This is a tasty and easy pasta dish I made using ingredients I had on hand.

¾ pound salmon fillet
2 tablespoons prepared pesto
2 cups dried whole wheat rigatoni pasta
1 tablespoon olive oil
1 (14 ounce) bag fresh baby spinach
3 cloves garlic, chopped
3 small shallots, chopped
¼ teaspoon crushed red pepper flakes, or to taste
ground black pepper to taste
1 (14 ounce) can artichoke hearts, drained
½ cup white wine
2 tablespoons prepared pesto
½ cup shredded Parmesan cheese

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • Coat salmon fillet with 2 tablespoons pesto. Place in a 9x13 inch baking dish.
  • Bake in the preheated oven until fish flakes easily with a fork, 15 to 20 minutes.
  • Remove from oven and flake salmon into chunks; set salmon aside.
  • Fill a large pot with lightly salted water and bring to a rolling boil. Stir in rigatoni, and return to a boil. Cook uncovered, stirring occasionally, until rigatoni has cooked through, but is still firm to the bite, about 11 minutes. Drain in a colander.
  • Heat olive oil in a skillet over medium-low heat.
  • Cook and stir spinach in oil until wilted, 3 to 4 minutes. Remove spinach and set aside.
  • Cook and stir garlic, shallots, red pepper flakes, and black pepper in the same skillet until garlic and shallots are lightly browned, about 5 minutes. Pour in extra oil if needed.
  • Stir in drained artichoke hearts and cook until heated, about 3 minutes.
  • Pour in white wine and simmer until slightly reduced, 5 to 10 minutes.
  • Combine 2 tablespoons pesto, cooked spinach, salmon, Parmesan cheese, and cooked pasta in the skillet and lightly toss until mixed, 1 to 2 minutes.

1/2 lb fettuccine pasta (or use a double batch of Homemade Noodles for 2)
1/2 cup sweet onion, finely diced
1 garlic clove, minced
1 pinch red pepper flakes
1 (8 ounce) package cream cheese
1/2 cup parmesan cheese, grated
1/4 cup monterey jack cheese, grated
1/2 cup unsalted butter
1/4 cup milk
1/4 cup buttermilk
1/4 teaspoon dried basil
1/2 cup fresh spinach, torn
1 tomatoes, seeded and cut
1/2 cup smoked salmon, broken into little pieces

Steps:

  • Bring a large pot of lightly salted water to a boil.
  • Add pasta and cook for 10 to 15 min or until al dente; drain.
  • Meanwhile melt the butter in a large skillet and add onion, garlic, and red pepper flakes. Cook over medium heat until onions are translucent. Reduce heat to low and add in milks, cheeses, and basil and stir over low heat until smooth and creamy about 10 to 15 minutes. Add smoked salmon and spinach and toss until heated through. Add cooked pasta and tomatoes and toss to combine. Add a bit of starchy pasta water if needed to make the sauce a good consistency. Season with salt and pepper to taste.

2 cups heavy cream
4 tablespoons sweet butter
7 teaspoons salt
1 pinch of freshly grated nutmeg
1 lb fresh spinach pasta, narrower noodles preferred
1 tablespoon grated imported parmesan cheese
1 1/2-2 cups flaked poached salmon, all skin and bones removed
1/3 cup chopped fresh dill, plus additional dill sprigs for garnish

Steps:

  • Bring the cream and half of the butter to a simmer in a small saucepan.
  • Add 1 tsp.
  • of the salt, and the nutmeg, continue to simmer until cream is reduced by about one third.
  • Bring 4 quarts water to a boil in a large pot, add remaining 6 tsp.
  • of salt, and drop in the noodles.
  • Meanwhile, stir grated Parmesan, then the flaked salmon and 1/3 cup shopped dill into the cream, and remove from heat.
  • Remember, fresh pasta is ready in 2 to 3 minutes at the most.
  • Drain pasta, return it to the hot pan and toss with remaining butter until butter is melted.
  • Divide pasta equally among 6 heated plates and spoon salmon cream sauce over each portion.
  • Garnish with a sprig of fresh dill and serve at once.

8 ounces dry pasta (I used shells)
12 ounces skinless salmon
1 lemon
salt and pepper
1 teaspoon grated lemon zest
1 tablespoon olive oil
1 teaspoon lemon juice
1/2 cup heavy cream
1/4 cup pine nuts
2 garlic cloves
1/2 lb Baby Spinach (about 10 cups)
1/3 cup olive oil
1 cup freshly grated parmesan cheese
kosher salt and black pepper
1 tablespoon grated lemon zest
1 cup heavy cream

Steps:

  • Prepare the pasta - Bring a large pot of water to a boil. When water is boiling, add 1 tablespoon salt and dry pasta; stir to separate pasta. Cook pasta until al dente and drain; set aside.
  • Prepare the salmon - Adjust oven rack to upper-middle position and heat broiler. Line a baking sheet or pan with aluminum foil. Zest the lemon and set aside. Cut half of the lemon into thin slices and place on the lined baking sheet. Reserve the other lemon half to use later.
  • Season one side of the salmon liberally with salt and pepper, sprinkle with lemon zest, then rub with olive oil. Place the salmon on top of the lemon slices on the baking sheet. Broil until salmon is no longer translucent and is firm when pressed, about 10 minutes. Remove from broiler and sprinkle with lemon juice using the remaining half of lemon. Use a fork to flake the salmon into bite-sized pieces. The salmon skin will stick to foil and can be discarded.
  • Prepare the spinach pesto sauce - In a food processor, pulse the walnuts and garlic until chopped. Add two-thirds of the spinach (the remainder will be used later), oil, half (1/2 cup) of the Parmesan, and ¼ teaspoon each salt and pepper. Puree until smooth, scraping down the sides of the processor bowl as necessary.
  • In a large saucepan over medium high heat, pour in the heavy cream and simmer until reduced to 1/2 cup. Once reduced, add the spinach pesto, the reserved spinach, remaining parmesan and stir. Cook until cheese melts through and spinach wilts down.
  • To assemble - Transfer the cooked pasta to a large serving dish. Top with the spinach pesto sauce and salmon, and toss to combine. Serve with freshly grated parmesan.

2 Tbs. chopped fresh chives
2 Tbs. chopped fresh dill
¼ cup lemon juice, from about 2 lemons
1 cup heavy cream
½ tsp. salt
⅛ tsp. black pepper

Steps:

  • Cook the fusilli in boiling, salted water until just done, about 13 minutes. Drain, rinse with cold water and drain thoroughly. In a large bowl, toss the pasta with the oil. Add the smoked salmon, spinach, onion, parsley, chives and dill. Whisk the lemon juice with the heavy cream, salt and pepper. Pour over the salad and toss.

1/4 cup butter
2 tablespoons flour (I used brown rice flour)
2 cups milk
1 cup parmesan cheese, freshly grated
1 cup monterey jack cheese, sliced
2 (7 ounce) cans salmon (or a pound of cooked salmon)
2 cups fresh spinach, julienned
1/2 cup sun-dried tomato
1/2 cup fresh oregano, chopped

Steps:

  • Bring a large pot of salted water to a boil.
  • Add pasta and cook for 11 to 13 minutes or until al dente; drain.
  • In a medium saucepan over medium heat, melt the butter add the flour and whisk constantly until it bubbles and is smooth.

8 oz salmon fillet
5 oz fresh spinach (half a bag)
1 cup heavy cream
Small handful of parsley
3 tablespoons of butter
1/2 pound of pasta (half a box)
Zest of one lemon
Salt and Pepper to taste

Steps:

  • First things first, fill a large pot with water, salt it, and turn it on high for the pasta. This recipe doesn't take that much time, so having the water ready will avoid aimless standing in the kitchen. Melt some butter in a pan over medium-high. Once the butter has completely melted, foams, and just begins to take on a brown shade, take the fish and place it in the pan flesh side down. Since the salmon is going to be broken up into the pasta, there's no need to splurge for salmon steaks, which run you around twice the price. Sauté the fish for 3 to 4 minutes, or until the skin has nice coloring like in this beautiful picture. Cook for another 3 to 4 minutes until the middle has lost much of its redness. Don't worry too much, since the fish will be placed into the sauce later in the recipe and will finish cooking if need be. You're developing a nice crust in this stage. When ready, remove the fish and place it on a cutting board. Remove the zest from one lemon. This can be done in various ways, but we just use a microplane cheese grater. Vegetable peelers work, too--make sure to use only the yellow skin and not the bitter white layer beneath it. Finely chop a handful of parsley. Wash the spinach in a colander. Place a little more butter in the same pan as you cooked the fish, and throw in the spinach. It will seem like an absurd amount of spinach, but it will dramatically shrink in a few moments. Once it has condensed by half, throw in the lemon zest. Now is a good time to check the pot of boiling water, as the rest of the recipe will be done in 10 minutes. If ready, throw in the pasta. Once the spinach looks wilted, pour the heavy cream into the pan and let it reduce for a few minutes, depending on how far along your pasta is. Meanwhile, remove the skin from the back of the fish. It is surprisingly easy to remove once it has been cooked. You can use a fork or a knife, but it is honestly much easier to peel back with your fingers. Get all of it completely off. Flake the fish with two forks. While the meat is tender and can easily be forced apart, try to feel with the forks for the parts that will separate naturally. This will make the chunks stay together better in the pasta. Place the salmon back into the pan, then toss in a whole handful of finely chopped parsley. Drain the cooked pasta, and dump it into the pan. Toss it with a pair of tongs and serve right away.
