My family has had it's chili recipes for many years. As they vary slightly from one kitchen to the next, I came up with a recipe that combines them all into one big pot of love!

2 lb ground beef or diced stew meat; (try venison if you can)
1 c diced onion
3 Tbsp minced fresh garlic
1 can(s) diced fire roasted tomatoes with liquid
1/4 c chili powder
1 Tbsp ground cumin
1 Tbsp paprika
1 tsp salt
1 tsp black pepper
1/2 tsp cayenne pepper
1/4 tsp oregano, dried
2 c chicken broth, unsalted
2 c beef broth, reduced sodium

Steps:

  • 1. Brown meat; add onions and garlic and saute lightly; stir in spices; add tomatoes and broth; bring to a boil; reduce heat and simmer for 2 to 3 hours. * Adjust spices to desired heat level; serve with fresh chopped cilantro, onion, shredded cheese, sour cream, corn chips. You can also add a can of pinto or kidney beans if you like.

Authentic enchilada recipe from San Antonio. The Enchilada Gravy recipe will make 3 quarts so use as much as you like then refrigerate or freeze the rest. Cook time includes time to make Enchilada Gravy and Chili con Carne. Prep time is the time to make the Enchiladas. Enchiladas can be frozen fully assembled then thawed and heated in the oven. This recipe looks complicated but it is so easy, just throw everything into two pots and simmer while rolling up the tortillas! Substitute store-bought enchilada sauce for the Tex-Mex lovers, the enchilada gravy is some heavy stuff!

8 corn tortillas (homemade or store bought)
4 cups grated American cheese
pico de gallo, for topping
cheese, for topping
1 cup vegetable oil
2 cups all-purpose flour
1/4 cup chili powder
1 tablespoon ground cumin
1 tablespoon garlic powder
1 1/2 tablespoons salt
1/4 tablespoon pepper
2 quarts water
1 lb ground beef
1 teaspoon garlic powder
1 teaspoon ground cumin
1 bay leaf
salt
pepper
2 tablespoons chili powder
1 cup water
2 cups cooked pinto beans (optional) or 2 cups canned pinto beans (optional)

Steps:

  • Make Enchilada Gravy Sauce.
  • Heat oil in large stockpot (at least 3 qt).
  • Add flour and cook until browned, stirring constantly, you are making a roux, do not let it burn NOTE: this will have almost a "dough" consistency, don't be scared once the water is added it will thin into a thick gravy.
  • Stir in chili powder, cumin, garlic, salt and pepper.
  • Cook roux, stirring constantly, for at least 2-3 minutes. If you do not thoroughly cook the roux it will taste like flour mixed with oil.
  • Gradually add the water, stirring until smooth.
  • Boil gently for 15 minutes.
  • Meanwhile make the Chili con Carne.
  • Brown the ground beef in a large skillet.
  • Add the garlic, cumin, bay leaf, salt and pepper.
  • Cook for 15 minutes, stirring occasionally and adding a little water if the pan becomes dry.
  • Add the chili powder and 1 cup of water and bring to a simmer.
  • Simmer for 10 minutes, then remove the bay leaf and add the beans if using.
  • Meanwhile make the Enchiladas.
  • Preheat oven to 350°F.
  • Soften tortillas, fill with American cheese and roll up.
  • Place them seam side down in a baking dish and cover with Enchilada Gravy Sauce and Chili con Carne.
  • Top with Pico de Gallo and more cheese to taste.
  • Heat in oven for 10 minutes or until cheese is melted and enchiladas are heated through.

4 tablespoons vegetable oil, divided
4 pounds well-trimmed boneless beef chuck (from about 5 pounds), cut into 1/2-inch cube
2 medium onions, chopped
1 head of garlic (about 15 cloves), peeled, chopped
1/2 cup ground ancho chiles
2 tablespoons ground cumin
1/2 teaspoon ground allspice
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1 12-ounce bottle dark beer
1 28-ounce can diced tomatoes in juice
2 teaspoons dried oregano
2 teaspoons coarse kosher salt
2 tablespoons tomato paste
3 tablespoons masa (corn tortilla mix)
Coarsely grated sharp cheddar cheese
Chopped green and/or red onion
Chopped fresh cilantro
Diced fresh tomatoes (optional)
Sour cream (optional)
Ingredient info: Ground ancho chiles are available in the spice section of super markets and at Latin markets. Masa (or masa harina) is sold at super markets and Latin markets.

Steps:

  • Heat 1 tablespoon oil in large pot over medium-high heat. Add 1/3 of beef; sprinkle with salt. Cook until browned, stirring occasionally, about 3 minutes. Using slotted spoon, transfer beef to large bowl. Repeat 2 more times with 2 tablespoons oil and beef.
  • Reduce heat to medium. Add 1 tablespoon oil and onions. Sauté until soft, 8 to 10 minutes. Add garlic; stir 2 minutes. Add ground anchos, cumin, allspice, cinnamon, and cloves; stir until fragrant, about 1 minute. Add beer; stir 1 minute, scraping up browned bits. Return beef and juices to pot. Add tomatoes with juice, 2 cups water, oregano, and 2 teaspoons coarse salt. Bring chili to boil. Reduce heat to low, cover with lid slightly ajar, and simmer gently until beef is just tender, 1 3/4 to 2 hours. Cool 1 hour, then chill uncovered until cold. Cover; chill overnight.
  • Spoon fat from chili. Bring chili to simmer over medium heat. Stir in tomato paste. Sprinkle masa over; stir to blend. Simmer uncovered until thickened and beef is very tender, stirring often, and adding more water by 1/4 cupfuls if too thick, about 30 minutes.
  • Divide chili among bowls. Top with garnishes and serve.

1 lb pork, 3/4 inch cube
3 lbs beef, 3/4 inch cube
1 1/2 tablespoons ground jalapenos
1 1/2 tablespoons ground fresh garlic
1 tablespoon salt
1 tablespoon ground cumin (comino)
6 tablespoons fresh ancho chilies, pods seeded and ground
2 teaspoons black pepper
6 tablespoons good quality chili powder
made from masa corn flour
water, as needed

Steps:

  • Deseed and clean ancho chili pods.
  • Soak for 1 hour in hot water.
  • Drain and grind.
  • Reserve.
  • Place pork and beef cubes into a large stock pot.
  • Fill with water to cover meat.
  • Bring to a simmer over medium high heat.
  • Add jalapeños, garlic, salt, cumin, ancho chili pod paste and pepper.
  • Bring to a boil.
  • Reduce to a simmer and cook until meat is done.
  • Add chili powder and mix all ingredients well.
  • Simmer for 20 minutes.
  • Remove from heat and thicken with Masa roux.
