I just saw Sunny Anderson make this on the RR show and found the recipe on the Internet. It looks so easy and delicious and wanted to post it immediately.

Time 40m

Yield 2 serving(s)

Number Of Ingredients 7

2 honey crisp apples or 2 any other crisp apples
2 tablespoons butter
3 tablespoons dark brown sugar, packed
1 tablespoon flour
1 teaspoon ground cinnamon
4 caramels, unwrapped
whipped cream, vanilla ice cream, caramel sauce, cinnamon

Steps:

  • Preheat oven to 375 degrees.
  • Slice 1/4 off the top of the apples.
  • Core the apples.
  • Using a sharp knife make two deep circular cuts around the top of the apples.
  • Turn apple over and make vertical narrow cuts around the apple, not through the apple, just around. Like a blooming onion.
  • Turn apple over again and check that it looks like a blooming onion.
  • Place apples in an oven proof dish and put caramels in the center of the apples.
  • Heat butter and brown sugar and microwave for 30 seconds and stir. Cook for an additional 30 seconds.
  • Remove from microwave and add flour and cinnamon.
  • Pour evenly over 2 apples.
  • Bake for 25-30 minutes. Check apples after 25 minutes to make sure they are tender, if not cook for another 5 minutes.
  • Remove from oven and place in bowls.
  • Top with a scoop of vanilla ice cream, caramel sauce and cinnamon, if desired.
