"EVERYTHING" SEASONING PHYLLO CRACKERS



These phyllo crackers have a delicate, flaky texture with a buttery flavor. Bagel seasoning can be found at most major retailers or you can make your own. These can be a little finicky to make at first, but once you get the hang of it, you will be hooked!

10 sheets phyllo dough, thawed
3 tablespoons melted butter
1 egg white, lightly beaten
3 tablespoons everything bagel seasoning

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Cut 2 sheets of parchment paper to fit on a baking sheet.
  • Place 1 sheet of parchment on a flat work surface. Gently place 1 sheet of phyllo dough on top. Brush lightly with butter right up to the edges, being careful not to tear the sheet. Place another sheet of phyllo on top. Press down to remove any air pockets, and brush with butter. Repeat 3 more times. On the 5th sheet, brush with egg white instead of butter. Sprinkle with 1/2 of the bagel seasoning.
  • Cut the phyllo into 40 squares, or into the shape of your choice, using a pizza cutter. Slide the whole parchment sheet onto the baking sheet.
  • Bake in the preheated oven until lightly browned, 6 to 8 minutes. Keep a close eye on them, as they tend to brown quickly. Remove parchment sheet from baking sheet and let cool.
  • Repeat process with remaining ingredients. Let cool and serve immediately, or store at room temperature in a sealed container.

1 (12 ounce) package frozen riced cauliflower
cheese cloth
1 egg
1 tablespoon dry ranch salad dressing mix
⅛ teaspoon cayenne pepper, or more to taste
1 cup shredded Parmesan cheese

Steps:

  • Place riced cauliflower in a microwave-safe bowl. Microwave, covered, for 3 to 4 minutes. Transfer to a cheesecloth-lined strainer and allow to cool for 15 minutes. Squeeze moisture out of the cooled riced cauliflower.
  • Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.
  • Combine riced cauliflower, egg, ranch mix, and cayenne pepper in a bowl and mix well. Stir in Parmesan cheese until incorporated.
  • Drop mixture with a small cookie scoop onto the prepared cookie sheet and flatten with a small hand rolling pin, a cup, or your hand to approximately 1/16-inch thickness. The thinner the dough, the crispier the cracker.
  • Bake crackers in the preheated oven for 10 minutes, flip, and bake for an additional 10 minutes. Cool on a wire rack.

Delicious Cheez-it® type crackers but keto! Super easy to make with almond flour and mozzarella cheese!

2 cups shredded mozzarella cheese
2 ounces cream cheese
1 cup finely ground almond flour
1 large egg

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.
  • Combine mozzarella and cream cheese in a microwaveable bowl. Sprinkle almond flour over top. Cover bowl with a paper towel and microwave until cheese is bubbly, but not burnt, about 1 minute.
  • Mix cheeses and almond flour evenly until they form a ball of dough. Let cool, about 10 minutes.
  • Add egg to mixture and reform dough ball.
  • Roll out dough between 2 sheets of parchment paper to a 1/8-inch thickness; the thinner, the crispier. Cut into small 1-inch squares. Place squares on the prepared baking sheet.
  • Bake in the preheated oven for 5 minutes. Flip crackers and bake until golden, about 5 minutes more.
