1/2 c butter
1 1/2 c sugar
3 large eggs
1 tsp vanilla extract
2 c all purpose flour, sifted
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1/2 c cocoa
1 c water
1 can(s) sauerkraut, drained, rinsed, finely snipped, 8 ounces

Steps:

  • 1. In large mixing bowl, cream butter and sugar until light. Beat in eggs one at a time; add vanilla. Sift together flour, baking powder, baking soda, salt, and cocoa. Add to creamed mixture alternately with water, beating after each addition. Stir in sauerkraut. Turn into greased and floured 9x13 baking pan. Bake at 350 degrees for 35-40 minutes. Cool in pan. Frost with Sour Cream Chocolate Frosting.

1-1/2 cups sugar
3 large eggs, room temperature
1 teaspoon vanilla extract
2 cups all-purpose flour
1/2 cup baking cocoa
1 teaspoon baking powder

1 cup water
3/4 cup sauerkraut, drained, squeezed dry and chopped
SILK CHOCOLATE FROSTING:
1-1/3 cups butter, softened
4 ounces unsweetened chocolate, melted
1-1/2 teaspoons vanilla extract
4 cups confectioners' sugar
1/4 cup whole milk

Steps:

  • Preheat oven to 350°. In a bowl, cream the butter and sugar. Add 1 egg at a time, beating well after each. Add vanilla. Combine flour, cocoa, baking powder, baking soda and salt; add to the creamed mixture alternately with water. Stir in sauerkraut. Pour into 2 greased and floured 8-in. round baking pans. , Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean. Cool in pans for 10 minutes before removing to wire racks to cool completely. , For frosting, beat butter, chocolate and vanilla in a bowl; add sugar and beat well. Add milk; beat until smooth and fluffy. Spread between layers and over top and sides of cake.

I can't believe I cut this recipe out of Better Homes & Garden 30 yrs.ago & just found it & made it! It is very light (I didn't make the frosting) & very easy. I can't wait to tell my men they've eaten sauerkraut for dessert, (you'd never know it). The recipe calls for a 13x9x2 pan but I used a Bundt pan adding approx. 15 min.Also prep time does not include frosting.

2/3 cup sweetened shredded coconut, divided
2/3 cup chopped pecans, divided

Steps:

  • In a bowl, cream butter and sugar. Add the eggs, one at a time, beating well after each addition. Beat in vanilla. Combine dry ingredients; add to the creamed mixture alternately with water. Fold in sauerkraut, coconut and pecans. Pour into three greased and floured 9-in. round baking pans. Bake at 350° for 20-24 minutes or until toothpick inserted in the center comes out clean. 1 tsp. vanilla
1/4 tsp. salt
2-3/4 cups powdered sugar
