COOL COUSCOUS SALAD



Cool Couscous Salad image

Number Of Ingredients 12

1 (10-ounce) box instant couscous
6 ounces marinated artichoke heart quarters - drain and reserve liquid
1 cup halved cherry tomatoes
3 scallions, thinly sliced on a diagonal
1 (15-ounce) can chickpeas, drained and rinsed
1 large cucumber, peeled, seeded and cut into large dice
1/2 cup loosely packed mint leaves, roughly torn
1 store bought roast chicken
1 lemon, juiced
1/2 cup extra-virgin olive oil
Salt and freshly ground black pepper
Pinch cayenne pepper

Steps:

  • Make the couscous according to the directions. Uncover and fluff with a fork. Transfer the couscous to a large bowl and let cool.
  • To the couscous, add the artichoke quarters, cherry tomatoes, scallion, chickpeas, cucumber and mint.
  • Remove the breasts from the roast chicken - reserve the rest of the chicken for another use. Remove skin and cut the breasts into small pieces. Add the chicken to the couscous.
  • In a small bowl, whisk together the reserved lemon juice, olive oil and the reserved artichoke liquid. Season with salt, pepper, and a little cayenne pepper, to taste. Pour this dressing over the couscous mixture and toss lightly to combine.

SPINACH AND LYCHEE SALAD

1/3 cup Asian Vinaigrette (recommended: Newman's Own)
2 tablespoons syrup from canned lychees
1 scallion, finely chopped
1/2 teaspoon red pepper flakes
1 teaspoon sesame seeds
1 (9-ounce) package baby spinach (recommended: Fresh Express)
1 (8-ounce) can sliced water chestnuts, drained and liquid reserved (recommended: La Choy)
1/2 (20-ounce) can lychees in syrup, juice reserved (recommended: Golden Star)
1/4 cup real bacon crumbles
2 large hard-boiled eggs, peeled and quartered

Steps:

  • In a jar or sealable container, combine vinaigrette and 2 tablespoons reserved lychee juice, scallion, red pepper flakes, and sesame seeds. Shake vigorously; set aside.
  • Add spinach and water chestnuts to a large bowl. Add dressing and toss. Top with lychees, bacon bits, and eggs.

QUINOA SALAD

1 cup quinoa
2 cups chicken or vegetable stock
1 hothouse cucumber, diced
2 scallions
1/2 cup roasted red pepper, diced
1/4 cup flat leaf parsley, finely chopped
1 tablespoon fines herbs (recommended: Spice Island)
1/4 cup crumbled feta cheese
3 tablespoons slivered almonds
9 cups spring salad mix
1/4 cup light roasted garlic and balsamic salad dressing

Steps:

  • Combine quinoa and stock in small pot and bring to a boil. Reduce to simmer and cover. Cook 10 to 15 minutes or until liquid has been absorbed. Let cool completely.
  • In a large mixing bowl, combine cooled quinoa with remaining ingredients. Toss to mix thoroughly.
  • Serve chilled on a bed of greens tossed with a little dressing.

2 (19 ounce) cans garbanzo beans, drained
2 medium tomatoes, seeded and diced (chick peas)
1/4 cup green bell pepper, chopped
1/4 cup red bell pepper, chopped
1/4 cup kalamata olive, pitted and halved
1/4 cup fresh parsley, chopped
4 green onions, chopped
1 tablespoon fresh oregano, chopped
1/2 cup olive oil
3 tablespoons balsamic vinegar
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Combine the chick-peas, tomatoes, green bell pepper, red bell pepper, kalamata olives, parsley, green onions, and oregano in a bowl; toss. Set aside.
  • Combine the oil and the remaining ingredients in a jar. Cover tightly and shake vigorously. Pour the dressing over the chick-pea mixtre. Toss. Refrigerate for 8 hours. Serve at room temperature.

This quick recipe makes simple canned chickpeas into a bold and hearty vegetarian meal. 3 tablespoons fresh lemon juice
1/2 teaspoon grated garlic
Kosher salt and pepper

1/2 cup finely chopped celery
1/2 cup finely chopped scallions
1/2 cup freshly grated Parmigiano-Reggiano
8 slices multigrain sandwich bread
Mayonnaise, as needed
8 butter lettuce leaves
1 (packed) cup alfalfa sprouts
1 avocado, thinly sliced
1 large tomato, thinly sliced

Steps:

  • In a large bowl, combine oil, tahini, lemon juice and garlic. Season with salt and pepper, then whisk until well combined. Add chickpeas and mash with the back of a fork or spoon until chunky. Add celery, scallions and cheese, and mix well. Season with salt and pepper.
  • Spread one side of each bread slice with mayonnaise. On 4 slices of bread, divide lettuce, alfalfa and avocado, then top with some of the chickpea salad and tomatoes. Close sandwiches and serve. (Sandwiches may sit at room temperature for 1 to 2 hours before serving.)
