CRESCENT ROLL BREAKFAST CASSEROLE WITH SAUSAGE AND HASH BROWNS
Great crescent roll breakfast casserole for entertaining. Lots of flexibility.

Steps:
- Preheat the oven to 375 degrees F (190 degrees C).
- Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Remove sausage to a plate; drain and discard most of the grease from the skillet. Add hash browns and cook until golden brown, 5 to 7 minutes.
- Beat eggs, milk, salt, and pepper together in a bowl.
- Arrange crescent rolls on the bottom of a 9x13-inch baking dish. Layer with sausage and hash brown potatoes. Pour egg mixture over top and sprinkle with pepper Jack cheese.
- Bake in the preheated oven until a knife inserted into the center comes out clean, about 30 minutes. Remove from the oven and let set before serving, about 10 minutes.

Steps:
- Preheat the oven to 350 degrees F.
- Spray a deep 13 by 9-inch casserole dish with vegetable oil cooking spray.
- Melt the butter in a large frying pan.
- Add the onion and saute over medium-low heat until soft, about 5 minutes. Add the hash browns and break apart.
- Saute until soft, about 5 minutes.
- In a second frying pan, saute the sausage, breaking apart large clumps. When the sausage is cooked through, remove it from pan.
- In a large mixing bowl, combine the milk, eggs, salt, pepper, nutmeg and mustard, briskly to blend.
- To assemble, spread the onions and hash browns evenly at the bottom of the greased dish.
- Place the bread cubes evenly on top of hash browns.
- With a slotted spoon distribute sausage as the third layer.
- Pour the milk and egg mixture over these layers.
- Add Parmesan as the next layer, while then adding the Cheddar.
- *Cook's Note: Save a few tablespoons of cheddar for the last 10 minutes of baking, where you can add a fresh topping of melted cheddar.
- Bake the casserole, uncovered for 45 to 50 minutes, until puffed and golden brown.
HASH BROWNS SAUSAGE CASSEROLE
I got this recipe from my mother-in-law after having it for breakfast at her house. I've never made it myself, but it was so delicious, I thought I'd share. I'm not sure if you can use another type of oil, so any reviews using a different oil would be appreciated.

- Beat eggs and milk, set aside.
- In a large bowl, mix hashbrowns and oil.
- Press along the bottom and up the sides of a 9x13 baking dish.
- Bake at 475* for 15 minutes.
- Layer the sausage, cheese, and onions over the potatoes.
- Pour the egg/milk mixture evenly over the top.
- Turn oven down to 350* and bake for 30 minutes until firm.

- Preheat oven to 350°F Butter 8x8x2-inch glass baking dish.
- Cook sausage in heavy large skillet over medium-high heat until brown, breaking into small pieces with back of spoon, about 5 minutes. Mix in flour, then milk. Cook until mixture thickens and comes to boil, stirring occasionally, about 5 minutes.
- Layer potatoes in prepared dish. Top with 1/3 of green onions, 1 cup cheese, 1/3 of green onions, sausage mixture, sprinkle the herbs on top, and the remaining 1/4 cup cheese. Bake casserole until potatoes are tender, about 45 minutes. Sprinkle with remaining green onions and serve.

This is a recipe that my boss brings into work all the time. It's a big hit with everyone in the office.

Steps:
- In skillet, cook the sausage until brown. Drain well.
- In large mixing bowl, combine the cheese, chicken soup, sour cream, French onion dip,salt and pepper.
- Fold in thawed hash browns. Mix well.
- Spread 1/2 of the hash brown mixture in bottom of 9x13" greased pan (or you can use PAM).
- Spread 1/2 of the browned sausage over the hash browns.
- Repeat.
- Bake @ 350 approximately 1 hour until golden brown.
- (I cover with foil the first 1/2 hour to avoid over cooking the sausage on top.).
