SALMON WITH YOGURT-CURRY SAUCE

With its rich flesh, salmon is so strongly flavored that you can pair it with just about anything. Here I cook it with a yogurt sauce that contains just chopped cucumber and spices. If you use farmed salmon and a nonstick skillet, you won't even need to add any fat. That's because farmed salmon is so high in fat (fattier than wild salmon, and it's the beneficial omega-3 type, too) that it's difficult to overcook. This is not to say you can put it on the stove and walk away, but that precision is a goal rather than a necessity. Even if you like your fish cooked through, the result will be a piece of meat that still has a fair amount of moisture in it.

1 1/2 cups plain yogurt
1 small cucumber, peeled
Salt and pepper
10 cardamom pods, remove seeds and discard hulls
1 3-inch cinnamon stick
1 teaspoon cloves
1/2 teaspoon nutmeg pieces (smack a whole nutmeg with a hammer)
1 tablespoon cumin seeds
1 tablespoon fennel seeds
1 tablespoon black peppercorns
2 tablespoons neutral oil, like corn or grapeseed, if necessary
4 6-ounce salmon fillets
Lime wedges

Steps:

  • If yogurt is very thin, put it in a cheesecloth-lined strainer over a bowl. Cut cucumber in half lengthwise and scoop out seeds. Chop flesh, sprinkle it with salt and put in a strainer over a bowl.
  • If making spice mix (see note), combine all spices in a skillet and toast over medium heat until fragrant, about 2 minutes. Grind to a coarse powder in a spice mill.
  • Put a skillet over medium heat; if it is other than nonstick, add oil. Season fish with salt and pepper and add it to pan; raise heat to medium high. Combine cucumber with yogurt and one tablespoon of spice mix in a bowl; taste and adjust seasoning.
  • After salmon has cooked for 4 minutes, turn it and cook on other side another 2 to 5 minutes. Serve, browned side up, with sauce and lime on the side.

4 (6-8-oz.) skinless salmon fillets
2 tsp. kosher salt, divided
1 (14-oz.) can full-fat coconut milk
1/4 cup green curry paste
2 tsp. finely grated peeled ginger (from one 2" piece)
1 garlic clove, finely grated
1 head of bok choy (about 1 1/2 lb.)
2 Tbsp. fresh lime juice
4 scallions, thinly sliced
1/2 cup cilantro leaves with tender stems
1/4 cup roasted salted cashews
1 serrano chile, thinly sliced (optional)
Steamed rice (for serving; optional)

Steps:

  • Season salmon on all sides with 1 tsp. salt. Let sit until ready to use.
  • Cook coconut milk, curry paste, ginger, garlic, and remaining 1 tsp. salt in a large high-sided skillet over medium heat, stirring occasionally, until simmering, 5-6 minutes.
  • Meanwhile, cut bok choy stems into 1/2"-thick slices and leaves into 2" pieces. Rinse well and drain. Add to coconut milk mixture and stir to coat. Nestle salmon fillets into bok choy in an even layer. Cover pan and cook over medium-low heat until salmon is just cooked through and flesh is opaque, 6-8 minutes. Remove from heat and pour lime juice over salmon.
  • Scatter scallions, cilantro, cashews, and chile (if using) over salmon and bok choy. Serve with rice alongside (if using).

8 ounces light coconut milk (canned)
4 scallions (sliced, white part separated from green)
2 teaspoons garlic (minced)
2 teaspoons ginger (minced)
1/4 teaspoon salt
1/4 teaspoon pepper
4 (6 ounce) salmon fillets
1 lb asparagus (woody ends snapped off,spears cut in thirds)
1 cup carrot (sliced thin)

Steps:

  • Put coconut milk,white part of scallions, garlic,ginger, salt and pepper in a large skillet, Stir over medium heat until well blended, just a few minutes.
  • Cook asparagus and carrot spears in microwave on high for about 2-3 minutes.
  • Place pieces of salmon in a single layer on top of coconut milk mixture and scatter cooked asparagus pieces and carrots over and around salmon.
  • Bring to a gentle simmer, cover and cook 10-15 minutes or until salmon is cooked through and asparagus is crisp tender.
  • Using a broad spatula, transfer salmon to individual serving plates, spoon on sauce and vegetables, sprinkle with green part of scallions.
  • Serve immediately with lime wedges to squeeze on fish.

4 ounces fresh pork fat
1 pound salmon, preferably wild
1 teaspoon sesame oil
1 teaspoon finely minced ginger
1 tablespoon finely minced scallion
1 teaspoon fish sauce
1/4 cup chopped fresh cilantro leaves
1 tablespoon peanut oil
1 teaspoon kosher salt
1/4 teaspoon sugar
1/2 egg white, beaten
1 teaspoon cornstarch
1 1/2 tablespoons chicken stock
1/2 teaspoon black pepper
30 to 40 fresh wonton skins
Coconut Curry Sauce, recipe follows
2 tablespoons fresh Yellow Curry Paste
One 14-ounce can unsweetened coconut milk, preferably Chaokoh brand
1/2 cup chicken stock
1 tablespoon fish sauce
Juice 1 lime
1/4 cup lightly chopped cilantro leaves

Steps:

  • Simmer the pork fat in water to cover for 15 minutes. Drain, allow to cool, and chop finely.
  • Cut the salmon into a small dice. Put all the ingredients, except the wonton skins, into a mixing bowl and stir in one direction until mixed.
  • Spread a wonton skin in front of you. Put 1 teaspoon of the filling in the center of the skin. Dampen the edges of the skin with water and fold in half, pressing the edges to seal. Then, with the folded edge facing you, pull the bottom corners directly down, fold them over one another slightly, and pinch to seal. The resulting dumpling should look like a nurse's cap. Repeat until filling has been used.
  • Bring a large quantity of water to a boil. When rapidly boiling, add the wontons (not so much that the water will stop boiling, about half), and cook for 3 to 4 minutes or until opaque. Remove, drain, and serve over or with the Coconut Curry Sauce.
  • Heat a saucepan and add the curry paste. Saute very briefly. Add the coconut milk and chicken stock, and simmer until the sauce reduces by one-third. Set aside.
  • While boiling the dumplings, reheat the coconut milk mixture; add the fish sauce and lime juice and, when the dumplings are done, drizzle the sauce generously over a serving plate. Sprinkle with the fresh cilantro. Arrange the dumplings over the sauce and serve.

2 -4 teaspoons canola oil or 2 -4 teaspoons olive oil
1 (16 ounce) can salmon, reserve liquid
1 cup instant mashed potatoes
1/4 cup onion, grated or diced
2 teaspoons lemon juice
1/4 teaspoon ground black pepper
2 large eggs
2 tablespoons butter
2 tablespoons all-purpose flour
1/2 teaspoon dried dill weed
1/2 teaspoon seasoning salt
3/4 cup milk (skim, 2% or whole)
1 (8 ounce) package frozen green peas

Steps:

  • PATTIES: Drain liquid from salmon and reserve for sauce.
  • Remove bones and skin, and flake salmon.
  • Mix all patty ingredients together.
  • Form into 4 patties.
  • Dip both sides in flour.
  • In frying pan, heat oil and fry patties over medium heat until lightly browned on both sides- about 10 minutes.
  • SAUCE: While patties are cooking, place peas in colander and rinse with hot water to defrost.
  • Drain In saucepan or skillet, melt butter; with whisk, stir in flour.
  • Gradually whisk in 1/4 cup reserved salmon liquid and milk, whisking to form a creamy sauce.
  • Add dill, salt and pepper, stirring constantly over medium heat until mixture gently boils and thickens.
  • Stir in the pea and cook 30 seconds to warm.
  • Do not cook peas.
  • Place patties on individual plates and spoon the sauce over.
  • ***Note: If you prefer, you can place the salmon mixture in 4 greased muffin cups and bake at 350 degrees for 25-30 minutes.
  • If using this method, omit the first two recipe ingredients (oil and flour).
  • VARIATION: You can substitute lightly steamed fresh asparagus for the peas.
  • If using asparagus, do not put in sauce.
  • Place asparagus over salmon patties and spoon sauce over both.

10 -15 saltine crackers
1 egg
2 tablespoons butter
2 tablespoons flour

  • Dump salmon into bowl. Pick out as many hard pieces of round bone as possible.(bone is edible i prefer them gone!) add egg, crackers. Mix well with hands. Heat up fry pan with oil. Fry patties about 10 minutes on each side. Meanwhile in small saucepan melt butter. Add flour to make a roux and slowly stir in milk and salt. Cook on low until thickened. Serve sauce over patties.
