sliced onion (1-2 inch layer)
sliced carrot (1-2 inch layer)
1/4 cup uncooked rice
1 (14 ounce) can peas (with liquid)
1 lb pork sausage
1 (10 ounce) can vegetable soup
1 (10 ounce) can tomato soup, diluted with
1 (10 ounce) can hot water
salt and pepper

Steps:

  • Preheat oven to 375°F.
  • In a large, deep casserole layer ingredients in order given.
  • Bake covered for 1 hour.
  • Turn sausage.
  • Leave casserole uncovered for another hour of baking.

Simple, quick pasta dish. Lots of hearty sausage and creamy alfredo sauce. A friend invented it after I developed a tomato allergy.

1 lb bulk Italian sausage (can be sweet, mild, or hot)
1 (1 lb) box bow tie pasta (farfalle)
2 (16 ounce) jars of prepared alfredo sauce (I like to use Classico)

Steps:

  • Cook pasta according to package directions. Drain and return to pot.
  • Meanwhile, in a large skillet, brown sausage over medium heat and drain fat from skillet. Turn heat to low and add alfredo sauce. Heat through. Add alfredo mixture to drained, cooked pasta and mix well.

My favorite recipe in the whole world. And doesn't take forever either. Use on any pasta of your choice...fettuccine, gnocchi, etc.

4 tablespoons butter
2 vegetarian sausage links
1 cup sliced mushrooms
1 pint heavy cream
1 teaspoon paprika
1/8 teaspoon cayenne pepper
1 teaspoon sage
1/2 cup parmesan cheese

Steps:

  • Alfredo sauce cooks fairly quickly, so begin your pasta first.
  • Defrost sausages is microwave. Mash them with a fork until broken into little chunks.
  • Melt butter in large pot. Add sausage pieces and sliced mushrooms over medium high heat for 5 minutes.
  • Add heavy cream and spices and reduce heat a bit. Stir frequently until cream thickens (about 8-10 minutes).
  • Remove from heat and add Parmesan. Stir thoroughly. Serve over cooked pasta.

1 package smoked sausage (I Like Hillshire Farms)
1 (16 ounce) box penne or 1 (16 ounce) box bow tie pasta
2 red bell peppers, sliced into strips
2 yellow bell peppers, sliced into strips
2 orange bell peppers, sliced into strips
2 large red onions, sliced into 1/4 inch rounds
1/2 cup capers
2 tablespoons olive oil
4 -6 cloves garlic, minced
chopped fresh basil
salt and pepper
asiago cheese or parmesan cheese, grated

Steps:

  • Cook Pasta according to package instructions and drain.
  • Slice the smoked sausage and cook in the microwave for 2-3 minutes.
  • Drain off grease and set aside.
  • In a large frying pan, heat the olive oil over medium-high heat.
  • Add in the onions and cook till translucent.
  • Add in the all of the peppers and continue to cook till just tender.
  • Cut heat down to medium.
  • Add in the saugage, garlic, basil and capers.
  • Cook another 2-3 minutes.
  • In a large bowl, combine the pasta and the sausage/pepper mixture.
  • Top with grated cheese.
  • Serve with a ceasar salad, hot bread and a good red wine!
  • Great in the summer when peppers are not as expensive!
