HASH BROWN, EGG, SAUSAGE, AND GRAVY CASSEROLE
I had hashbrowns I needed to use and came up with this meal for dinner. We loved it! You can add some spices to it if you like. I added some poultry seasoning and cayenne to it. This was easy and delish!!

- 1. Bag of Hash browns Any Sausage you like sautéed with onions & a little poultry seasoning 6 Eggs 1 packet Country style White Gravy (prepared, as directed on package)
- 2. Saute sausage until browned. Add onion and cook for a few mins. Add Hash browns add poultry seasoning or any spice u like (cayenne) Mix everything well and cook until the hash browns are cooked (and somewhat browned)
- 3. In a bowl add 6 eggs and 1/2 cup of water (or milk) parsley, s+p to taste. Can also add a handful or parsley. Beat the eggs well and then a little at a time add the potato mixture stirring well so the eggs don't cook in the bowl.
- 4. Put potato mixture in a sprayed 9x13 pan. Top with prepared White Gravy (directions are on package) I added some scallions to the gravy.
- 5. Bake 375 for 45 mins and add some cheese for the top. Bake for another 15 mins or until cheese is melted and casserole is done. (Depending on how your oven temperature is)
SAUSAGE-HASH BROWN CASSEROLE
Ground beef may be used in place of the Italian sausage if desired, feel free to spread some frozen thawed small veggie mixture or canned drain mushrooms over the sausage meat, the hash browns must be thawed before using and the complete casserole may be prepared, covered and refrigerated up to 24 hours before baking, use the small diced hash browns not the shredded --- this is delicious and makes a great potluck dish!

- Set oven to 350 degrees F.
- Grease a 13 x 9-inch baking dish.
- In a skillet cook the bulk sausage meat until browned; set aside (if using ground beef cook beef for extra flavor brown with a chopped onion and 1-2 tablespoons fresh minced garlic).
- In a bowl combine soup with sour cream, melted butter, milk, garlic powder, seasoned salt, black pepper and cayenne; mix vigorously until well combined.
- Mix in onion, hash browns, and 1 to 1-1/2 cups cheddar cheese.
- Spread just under half of the hash brown mixture into the bottom of the pan.
- Sprinkle the cooked sausage mixture over hash brown mixture.
- Spoon the remaining hash brown mixture over the sausage (does not have to cover completely).
- Bake uncovered for about 40-45 minutes.
- Sprinkle the remaining 1 cup grated cheddar over the top, then place back in oven for about 2-3 minutes to melt the cheese.

- Preheat oven to 350 degrees F. Grease a 9x13x2-inch baking dish.
- In a large bowl, combine the thawed hash browns, onion, and bell peppers. Reserve a 1/2 packed cup of cheese and mix the remaining 1 1/2 cups with the hash brown mixture. Transfer to the baking dish and smooth into an even layer.
- In the same bowl, whisk together the eggs, Dijon, hot sauce, half-and-half, salt, and pepper. Pour the egg mixture over the hash brown mixture and gently press down with the back of a spoon to help hash browns absorb the egg.
- Cut the rope sausage crosswise into 1/4-inch slices. Lay across the top of the hash browns and gently press into the mixture.
- Bake for 45 minutes. Remove and top with reserved cheese. Increase temperature to 400 degrees F and finish baking just until eggs are set and top is slightly brown, about 7 to 10 minutes. Let rest 10 minutes. Sprinkle with chopped chives or parsley if desired, then serve.

- 1. Preheat the oven to 350 degrees F. Spray a deep 13 by 9-inch casserole dish with vegetable oil cooking spray. Melt the butter in a large frying pan. Add the onion, bell pepper and sauté over medium-low heat until soft, about 5 minutes. Add the hash browns and break apart. Sauté until soft, about 5 minutes. In a second frying pan, sauté the sausage, breaking apart large clumps. When the sausage is cooked through, remove it from pan. In a large mixing bowl, combine the milk, eggs, salt, pepper, garlic, nutmeg and mustard, briskly to blend. To assemble, spread the onions, green pepper and hash browns evenly at the bottom of the greased dish..Add bread cubed if using. Distribute sausage as the third layer. Pour the milk and egg mixture over these layers. Add Parmesan as the next layer, while then adding the Cheddar. Let sit in refrigerator overnight. Bake the next morning before breakfast. This super-easy breakfast casserole is actually good. - For the homemade condensed cream of chicken soup (if using--otherwise skip to next paragraph), melt butter in a small saucepan over low heat. Sprinkle in flour and whisk. Cook 1 minute. Stir in water and whisk to remove any lumps. Simmer until thick, then stir in milk and chicken bouillon paste plus the seasonings. Sauce should thicken slightly at this point. Taste and adjust seasonings. Set aside. Place hash browns, smoked sausage, onion and cheese together in a lightly greased crockpot. Pour over condensed soup and stir. Cover and cook on high for 3 hours or until potatoes are soft and sausages are hot. Serve and enjoy!. *Chicken bouillon paste is similar to bouillon cubes, but in a paste form. - Saute sausage with celery and carrots.
- In a separate pan, saute ground beef with mushrooms, onions, and garlic.
- The point it to impart different flavors in the ground beef and sausage.
- Once the vegetables are tender and the meats are cooked, combine with softened cream cheese.
- Meanwhile, slice the potatoes into slices and blanch for 4-5 minutes, until just slightly soft.
- Layer the bottom of a casserole dish with the potato slices.
- Top with cream cheese/meat mixture.
- Repeat layers until all ingredients have been used.
- Bake at 350°F for 30 minutes.
- Meanwhile, prepare the hash browns according to the bag on the skillet. You'll probably have to do two or more batches to do it all.
- Take the casserole out and top with hash browns and shredded cheeses.
- The hash browns will most likely be in a circle shape from your pan, so just break it up where need be to fit it on top of the casserole.
- Throw in the broiler for five minutes or until cheese has melted and hash browns have somewhat melded to the casserole.
