ALMOND BUTTER PIE WITH CHOCOLATE SALTINE TOFFEE CRUST

Almond Butter Pie with Chocolate Saltine Toffee Crust image

This is no ordinary pie crust: Inspired by the holiday classic saltine toffee candy (saltine crackers dipped in caramel and chocolate), it is crunchy, slightly coconutty, salty and sweet. The creamy no-bake almond butter filling is the ideal match.

Provided by Food Network Kitchen

Categories     dessert

Time 7h20m

Yield 8 servings

Number Of Ingredients 10

2/3 cup organic virgin coconut oil, melted
1/3 cup granulated sugar
2 sleeves saltines (about 80 crackers), coarsely crushed
3 ounces bittersweet chocolate, finely chopped
1/4 cup caramel sauce
1 cup heavy cream
1 cup creamy almond butter, at room temperature
One 8-ounce package cream cheese, at room temperature
1 1/4 cups confectioners' sugar
Sliced skin-on almonds, for decorating

Steps:

  • Preheat the oven to 350 degrees F. Mix together the oil, granulated sugar, crushed saltines and 1/2 cup water in a large bowl. Press into the bottom and all the way up the sides of a 9-inch deep-dish pie dish. Chill for 15 minutes. Bake the crust until golden, about 25 minutes. Let cool completely.
  • Meanwhile, microwave the chocolate in a medium microwave-safe bowl in 30-second intervals, stirring after each, until melted and smooth, about 2 minutes. Set aside 2 tablespoons in a small bowl.
  • Drizzle the crust with the caramel sauce, then the remaining melted chocolate. Refrigerate while you make the filling.
  • Whip the cream in a medium bowl with an electric mixer on medium speed until stiff peaks form, about 2 minutes. Beat the almond butter and cream cheese in a second medium bowl with an electric mixer on medium speed until smooth, about 2 minutes. Add the confectioners' sugar and beat until smooth. Fold in the whipped cream until just combined.
  • Pour the filling into the crust and smooth out the top, taking care not to cover the crust edge. Drizzle the reserved chocolate in a lacy pattern around the edge of the pie and decorate with the sliced almonds. Chill until set, 6 hours and up to overnight.

CHOCOLATE TOFFEE CANDY COOKIES (SALTINE CANDY)

Chocolate Toffee Candy Cookies (Saltine Candy) image

This simple candy shows up at all of my family gatherings .This recipe is quick and easy. The saltines may sound like a strange addition to something sweet, but I have never known anyone who made this recipe just once!

Provided by Girly_Girl_Lori

Categories     Bar Cookie

Time 1h22m

Yield 40 serving(s)

Number Of Ingredients 5

40 saltine crackers (about one sleeve, Do not use unsalted)
1 cup butter (2 sticks)
1 cup brown sugar
1 teaspoon vanilla extract
11 ounces semi-sweet chocolate chips

Steps:

  • Preheat oven to 400 degrees.
  • Cover cookie sheet with a single layer of saltines.
  • Boil butter, sugar, and vanilla for one minute. Pour evenly over saltines. If needed, gently spread to make even. Bake for 7 minutes.
  • While toffee is still hot and bubbly, pour chocolate chips evenly on top of candy. When the chocolate chips begin to melt, gently spread chocolate over toffee. Freeze for one hour. Break into pieces and enjoy!
  • ***I have sprinkled nuts and/or drizzled white chocolate over the top of this candy to make it even better, but the basic recipe is outstanding as well. You can also change the type of chocolate that you use in the chips. White chocolate chips and milk chocolate both work, but make the candy incredibly sweet.***.

SALTINE TOFFEE BARS

Saltine Toffee Bars image

A simple yet delicious recipe that will keep your eaters coming back for more as well as asking for the recipe.

Provided by sahmisme

Categories     Candy

Time 15m

Yield 16-20 serving(s)

Number Of Ingredients 5

35 saltine crackers (approx one sleeve)
1 cup butter, melted
1/2 cup sugar
1 (12 ounce) package peanut butter and milk chocolate chips
3/4 cup pecans, chopped

Steps:

  • Line cookie sheet with tin foil and lay saltines touching in a single layer. (If there is excess room on the cookie sheet, fold up the foil so the crackers stay close together and the butter doesn't seep away from the crackers.)
  • Combine sugar and melted butter (the sugar will not dissolve). Evenly distribute mixture, being sure to cover all the crackers with some butter and sugar.
  • Bake for 10-15 minutes at 350 degrees. While baking, the butter will start to look frothy and bubbly. Be sure to remove from oven as soon as butter turns a light golden brown.
  • Once removed from the oven, push crackers together as they may of moved or overlapped while baking. Immediately sprinkle with peanut butter and chocolate morsels. Let sit a few minutes to melt then use a spatula to spread it over all the crackers.
  • Top with pecans (pressing them with your hands into the chocolate will help them stick a little better) then cool in the refrigerator. Break into bite size pieces and store in a closed container.

SALTINE TOFFEE

Saltine Toffee image

When this was in the oven it reminded me of the candy shops in New Orleans where they make their own candy. You would never know this was made with saltines; It looks like a fancy candy you would buy in a candy store. The perfect blend of salty and sweet! I have a friend that used to make something similiar with graham...

Provided by Candy Ayers

Categories     Chocolate

Time 30m

Number Of Ingredients 5

35 35 saltine crackers
1/2 c (1 stick) butter
1/2 c firmly packed light brown sugar
8 (8 squares) semi-sweet baking chocolate, chopped (you can also use 8 oz. of chocolate chips)
1 c chopped walnuts or pecans

Steps:

  • 1. Preheat oven to 400°F. Line a 15x10x1-inch baking pan with foil or parchment paper. Place saltines in even rows on lined baking pan.
  • 2. Melt butter and sugar in saucepan over medium heat. Continue cook on medium-high heat until butter is completely melted and mixture is well blended, stirring frequently. Bring to boil; boil 3 min. without stirring. Spread evenly over crackers. (Note: this is the only tricky part. A friend advised that if you use a full cup of butter it's much easier to spread but I've stuck to the 1/2 cup measure).
  • 3. Bake for 7 minutes. Remove from oven and sprinkle with chopped chocolate or chips is using and allow to stand about 5 minutes so chocolate can melt.
  • 4. Spread melted chocolate evenly over ingredients in pan; sprinkle with nuts. Cool and break into pieces. Store pieces in refrigerator.

CHOCOLATE SALTINE TOFFEE (AKA CHRISTMAS CRACK)

CHOCOLATE SALTINE TOFFEE (AKA CHRISTMAS CRACK) image

Categories     Cookies     Chocolate     Bake

Yield one 9x13 pan

Number Of Ingredients 5

30 to 40 saltine crackers
1 cup unsalted butter (2 sticks)
1 cup brown sugar, packed
1/2 teaspoon vanilla extract
1 1/2 to 2 cups semi-sweet or milk chocolate chips

Steps:

  • Preheat oven to 350F. Line a 9 x 13 pan or similar with aluminum foil and spray it very well with cooking spray. Do not try to make this without using foil; you will hate yourself. Place saltine crackers in a single layer on the bottom of the pan. In a saucepan on the stovetop, combine butter and sugar and bring to a boil while stirring constantly. Once a boil is reached, reduce the heat and simmer, uncovered, for 3 to 5 minutes or until mixture has thickened some. Take care not that your simmer is not too fast/too high because it will be prone to bubbling over or scorching. Stir mixture frequently while it simmers to avoid bubbling over or scorching. The taste of burnt butter and sugar is awful so don't burn it. After mixture has thickened a bit, remove it from the heat, wait 30 seconds, add the vanilla extract and stir. Pour mixture over the prepared pan with the saltine crackers. Bake in for 5- 7 minutes, or until toffee/liquid becomes bubbly. After removing the pan from the oven, let it rest for 3 to 5 minutes. Sprinkle on the chocolate chips and wait for 3 to 5 minutes, letting them soften and melt a bit, and then spread and smooth them into an even layer with a spatula. Optional: After smoothing the chocolate, add nuts, seeds, graham cracker crumbs, toffee bits, dried fruit, candy bits, or swirl in some peanut butter or other nut butter. Or use other types of chips, such as butterscotch, white, peanut butter, etc. either in addition to or in a half-and-half combination with the dark chocolate chips for your top layer. Let cool very well and if desired for expediting purposes, refrigerate or freeze until hardened. Break into pieces the size of your choice. Store in an airtight container at room temperature for up to 2 weeks or in the freezer for up to 4 mon
