One Pan Oven Roasted Sausage and Vegetables image

Quick and easy oven roasted sausage and vegetables recipe, made with simple ingredients in one sheet pan. This 30 minute meal is loaded with Italian flavors.

1 Potato (Large, Cut into small 1 inch pieces)
1 cup Squash (Sliced into circles)
1 cup Zucchini (Sliced into circles)
1/2 cup Carrots (Sliced into circles)
1/2 cup Onion (Cut into 2 inch pieces)
1/2 cup Peppers (Red, green or yellow)
1/2 cup Cauliflower (Cut into small florets)
5 Sausages (Sliced into thick circles. )
5 tbsp Olive oil
Salt (To taste)
Pepper (To taste)
1 tsp Paprika
1 tsp Garlic powder
1/2 tsp Ginger powder
1 tbsp Oregano (Dried)
1 tbsp Parsley (Dried)
1 tsp Thyme
1 tsp Basil (Dried)
1/4 tsp Red chili flakes (Optional)
1-2 tbsp Parmesan cheese (For topping)

Steps:

  • Line a sheet pan with foil paper. (Dimensions: 17 x11).
  • Place the potatoes, squash, zucchini, carrots, onions, peppers, cauliflower sausage on the sheet pan.
  • Drizzle olive oil all over the vegetables and sausages.
  • Sprinkle salt, pepper, paprika, garlic powder, ginger powder, oregano, parsley, thyme, basil, red chili flakes.
  • Toss everything together until everything is evenly coated.
  • Bake at 400 degrees for 20-25 minutes, making sure tossing the vegetables around halfway through for even cooking.
  • Cook until vegetables are tender and sausage has browned.
  • Remove from oven, sprinkle some parmesan cheese and serve immediately!

This sheet pan sausage dinner can be made with the pre-cooked sausage of your choice and is done in about an hour. Plus, this recipe is super customizable! Dish is best warm and fresh but extra will keep airtight in the fridge for up to 5 days. Garnish with freshly grated Parmesan cheese.

4 tablespoons olive oil, divided
1 tablespoon chopped fresh rosemary
1 teaspoon kosher salt, or to taste, divided
½ teaspoon freshly ground black pepper, divided, or more to taste
1 (16 ounce) package red potatoes, cut into bite-sized chunks
1 tablespoon dried onion flakes
1 tablespoon smoked paprika
1 tablespoon dried parsley
1 tablespoon dried oregano
12 ounces fully cooked kielbasa or Polish sausage, cut into 1 1/2-inch pieces
1 (12 ounce) bag fresh green beans, trimmed
1 medium yellow bell pepper, cut into bite-sized strips
1 medium onion, cut into bite-sized pieces

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil for easier cleanup and spray with cooking spray.
  • Combine 2 tablespoons olive oil, rosemary, 1/2 teaspoon salt, and 1/4 teaspoon pepper in a large bowl. Add potatoes and toss to coat. Place potatoes skin side-down on the baking sheet in a single layer.
  • Roast in the preheated oven until tender when pierced with a fork, 23 to 25 minutes. Remove from oven; stir.
  • Mix remaining olive oil, salt, pepper, onion flakes, paprika, parsley, and oregano in the same bowl. Add sausage, green beans, bell pepper, and onion; mix until well combined. Add to the baking sheet; spread in a flat layer.
  • Roast until vegetables are tender and potatoes and sausage pieces are browned, tossing halfway through the roasting process, 20 to 25 minutes. Serve immediately.

1 package (13-1/2 ounces) smoked sausage, cut into 1/2-inch slices
8 fresh Brussels sprouts, thinly sliced
1 large sweet onion, halved and sliced
1 medium yellow summer squash, halved and sliced
1 medium zucchini, halved and sliced
1 medium sweet yellow pepper, chopped
1 medium green pepper, chopped
1 medium tomato, chopped
3/4 cup sliced fresh mushrooms
1/2 cup Greek vinaigrette

Steps:

  • Preheat oven to 400°. Place the first 9 ingredients into a greased 15x10x1-in. baking pan. Drizzle with vinaigrette; toss to coat. Bake, uncovered, 15 minutes. Remove pan from oven; preheat broiler. Broil sausage mixture 3-4 in. from heat until vegetables are lightly browned, 3-4 minutes.

This is one of those basic dishes that you can spiff up in anyway you please. You can add cheese, veggies or anything that you like to make it more savory for a main course dinner. I can think of about a 10 herbs that would taste great in this depending on what meats and vegetables you use.

1 (8 ounce) package brown and serve sausages (or any other cooked meats and/or vegetables that you like)
2 beaten eggs
1 cup milk
1 tablespoon oil
1 cup flour
1/4 teaspoon salt

Steps:

  • Grease bottom of an 8 inch baking pan.
  • Heat oven to 400 degrees.
  • Beat together the eggs, milk, oil, four and salt until smooth.
  • Pour batter into the greased pan and top with meat (and anyother leftovers you would like to use) Bake 35 minutes.
  • We serve this with maple syrup or molasses when we use the breakfast sausage, but I imagine that mustard, ketchup or other condiments would be more appropriate for different types of"toppings".
