This is a little different than some pork sates in that it does not have a peanut sauce. I made this for the appy party/Toolbelt birthday Party that Country Lady hosted, People said they liked it, maybe they were just being nice, but it does have a very nice flavour, and it is easy, so that always works for me. Oh yeah, I got this recipe off of recipe source, so yeah, I stole it, changed it slightly, but essentially it is the same.

1 1/2 lbs pork tenderloin
2 tablespoons soya sauce
2 garlic cloves
1 teaspoon ground ginger
1 teaspoon five-spice powder
1 tablespoon honey
1/2 teaspoon cayenne pepper
1 tablespoon melted butter
1 garlic clove
2 teaspoons soya sauce
2 teaspoons lemon juice

Steps:

  • Cut pork into small cubes and marinate for at least 2 hours.
  • Put 5 or 6 pieces of pork onto each skewer.
  • Bake at 350°F for 30 minutes turning halfway through.
  • Brush with glaze and place on grill, turning once, for about 3 minutes.

3 pounds pork butt roast, cut into 1 1/2 inch cubes
¾ teaspoon salt
⅛ teaspoon ground black pepper
1 tablespoon ground coriander
1 tablespoon cumin seed
½ teaspoon vegetable oil
½ cup sliced onions
1 tablespoon brown sugar
⅓ cup soy sauce
¼ teaspoon ground ginger
3 limes, cut into wedges

Steps:

  • In a glass bowl or dish, mix together the salt, pepper, coriander, cumin seed, and vegetable oil. Add pork cubes, and stir to coat. Let stand for 20 minutes. Add onion, brown sugar, soy sauce, and ginger; stir to blend. Cover and refrigerate for at least one hour, but best overnight.
  • Preheat an outdoor grill for high heat, and lightly oil the grate. Thread pork cubes onto skewers.
  • Cook pork on the grill, basting frequently with the remaining marinade. Turn occasionally until cooked through, about 15 minutes. Serve sprinkled with lime juice to taste. Discard any unused marinade.

Marinated pork pieces make these Indonesian grilled pork satays extra juicy with bold flavors. The marinade also serves as a delicious chili sauce for the satays.

500 gram pork neck/shoulder (Indonesian: daging babi kapsim), cut into bite-size pieces
50 gram palm sugar (Indonesian: gula Jawa), shaved
1 tablespoon coriander (Indonesian: bubuk ketumbar)
1/4 teaspoon cumin (Indonesian: bubuk jinten)
1/4 teaspoon turmeric (Indonesian: bubuk kunyit)
5 tablespoon sweet soy sauce (Indonesian: kecap manis)
3 tablespoon soy sauce (Indonesian: kecap asin)
juice of 2 limes (Indonesian: jeruk nipis)
about 25 to 35 bamboo skewers (Indonesian: tusuk sate)
100 gram shallots (Indonesian: bawang merah)
4 cloves garlic (Indonesian: bawang putih)
2 red cayenne chilies (Indonesian: cabe keriting merah)
50 gram candlenuts (Indonesian: kemiri)
1 inch galangal (Indonesian: lengkuas)
15 gram shallot (Indonesian: bawang merah), thinly sliced
1 red cayenne chilies (Indonesian: cabe keriting merah), thinly sliced
juice of 1 lime (Indonesian: jeruk nipis)

Steps:

  • Pork satays: Grind shallots, garlic, red chilies, candlenuts, and galangal in a food processor into a smooth paste.
  • Mix pork with the spice paste, palm sugar, coriander, cumin, turmeric, soy sauce, kecap manis (sweet soy sauce), and lime juice in a mixing bowl. Cover the bowl with plastic wrap and rest in the fridge overnight to marinate. Please marinate for a minimum of two hours even if you don't have much time.
  • Skewer marinated pork pieces with bamboo skewers.
  • Heat a cast-iron grill pan over medium-high heat until very hot. Brush the grills with oil using a silicone brush, and grill pork skewers until the surface is golden brown and slightly charred, about 2 minutes per side. Arrange grilled pork satays on a serving plate.
  • Chili sauce: Transfer leftover marinade into a saucepot and bring to a boil. Cook until the sauce thickens.
  • Place the sauce into a bowl, add thinly sliced shallots, chopped red chilies, and lime juice. Serve pork satays with the chili sauce.

1/3 cup reduced-sodium soy sauce
2 green onions, sliced
3 tablespoons brown sugar
3 tablespoons minced fresh cilantro

2 tablespoons sesame oil

1 pound pork tenderloin, cut into 1/4-inch slices
1/3 cup creamy peanut butter
3 tablespoons hot water

Steps:

  • In a small bowl, combine the first 7 ingredients. Set aside 1/4 cup for dipping sauce. Pour remaining sauce into a bowl or shallow dish; add the pork and turn to coat. Cover and refrigerate 30 minutes. , Drain pork, discarding marinade. Thread pork slices onto 20 metal or soaked wooden skewers. Place skewers in a greased 15x10x1-in. baking pan. Broil 3-4 in. from heat 3-4 minutes on each side or until meat juices run clear. , Meanwhile, for sauce, combine peanut butter and water in a small bowl until smooth. Stir in lime juice and reserved soy sauce mixture. Serve with skewers.

This is what we call a sweet sate and the chili paste that I add does not really belong in this recipe. Can be made with chicken breasts and then it is called Sate Ayam. Here it usually served with a ketjap peanut sauce and prawn crackers, it can be an appetizer, snack or a side dish when part of an Indonesian rijsttafel. If you cannot get the sweet soy sauce, use regular and add some brown sugar. Marinating time is not included.

1 1/2 lbs pork tenderloin (or chicken breasts)
1 small onion, grated
1 -2 garlic clove, crushed
1/2 cup ketjap manis, sweet soy
salt
white pepper
2 teaspoons ground coriander
2 teaspoons ground cumin
1/2 tablespoon lemon juice
1 -2 teaspoon sambal oelek (optional) or 1 -2 teaspoon chili paste (optional)

Steps:

  • Cut the pork up, into cubes.
  • Make a marinade from the remaining ingredients.
  • Add the meat and leave to marinate for 30 minutes minimum.
  • Skewer the meat onto metal or bamboo/wooden skewers, if you use the wooden soak for half an hour in water, keep the marinade.
  • Roast them under a grill, in a grill pan or best of all on the barbeque until done, usually about ten minutes or shorter.
  • Baste with the remaining marinade during cooking.
