This Alfredo Sauce is my version of a classic white cream sauce! Just 20 minutes to make the richest, creamiest, pasta, pizza, or dipping sauce. So versatile, easy, and yummy!

1/4 cup unsalted butter
4 cloves garlic (minced)
1 teaspoon Italian seasoning
1/4 teaspoon dried basil
1/4 teaspoon salt (plus more to taste (I used 1/2 teaspoon))
1/4 teaspoon pepper
1 pint heavy cream
1 cup freshly shaved parmesan, asiago, romano cheese blend (I use the Belgioioso Salad Blend)

Steps:

  • Melt butter in a non-stick straight edged sauté pan (or similar pan) over medium low heat.*
  • Once melted, add in garlic, Italian seasoning, dried basil, salt, and pepper and cook, whisking constantly, for 30 seconds.
  • Slowly whisk in the heavy cream.
  • Bring to a simmer, and simmer for 5 minutes, whisking constantly.
  • Reduce the heat to low, and whisk in the cheese, little by little, until fully melted. Do this slowly to avoid clumping and graininess.
  • Taste and re-season, if desired.
  • Serve with hot pasta, as a dipping sauce, or as a base for a pizza, etc.

1 cup unsalted butter
1 ½ tablespoons minced garlic
1 tablespoon all-purpose flour
4 cups heavy cream
¼ cup whole milk
8 ounces freshly shredded Parmesan cheese
2 ounces shredded fontina cheese
½ teaspoon salt
1 teaspoon ground black pepper

Steps:

  • Melt the butter in a large pot over medium heat. Stir in the garlic and flour, and cook and stir until the garlic is fragrant but not browned, about 1 minute. Whisk in heavy cream and milk, whisking constantly until the mixture is hot and slightly thickened, about 10 minutes. Gradually stir in the Parmesan cheese and fontina cheese. Season with salt and black pepper. Continue to simmer until the cheese has melted and the sauce is thickened, stirring often, 20 to 30 more minutes.

Classically made with heavy cream, butter and Parmesan, it is an easy sauce that can be whipped up in minutes using staples from the fridge. As a buttery, blank canvas, it also lends itself to a number of seasonings: Add some fresh tarragon, dried herbs or a pinch of turmeric or saffron, and it takes on a whole new personality.

1 1/2 cups heavy cream
1 large egg yolk
2 tablespoons butter
1 small garlic clove, finely chopped
1 cup finely grated Parmesan (about 1 1/2 ounces)
Black pepper, to taste

Steps:

  • In a medium bowl or large measuring cup, whisk the cream and egg yolk together until combined; set aside.
  • In a medium saucepan, heat the butter over medium-high. Add the garlic and sauté until fragrant and sizzling, about 2 minutes. Pour the cream mixture into the garlic butter, reduce heat to medium and cook, stirring frequently, until mixture is hot but not boiling, about 5 minutes.
  • Whisk in the Parmesan little by little, and cook over medium, whisking frequently, until creamy and thickened, 3 to 5 minutes. Season to taste with pepper.
