2 cups curd ((Plain yogurt))
½ to 1 cup water ((or 2 to 3 ice cubes + ¼ cup milk or cream adjust as needed))
3 to 4 tablespoon sugar ((or maple syrup, adjust to taste))
¼ to ½ teaspoon cardamom powder ((ground cardamoms, elaichi powder))
1 teaspoon rose water ((optional))
1 pinch saffron strands ((Kesar) optional)
1 tablespoon chopped nuts (for garnish, optional)
½ teaspoon roasted cumin powder ((roasted jeera powder))
¼ to ½ teaspoon salt ((use as needed))
2 pinches chaat masala ((for garnish, optional))
½ to ¾ cup mint or pudina ((use as needed))
½ teaspoon cumin powder (or roasted jeera powder)
⅛ teaspoon chaat masala ((optional))
2 tablespoon lemon juice ((use as needed))
1 tablespoon sugar ((optional))
¼ to ½ teaspoon salt ((or as needed))
¼ green chili deseeded ((optional))

Steps:

  • Chill the curd and water in the refrigerator. If you want to use saffron, soak it in 2 tbsps hot milk and let it rest for sometime.
  • Add curd to a large bowl. Whisk it well to break up lumps & make it smooth.

This savory lassi variation includes salt and mint leaves, which are traditional, and black pepper and lime zest, which are not. It's the kind of thing to serve with juicy ripe melon and prosciutto for a light hot weather lunch, or to offer as a nonalcoholic alternative at a cocktail party. Sheeps' milk yogurt lends a lovely earthiness to the mix but plain cows' milk yogurt is a perfectly fine alternative. Feel free to adjust the salt and sugar levels to suit your taste. You want this on the savory side, but a little more sweetness works nicely with the pepper and mint.

Number Of Ingredients 5

2 teaspoons cumin seeds
1 cup mint leaves
4 cups plain Greek-style yogurt
1 1/2 teaspoons kosher salt
1/2 cup water

Steps:

  • Toast cumin in a dry small heavy skillet over medium heat, shaking skillet frequently, until fragrant, 1 to 2 minutes. Transfer 1 1/2 teaspoons to a blender with mint, yogurt, kosher salt, and water.
  • Blend until pale green with flecks of mint and cumin. Serve lassi over ice and sprinkle with remaining 1/2 teaspoon cumin seeds.
