1 lb large shrimp, peeled and de-veined
4 salmon fillets (about 6- to 8-oz each)
1 tsp salt
1 tsp black pepper
6 Tbsp unsalted butter, divided (2 tbsp + 4 tbsp)
2 Tbsp honey
CAJUN SEASONING
zest of 1 small lemon
1 tsp garlic powder
1/2 tsp sweet paprika
3/4 tsp black pepper
3/4 tsp white pepper
1/2 tsp onion powder
1/2 to 1 tsp cayenne pepper (adjust to suit your taste preference)
1/2 to 1 tsp crushed red pepper flakes, ground (optional)
1/2 tsp dried oregano leaves
1/2 tsp dried thyme leaves
GARNISH
1 to 2 Tbsp fresh flat leaf parsley (italian parsley), coarsely chopped

Steps:

  • 1. In a shallow dish, stir together all Cajun seasoning ingredients. Add shrimp and toss until thoroughly coated in the seasoning blend. Set seasoned shrimp aside while you prepare the salmon.
  • 2. Lightly season each salmon fillet with a bit of salt and pepper.
  • 3. Heat 2 Tbsp butter in a large skillet over medium heat. Add honey and whisk to combine (mixture should be bubbly). Add salmon fillets to skillet and cook for 5-6 minutes, then flip and cook another 4-5 minutes or until salmon is cooked through, flaky, and browned. Transfer salmon to a plate and cover with aluminum foil to keep warm.
  • 4. Add remaining 4 Tbsp butter to the same skillet over medium heat. Once butter is melted, stir in the seasoned shrimp, and saute until opaque and cooked through, about 4-5 minutes total, turning frequently to prevent burning.
  • 5. Serve salmon topped with shrimp. Drizzle extra pan sauce over the top of each serving, and garnish with parsley. Serve immediately.

EASY CAJUN SALMON



Easy Cajun Salmon image

Cajun salmon is a quick and easy dinner recipe that is bursting with flavor. Cajun seasoned salmon is quickly seared until blacked, then a little cream (or dairy-free cashew cream) is added to the pan to make a creamy cajun sauce. It's delicious!

4 5-ounce salmon fillets (see notes)
1 tablespoon cooking oil (we like avocado oil)
⅓ cup heavy cream or cashew cream (see notes)
Minced parsley (to serve)
1 tablespoon paprika
1 ½ teaspoons EACH: onion powder and garlic powder
½ teaspoon EACH: thyme, oregano, salt, pepper, and cayenne (see notes)

Steps:

  • Mix the seasoning ingredients together in a small bowl. Reserve about ½ tablespoon of the seasoning then sprinkle the remaining evenly over the top of the salmon.
  • Heat the oil in a large nonstick pan over medium-high heat. Add the salmon to the pan, top side facing down. Cook for 5 minutes, or until the side of the salmon that is facing the pan is well-browned (blackened). Flip the salmon over and continue to cook for another 3-4 minutes, or until the salmon is fully cooked. It should reach an internal temperature of 140 degrees Fahrenheit. Remove the salmon from the pan.
  • Add the cream and the reserved ½ tablespoon of cajun seasoning to the pan. Simmer for about 1 minute, or until the cream reduces slightly. Serve the salmon with the cajun cream sauce poured over the top and a little minced parsley for color.

1/2 cup bourbon
3/4 cup brown sugar
3 tsp soy sauce
1/2 tsp ground ginger
1/2 tsp freshly ground black pepper

Steps:

  • To prepare the sauce, stir together all ingredients. Place salmon in a nonreactive dish. Pour the sauce over the salmon and marinate in the refrigerator for 30 to 60 minutes. Preheat grill to medium-hot. Drain the salmon, reserving the marinade. Grill salmon for 4 to 5 minutes on each side, basting with the sauce, until the fish is cooked to taste. Tip: to bake, preheat oven to 400F. Marinate salmon in an ovenproof casserole dish and transfer directly to the oven. Bake for 15 minutes.
