THE ITALIAN IRISHMAN'S PIE
This is a recipe my Irish aunt gave me. Her husband is Italian, and she developed this recipe to blend things they both like. It is a variation of Shepherd's Pie. For richer flavor, substitute beef broth for water in gravy.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Grease a 2-quart casserole dish.
- Heat olive oil in a skillet over medium heat; cook and stir Italian sausage until browned and crumbly, about 10 minutes. Use a slotted spoon to transfer sausage to prepared casserole dish. Drain drippings and reserve 2 tablespoons drippings in the skillet.
- Melt 2 tablespoons margarine in a separate skillet over medium heat; cook and stir apple and onion slices until tender, about 8 minutes. Place apple and onion in casserole dish with sausage.
- Lightly stir sausage, apple, and onion together; season with salt, black pepper, and oregano.
- Brown flour in reserved drippings in skillet over medium heat. Whisk water into flour until thick gravy forms, about 3 minutes.
- Pour gravy over sausage mixture in the casserole dish; spread mashed potatoes over the top with a spoon, creating peaks. Lightly brush mashed potatoes with 1 tablespoon melted margarine.
- Bake in the preheated oven until the potatoes are lightly browned and the sausage mixture is bubbling, about 30 minutes.

SAUSAGE AND POTATO PIE
From Reader's Digest "One Dish Meals" cookbook, this yummy dish is a thin potato crust filled with sausage, cheese, red pepper and zucchini. We typically use the kielbasa option (cut into discs) with mozzarella cheese and red potatoes. It never lasts long!

Steps:
- Preheat oven to 425°.
- Heat 1 tablespoon of the oil in a 12-inch skillet over moderately high heat for 1 minute.
- Add the red pepper and zucchini and sauté, stirring occasionally until soft, about 5 minutes.
- Stir in the garlic, black pepper and basil, and sauté 2 minutes longer.
- Add the sausage, breaking up any clumps, and sauté until no longer pink but not quite cooked through, about 5 minutes. Remove from heat.
- Toss the potatoes with the remaining 1 tablespoon oil.
- Spread 1/4 of the potatoes, overlapping slightly, over the bottom of a lightly greased 10-inch pie pan or a 13" x 9" x 2" baking dish.
- Spread 1/3 of the skillet mixture on top, followed by 1/3 each of the Parmesan and mozzarella cheeses. Press each layer down with your hands.
- Repeat the layers twice, finishing with a top layer of potatoes.
- Cover the pie with foil, set in the lower third of the oven, and bake for 40 minutes.
- Remove the foil and bake until the potatoes are crisp and cooked through, 5 to 10 minutes more.
- Remove the pie from oven and let stand for 10 minutes at room temperature. Carefully pour off any fat, then cut the pie into wedges. Serves 6.
MASHED POTATO PIE
This pie is supposed to have a French pedigree, but I got it from my all-American Mom and it is our family's favorite. It is wonderful served hot or at room temperature. It is most tasty prepared with real mashed potatoes, but if you need to save time, instant mashed potatoes are just fine.

- Brush the piecrust with a beaten egg and bake for 9 minutes at 450 degrees. This is an OPTIONAL step, but will assure a non-soggy crust.
- Pre-heat the oven to 425 degrees.
- Using a spoon, beat the mashed potatoes into the cottage cheese. (Do not use a mixer, or the potatoes will turn glue-y.).
- Beat in the sour cream, eggs, salt and cayenne pepper.
- Stir in the green onions.
- Spoon the mixture into the pastry shell.
- Sprinkle with the grated cheese.
- Bake for 50 minutes until golden brown.

LARGE SAUSAGE APPLE AND ONION LATTICE ROLL
Store bought puff pastry and home seasonings make this an easy tasty treat to serve as part of a main meal when you want something special. Its so simple to make too, I don't know why I don't make it more often :)

Steps:
- Preheat the oven to 180C.
- In a large bowl mix everything together thoroughly apart from the puff pastry.
- Lay out 1 of the puff pastry sheets and imagine it is split into 3 equal sections.
- Arrange half of the sausage mixture straight down the middle of the imaginary middle section and with a knife score all the way through the pastry, lines going down in a diagonal. This will make more sense as you do it.
- Overlap strips from each side over the middle of the sausage mixture and repeat with the other sheet of pastry and other half of mixture.
- Brush with milk
- Bake for 15-25 minutes on a greased baking sheet until golden brown.
- Allow to cool for 10 minutes before serving.
- Absolutely gorgeous!

I don't know where this recipe originated, but it has been an old stand by on my mom's dinner party tables for years. It actually bakes up to look quite impressive. Please don't try to substitute fresh mashed potatoes (believe me I have tried) the instant box stuff provides the perfect texture.

- Make mashed potatoes according to package directions for 7-8 servings.
- Stir garlic powder, eggs, Parmesan and one cup of the mozzarella into prepared potatoes.
- Pile mixture into a 9-inch deep dish pie plate.
- Sprinkle top with 1/4 cup of mozzarella and a sprinkle of paprika for color.
- Bake at 350°F until golden on top and puffy about 45 minutes.

SAUSAGE, APPLE, AND ONION MASHED POTATO PIE
This is a good fall dinner recipe that is sort of a pie--I originally finished my concoction before everyone got home! If you want, you can skip a few steps and this can be served as two dishes. Also, I do make this with chicken apple sausage, but I think it would be just as good with smoked turkey sausage. I hope that you like it!

- Preheat the oven to 350 degrees F.
- Boil the potatoes in salted water until fork tender.
- Heat the oil in a skillet and saute the garlic, onion, and apple until slightly carmelized and the apple is starting to soften.
- Keep the potatoes warm if they are cooked.
- Put the onion mixture in a medium bowl and keep warm. Add additional oil to the pan if needed and slightly brown the sausage.
- Mix the sausage with the onion mixture and the celery salt, thyme, pepper, salt, and wine/cider.
- Put the sausage mixture into a pie plate.
- Mash the potatoes with the butter, milk, sour cream, salt, and parsley.
- Top the pie with the mashed potatoes and seal the edges with the potatoes. Spray lightly with the cooking spray, if you want.
- Bake for 45 minutes or until the potatoes are starting to brown.
- Let cool for 5-10 minutes before serving.
