vegetable oil in a skillet over medium heat. Stir in the onion and garlic; cook and stir until the onion has softened and turned translucent, about 5 minutes. Stir in the sausage; cook and stir until the sausage is crisp. Mix in the rice, water, tomato sauce, adobo seasoning, salt, and black pepper. Bring to a boil, then reduce heat to low. Simmer until the rice is tender and the liquid has been absorbed, about 20 minutes.

1 pound bulk pork sausage
1 medium onion, chopped
1 cup chopped celery
1 can (28 ounces) diced tomatoes, undrained
2-1/2 cups water
1-1/4 cups uncooked long grain rice
1/2 cup chili sauce or salsa
1-1/2 cups shredded sharp cheddar cheese

Steps:

  • In a skillet, cook sausage, onion and celery over medium heat until meat is no longer pink and vegetables are tender; drain. Add tomatoes, water rice and chili sauce. Cover and cook over low heat for 30 minutes or until rice is tender. Remove from the heat. Sprinkle with cheese; cover and let stand for 5 minutes or until cheese is melted.

1 tablespoon olive oil or 1 tablespoon other cooking oil
3 lbs of meaty chicken pieces
2 cups chopped onions
3 teaspoons fresh garlic
2 green peppers, chopped
1 1/2 lbs kielbasa, cut in 1/2 inch pieces
4 cups water
4 teaspoons chicken bouillon
1/8 teaspoon curry powder
2 cups uncooked long-grain white rice
1 (10 ounce) package frozen green peas
1 (4 1/2 ounce) jar sliced mushrooms

Steps:

  • Preheat oven to 350°F.
  • Grease a 9x13x2-inch pan.
  • In frying pan, add oil and heat 2 minutes on medium-high temperature.
  • Add chicken pieces, a few at a time, and brown each piece.
  • Remove from frying pan and drain on two layers of paper towels.
  • To the frying pan, add onion, garlic, peppers and sausage in skillet.
  • Cook over medium-high heat until vegetables are lightly browned.
  • To remove grease, pour ingredients into a colander and run under hot water for 1 minute; drain well.
  • Add to casserole dish.
  • Spread mushrooms evenly over vegetable and sausage layer.
  • Add water, rice, chicken bouillon, basil, curry powder, paprika, rice and green peas.
  • Gently stir ingredients to mix well.
  • Place chicken pieces on top of casserole.
  • Cover casserole.
  • Bake 35 to 40 minutes.
  • Reduce oven temperature to 300°F, uncover casserole, and continue baking another 20 to 30 minutes until rice is tender.
  • Remove from oven and serve.

2 cups chopped onions

4 cups water
4 teaspoons low-sodium instant chicken bouillon granules
1/8 teaspoon curry powder
1 tablespoon Hungarian paprika
1 teaspoon basil leaves
1 (4 1/2 ounce) can sliced mushrooms, drained
2 cups long-grain white rice, uncooked

Steps:

  • Preheat oven to 350 degrees.
  • Spray 9x13x2-inch glass casserole with non-stick cooking spray.
  • Cut sausage into small bite-size pieces.
  • Spray frying pan with non-stick cooking spray and preheat on medium-high heat.
  • Saute onions, garlic, peppers and sausage.
  • Add to casserole dish.

Steps:

  • Place Chorizo in a covered skillet with 2 tablespoons of Olive Oil on medium low heat, turning until they are done. When the chorizo is browned, place on paper towels. I tweaked it so that it had lots of taste without the green peppers some people use because I have a son who hates them. If you like them feel free to add them to the dish.

1/2 lb of mild breakfast sausage (or spicier if you wish more bite)
1/2 lb bacon
1 medium onion
2 teaspoons fresh crushed garlic
1/2 teaspoon cumin
1 teaspoon chili powder
1 teaspoon salt
1/2 teaspoon black pepper
3 ounces tomato paste
3 cups water
1 1/2 cups uncooked rice

Steps:

  • Cook sausage and crumble in small pieces and set aside.
  • Cook bacon until crisp, drain then crumble into small pieces and add to the sausage.
  • Saute the onion and garlic in the bacon drippings until golden, drain on paper towels, then add to meat mixture.
  • In a large saucepan bring the water and tomato paste to a boil.
  • Add the rice, cover and cook over medium-low heat for 20 minutes.
  • Add meat mixture to rice mixing well and serve while still hot.
  • You can double or triple this recipe easily then freeze the leftovers in ziplock freezer bags for quick sides to Mexican meals.

This is so savory and warming. It's not too spicy for kids. I made mine in a crockpot and let it simmer for a few hours so when my Hubby and son got home, they could have food. The software made me choose the weight of the sazon seasoning, but it's just two packets. It will come in a box. The Sofrito is a foil pouch of a tomato paste type sauce. You can make your own if you search for it. I hope you enjoy as much as me and my husband did.

2 (1/4 ounce) packets Sazon Goya seasoning (you can get this in the international or mexican isle)
1 (4 ounce) package sofrito sauce (you can make your own too)
2 cups chicken stock
1 cup water
2 cups rice
1 small onion
2 garlic cloves
1 link chorizo sausage (I get a pkg of 6 links)
1 (16 ounce) package andouille sausages
2 tablespoons olive oil
nonstick cooking spray

Steps:

  • Dice the onion and garlic.
  • In a large skillet, add the oil and heat over medium heat.
  • Add the garlic, then a min or so later, add the onion.
  • Cook until becomes transparent.
  • Add the chorizo and stir.
  • Cook until the chorizo is cooked and crumbled.
  • Add the sazon and the sofrito.
  • Stir and let simmer for 2 minutes
  • Add the chicken stock and water.
  • Spray the crockpot with cooking spray and add the rice.
  • Pour in the stock and stir well.
  • Add the sausage of your choice sliced.
  • Stir well, and cover.
  • On low, cook for 1 hr 30 mins to 2 hours.
  • Stir again and serve.

1 tablespoon Olive Oil
1 lb Smoked Sausage
6 ounces Yellow Rice (1 package)
1/2 cup Red Onion (diced)
14.5 ounces Diced Tomatoes (do not drain)
1/4 cup Chicken Broth
2 Garlic Cloves (minced)
1 cup Frozen Peas (thawed)
8 ounces Diced Green Chiles (do not drain)

Steps:

  • Prepare the Spanish Rice according to the package directions (start this first so it's done when the other ingredients are). Most versions take about 20 minutes.
  • Coat a large non-stick skillet with cooking spray; heat skillet over medium-high heat. Add Sausage and Red Onion. Cook and stir until sausage is cooked through and onion becomes slightly translucent about 5 to 7 minutes.
  • Stir in Diced Tomatoes, Broth, and Garlic. Bring to boiling, reduce heat. Simmer, uncovered for 10 minutes.
