ICE CREAM SANDWICH CAKE

Ice Cream Sandwich Cake image

My daughter renamed this recipe 'The Best Dessert I've Ever Eaten' this summer when I prepared it for Memorial Day. I had made it before, but my husband had probably eaten all of it before she had a chance to get a taste! My husband doesn't like me to take this dessert to a large gathering because it means he won't have any leftovers! Got this recipe from a Bunco friend.

VICTORIA SANDWICH - CLASSIC ENGLISH SPONGE CAKE FOR TEA TIME

Victoria Sandwich - Classic English Sponge Cake for Tea Time image

The Victoria Sandwich is the quintessential English cake, conjuring up images of old England and afternoon tea. It's always been a favourite in cake baking competitions and is even used by manufacturers to test new cookers. This is one of the recipes that I use when I make my Victoria Sandwich sponge cake - the other method is posted at the end of the recipe; the ingredients are the same but the weight ratio is slightly different. This method is the original and more traditional way of weighing your ingredients, bearing in mind that the recipe is Victorian! A true Victoria Sandwich would only contain jam, usually raspberry, but as the cake became more popular and cooks became more affluent, cream was added as a delicious addition. I was always taught that caster sugar was sprinkled on top - again, icing sugar is often used nowadays. This recipe adaptation was taken from the WI website, a wonderful organisation in Great Britain for woman of all ages, backgrounds, race or creed - remember The Calendar Girls? They were all WI members! Historical note: Anna, the Duchess of Bedford (1788-1861), one of Queen Victoria's ladies-in-waiting, is credited as the creator of tea time. She invited friends to join her for an additional afternoon meal at five o'clock in her rooms. The menu centred around small cakes, bread and butter sandwiches, assorted sweets, and, of course, tea.The practice of inviting friends to come for tea in the afternoon was quickly picked up by other social hostesses. Queen Victoria adopted the new craze for afternoon tea time. By 1855, the Queen and her ladies were in formal dress for the Victorian tea time parties. This simple cake was one of the queen's favourites and was named in honour of the Queen as a mark of the cake's most devoted followers! (I used home made lemon curd for the cake in my photos, a tangy change from raspberry jam!)

Provided by French Tart

Categories     Breads

Time 40m

Yield 1 Victoria Sandwich, 6-8 serving(s)

Number Of Ingredients 7

3 large eggs, weighed in their shells
butter or soft margarine
caster sugar
self-rising flour
raspberry jam (or jam, jelly or curd of your choice.)
whipped cream (optional) or double cream (optional)
caster sugar or icing sugar

Steps:

  • The measurements for this recipe are equal amounts of sugar, flour and fat to the weight of the eggs; Recipezaar will not allow me to post that as a measurement. Therefore, weigh the eggs first - if the eggs weigh 8 ounces, you will use 8 ounces of sugar, 8 ounces of butter or margarine and 8 ounces of flour. If the eggs weigh 6 ounces, all the other ingredients will be 6 ounces - easy!
  • Set oven Gas 4 160C (fan oven), 180C or 360F: grease and base line the bottom of 2 x 8" sandwich tins - cake tins.
  • Cream margarine or butter together with the sugar, until light and fluffy.
  • Beat the eggs, and then add them to the mixture, gradually and beating well after each addition.
  • Sieve the flour and fold into the mixture with a metal spoon.
  • Divide equally between the 2 prepared tins and bake for 25 minutes in the middle of the oven.
  • Remove and allow to cool for 1-2 minutes.
  • Remove from the tins and fill with raspberry jam (and cream if using) when cold, to avoid the cream melting or the jam seeping into the sponge.
  • A light dusting of caster sugar or icing sugar on the top will finish it.
  • Place on an attractive cake stand or plate, and serve in dainty wedges with freshly brewed tea.
  • Cook's Notes.
  • If you use butter remove from the fridge to soften before using. This is not necessary with soft margarine.
  • If large eggs are used they may weigh 7 ½ ozs/210g. If so make sure you use this weight for the other ingredients.
  • A smaller sandwich cake can be made with 2 medium eggs. Weight about 4 oz/55g. If so, use 2 x 7" sandwich tins and the cakes and the cakes will need less time in the oven - probably 20mins.
  • Alternative measurements:.
  • 3 eggs.
  • 6 ounces soft margarine or butter.
  • 6 ounces caster sugar.
  • 6 ounces SR flour.
  • Proceed as above for method.

ICE CREAM SANDWICH CAKE POPS

Ice Cream Sandwich Cake Pops image

Ice cream cake on a stick, crunchies and all! The shell coating against the cake part of the ice cream sandwich gives it the most amazing texture. It's not thin and brittle like normal chocolate-coated pops, but more like the inside of a Carvel® ice cream cake. Assorted toppings (I like crushed Oreo's®!) add crunchy texture and the cake warms a little so it's a perfect contrast to the cold ice cream. You just have to try this, no dessert could be easier! Kids would have fun making these but adults alike will enjoy eating them.

Provided by NicoleMcmom

Time 1h10m

Yield 12

Number Of Ingredients 4

6 (2.5 ounce) ice cream sandwiches
2 (7.25 ounce) bottles chocolate shell topping (such as Magic Shell®)
12 popsicle sticks
assorted toppings such as sprinkles, crushed cookies, nuts, crushed candy bars

Steps:

  • Cut ice cream sandwiches in half crosswise. Insert a popsicle stick through up through the center of each cut end.
  • Remove the caps and seals from the shell topping. Place in the microwave and cook for 8 seconds. Pour each bottle shell topping into a glass measuring cup.
  • Dip each pop into shell topping until completely covered, allowing excess to drip off. Dip the top ends in desired toppings and place on parchment-lined baking sheet.
  • Freeze pops at least 1 hour before serving.

Categories     Food & Cooking     Dessert & Treats Recipes     Cookie Recipes

Yield Makes about 25 sandwiches

Number Of Ingredients 16

1 cup packed light-brown sugar
1 cup granulated sugar
1/2 pound (2 sticks) unsalted butter, room temperature
2 large eggs, room temperature
1 teaspoon pure vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground ginger
2 cups old-fashioned rolled oats
1 1/2 cups finely grated carrots, (about 3 large carrots)
1 cup raisins
Cream Cheese Frosting

Steps:

  • Preheat oven to 350 degrees. Line two baking sheets with Silpat baking mats or parchment paper, and set aside. In the bowl of an electric mixer fitted with the paddle attachment, combine sugars and butter; beat until light and fluffy, 3 to 4 minutes. Add eggs and vanilla, and beat on medium speed until well combined.
  • In a large bowl, sift together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger; stir to combine. Gradually add flour to butter mixture; mix on a low speed until just blended. Mix in oats, carrots, and raisins. Chill dough in refrigerator until firm, at least 1 hour.
  • Using a 1/2-ounce ice-cream scoop, scoop dough onto prepared baking sheets, leaving 2 inches between cookies. Transfer to oven, and bake until browned and crisped, rotating pan halfway through baking to ensure even color, 12 to 15 minutes. Transfer to a wire rack to cool. Repeat baking process with remaining dough. Once cooled completely, use an offset spatula to spread about 2 teaspoons of cream-cheese filling onto a cookie. Sandwich together with a second cookie. Repeat with remaining cookies. Store in an airtight container for up to 3 days in the refrigerator.

CARROT CAKE SANDWICH

Carrot Cake Sandwich image

Everything you love about carrot cake - the spices, the sweet and nutty flavors, the cream cheese frosting, and of course, the carrots! - is in this fast and simple lunch. I came up with this recipe while brainstorming new ways to use peanut butter (one of the staples of my vegetarian diet.) This grown-up alternative to the standard PBJ is a sandwich that thinks it's dessert!

SUMMERTIME ICE CREAM SANDWICH CAKE

Summertime Ice Cream Sandwich Cake image

I made this originally for my daughter's birthday. I love that it is the birthday cake and ice cream all in one step and much easier than making a from scratch cake, even from a box mix. You can play around with the flavors of the ice cream sandwiches, pudding and sub crushed candy bars or other cookies for the oreos.

Time 30m

Yield 1 large pan, 12 serving(s)

Number Of Ingredients 6

12 ice cream sandwiches
1 1/2 ounces sugar-free chocolate pudding mix
1 cup whole milk
8 ounces frozen whipped topping
15 ounces chocolate sandwich style cookies
8 ounces frozen whipped topping

Steps:

  • Grease a 9X13 pan. I used coconut oil.
  • Place ice cream sandwich bars in a single layer. Break them up to fill in all the space of the pan, as needed.
  • Prepare pudding mix with milk, using a hand held electric mixer. Add 1 small container of frozen whipped topping and continue to beat until smooth. Spread pudding mix evenly over ice cream sandwich bars.
  • Crush the cookies, leaving some of the cookies as chunks. I use a gallon freezer bag and a rolling pin, but you could pulse them in a food processor. Sprinkle cookies over pudding layer, RESERVING A CUP OR TWO FOR THE FINAL STEP.
  • Spread the second container of frozen whipped topping over the cookie layer. Top with remaining cooking crumbs.
  • Freeze at least several hours before serving.
