Quick, Easy and Spicy Sausage Gravy over Grits or Biscuits image

Great for breakfast served with scrambled eggs, or just enjoy it as is for a hearty lunch or have breakfast for dinner. This is so easy to make, 30 minutes or less and it is on the table. My friend took advantage of quick cooking grits, but you could easily serve this over croissants, toast, burritos, or even some "canned" biscuits as I did brushed with A spicy butter (see note below) - or just top some poached eggs. This is not my recipe - my girl friend got it from...her boy friend's sister who got it from "who knows where." However ... she made it for me and I thought it was absolutely delish! So, I just wanted to pass it on. I will definitely be making it again.

1/2 cup pork sausage (mild, medium or hot, that is up to you)
1 (4 ounce) can green chilies, drained
3 -4 scallions, whites and greens diced (keep one scallion as a garnish)
3/4 cup heavy cream
2/3 cup jalapeno jack cheese, you can add a bit more depending on how thick you like your gravy (monterey jack or white cheddar will be a good substitute)
1 pinch red pepper flakes, to taste
1/4 teaspoon dried oregano
1/4 teaspoon cumin
salt
pepper

Steps:

  • Sausage -- In a medium sauce pan, saute the sausage, breaking it up as it cooks, on medium heat until cooked through. Make sure to drain the sausage well before making the rest of the sauce. I use hot breakfast sausage, but use what you like best).
  • Once the sausage is drained well, return to the sauce pan and add the green chilies, scallions, cream, red pepper flakes, cumin and oregano. Mix well to combine and taste for any additional seasoning (salt or pepper). Let it simmer on medium to medium low for 4-5 minutes. The cream will help it thicken naturally.
  • After the gravy cooks 4-5 minutes, stir in the cheese and heat through just to melt the cheese. This should be done just a few minutes before serving.
  • Prepare the Base -- As I said, you can really use anything. Grits were excellent, croissants would be wonderful too. I happen to use Pillsbury (or a canned) biscuit, or you could certainly make your own too. I cooked the biscuits according to package directions. But NOTE, I brushed the biscuits (before baking) with a mix of butter, chili powder, and cumin for a little extra flavor.
  • Serve -- Simply serve the gravy over your choice of the bottom layer. Garnish with extra cheese if you want and the extra scallion. A poached egg would be great, or even some scrambled eggs on the side. Just ENJOY!

A few years back I was visiting friends in LA, and after a long day of fishing, a wonderful dinner with fresh fish of course, the next day we all woke up famished. Well ... biscuits with sausage gravy was the request, but I wanted to do something a little cajun. Our last vacation day, so it was clean out the fridge, but still trying to make something that resembled biscuits with sausage gravy. After a quick run to a local quick stop to get some cream and biscuits we were set. Well this is the creation, and it is really good. The only thing I have changed since I returned is that I love to add some scallions right at the end for a fresh flavor, but otherwise, pretty much the same. Make this for a breakfast/brunch for family this holiday season. And if you don't want to use andouille, use a spicy or mild sausage along with the cajun spices. And if you bake, make your own biscuits. I'm just not much of a baker, so I take a short cut and use a canned biscuit. We served this with some scrambled eggs and Bloody Mary's (it was the last day of vacation). But skip the eggs, and you won't miss them - this is a very satisfying dish.

20 medium shrimp (peeled and tails removed)
3 andouille sausages, links (sliced and then diced)
1 cup onion, diced
1/2 cup celery, diced
1/2 cup red pepper, diced (you could use green if that is all you have, red to me are sweeter)
2 scallions, diced (green parts)
3 cups heavy cream (heavy cream is a must for this)
1/4 cup white wine (optional)
1/2 hot sauce (more or less to taste)
2 teaspoons garlic, minced
1 tablespoon cajun seasoning
1 teaspoon olive oil to saute the vegetables
salt
pepper

Steps:

  • Sausage -- In a large saute pan cook the diced andouille on medium heat until cooked through. Don't cook it at too high of a temperature. You want to slowly saute it. Once it is done, remove to a plate lined with a paper towel to drain.
  • Sauce -- In the same pan, pour out the drippings from the andouille (no need to clean the pan out, the flavor is fine, you just don't want all the oil) and add the fresh olive oil and bring to medium high heat. Add in the onion, celery, red pepper and garlic and saute 3-4 minutes.
  • Deglaze -- Originally I used chicken broth because that is all I had. Now, I like to deglaze with white wine just to get all the bits up off the pan. Add the wine and scrape up the bits from the pan and cook just a minute, then remove from the heat and slowly add in the cream, hot sauce (to taste) and the cajun seasoning and return to the heat on medium low cook until it reduces about 20-30 minutes. The cream will naturally thicken on it's own.
  • Shrimp and Sausage -- After the sauce has thickened, add the sausage back in as well as the shrimp and cook on medium heat until the shrimp begin to curl and turn pink. Add salt and pepper if needed according to your taste.
  • Biscuits -- Now I just used a canned biscuit, so I baked them according to directions, but if you want to make your own, by all means please do.
  • Serving -- Right before serving, add in the scallions and serve this decadent sauce over sliced biscuits.
  • Cook up some of your favorite eggs and serve with some Bloody Mary's for a perfect brunch. This also would make a great lunch or dinner.

8 large eggs
8 Flaky Buttermilk Biscuits
Sausage Gravy
Coarse salt and freshly ground pepper, to taste
Hot sauce, such as Tabasco, to taste

Steps:

  • Heat 1 tablespoon oil or butter in a large skillet over medium-high heat. Crack 4 eggs into skillet, and cook, uncovered, until whites are set, about 2 minutes. (If you prefer to cook your yolks further, cover skillet.) Transfer to a plate. Repeat. Arrange 1 or 2 biscuits on each plate. Top with gravy. Place 1 egg on each biscuit.   • Preheat oven to 450°. Whisk flour, baking powder and salt. Stir in milk and oil just until moistened. Turn onto a lightly floured surface; knead gently 8-10 times. Roll to 1/2-in. thickness; cut with a floured 2-1/2-in. biscuit cutter. Place a pinch of oregano in the center of each biscuit; top with a cheese cube. , Moisten edge of dough with water and pull up over cheese, forming a pouch; pinch tightly to seal. 2 medium sweet onions (finely diced)
1/2 cup maple syrup
2 lbs bacon (keep the grease)
2 1/2 cups all-purpose flour
32 cups whole milk
3 teaspoons salt

Steps:

  • Brown sausage and onion in a large skillet over medium heat -- may need several batches (depending on size of skillet). Separate the sausage and onions from the drippings -- keep the drippings.
  • Repeat process with bacon. Crumble bacon after cooking.
  • Put bacon and sausage drippings in skillet and bring to temperature at medium heat. Add flour to drippings, stirring constantly until mixture turns golden brown.
  • Transfer (roue) mixture to 12 quart pot and gradually whisk in milk. When the mixture is smooth, thick and bubbly, add the sausage and bacon to the pot.
  • Season with salt and pepper. Reduce heat to a simmer for at least 15 minutes.

I buy biscuits in the frozen bags so I don't have to crack open a canister, and I always double it (lest the sausage gravy go all on the husband's biscuits and I don't have any!). I've had this recipe so long, I had to look up where I got it from -- a magazine called Quick Cooking (I believe it is now called Simple and Delicious)

1 pound(s) jimmy dean sausage
6 tablespoon(s) all purpose flour
4 cup(s) 2 cups whole milk and 2 cups evaporated milk
1 teaspoon(s) worcestershire sauce
2 large eggs, slightly beaten
- salt and pepper to taste

Steps:

  • Brown sausage in a large skillet until done. You do not need to drain grease if it's Jimmy Dean Sausage...Stir four into the sausage mix, coating the sausage. This will prevent gravy from lumping. Pour in both milks, salt and pepper, worcestershire sauce. Let it just barely come to a boil, and stir in eggs. Cook until desired consistency. Serve over biscuits.
