- Place salmon, skin side down, on a broiler rack coated with cooking spray. Sprinkle with 1/8 teaspoon pepper. Broil 4-6 in. from the heat for 10-12 minutes or until fish flakes easily with a fork. Meanwhile, cook fettuccine according to package directions. , In a small saucepan, cook garlic in margarine for 1 minute or until tender. - Bring a large pot of lightly salted water to a boil.
- Add pasta and cook for 8 to 10 mis or until al dente; drain.

- Preheat oven to 400 degrees F (200 degrees C). Heat Alfredo sauce in a medium saucepan over medium heat.
- Place salmon in a baking dish. Mix the lemon juice and vinegar in a small bowl, and pour over the salmon. Season with basil and parsley.
- Bake salmon 15 minutes in the preheated oven, until easily flaked with a fork. Remove from heat, and break into bite sized pieces.
- Bring a large pot of lightly salted water to a boil. Add rotini, and cook 8 to 10 minutes or until al dente. Drain, and place in a large bowl.

- In a large saucepan add all ingredients (butter, garlic, stock cube, paprika, pepper, Sazon) and simmer until butter and stock cube are melted. (You will have to stir so that everything melts). In the meantime, in a larger pot, bring linguine to a boil. (cook about 15-20 minutes). Once mixture has melted, put salmon in and simmer until salmon is cooked on both sides. Add the shrimp and bring heat down to low, cover pan and let simmer for about 10 minutes (until pasta is done). Drain the pasta (you can reserve the pasta water,as you will have to fill the Alfredo jar with water). Add everything from the saucepan into the pasta. Empty the jar of Alfredo sauce and halfway up again with water (you can use the pasta water, or put clean water-makes no difference). Bring to a boil and let simmer for about 5-10 minutes so all the ingredients come together. Serve with Garlic bread! DELICIOUS! *Depending on what consistency of the sauce you like, you can use two jars of Alfredo sauce, and fill one jar with water.

- Garlic Butter (steps 1 - 6):.
- Completely soften 1/2 cup of butter (1 stick).
- Melt butter and olive oil in a small saucepan.
- Sauté minced garlic approximately three minutes until just cooked.
- Combine garlic/butter mixture with the rest of the garlic butter ingredients.
- Refrigerate while salmon in prepared, so that butter is somewhat soft but still holds its shape.
- Fettuccine Sauce: (steps 7 - 10):.
- Melt butter in saucepan and add cream and egg yolk, well beaten.
- Heat, stirring until well thickened.
- Add Parmesan cheese, parsley, salt, and pepper.
- Main recipe: (steps 11 - 19):.
- Preheat oven to 350 degrees F.
- Bake salmon until done (allow approx 20 minutes). Alternatively, salmon may be grilled if you prefer.
- Boil penne pasta per package instructions or to desired doneness.
- Add washed spinach to the pasta during the last minute of cooking.
- Pour Alfredo sauce over drained pasta and spinach, toss to coat.
- Top pasta with diced tomatoes.
- Top each serving with a salmon fillet.
- Top each salmon fillet with a dollop of garlic butter.

- In a large stockpot, cook noodles as directed on package.
- While noodles are cooking, flake and drain salmon.
- Yes, this is necessary!
- I was new to canned salmon, and so I didn't believe the instructions, but I soon discovered that salmon truly does come in huge, icky lumps.
- When noodles are 2 to 4 minutes away from being done, add the broccoli to the water.
- This will probably stop the water from boiling, so those 2 to 4 minutes might end up closer to 8 to 10 minutes instead!
- This happened to me, but, amazingly, even with 8 extra minutes of cooking time the broccoli did not become mush.
- Drain pasta and broccoli, reserving about a cup of the cooking water.
- Return noodles and broccoli to pot.
- Add Alfredo and seasonings to taste (I recommend lots of black pepper and--even better--Trader Joe's Sun-Dried Tomato Seasoning Splash, which is sold, not surprisingly, at Trader Joe's-- about 8 teaspoons of it).
- If the sauce is too thick, and it likely will be, dribble in the reserved cooking water slowly until the consistency is right.
- And you're done.
- Woo hoo.
- You just opened some cans, and a jar, and a box, and a package, and now you have yummy pasta.
- Enjoy.

QUICK SALMON & SPINACH ALFREDO

- Salmon: Heat broiler for salmon. Place salmon on a baking sheet with your choice of grilling spray or Extra virgin olive oil to ensure salmon doesn't stick. Place on the baking sheet and sprinkle tops with salt, pepper, thyme and lemon juice squeezed from the lemon. Broil for 5-6 minutes until salmon is light pink on the outside. Penne Rigate: In a pot bring to a boil water, salt (to taste), and extra virgin olive oil. Once at a boil add penne rigate and cook until just done (al dente, it should still have a bite to it and not be mushy or over cooked.)Strain and place to the side. Alfredo Sauce: In a frying pan place 1 cup of alfredo sauce of choice, 2 cloves of minced garlic and spinach on medium-low heat. Heat until warm and ready to serve. Turn heat off and add the penne rigate to the sauce and stir until everything is coated, place in a bowl or plate of your choice and then add the piece of salmon atop the penne rigate, sprinkle with Parmesan cheese. Serve and enjoy.
BALSAMIC GLAZED SALMON WITH ALFREDO PASTA PRIMAVERA

- Preheat the oven to 400° F (200° C). Line a baking sheet with foil and grease the foil lightly with oil. Place the fish, skin-side-down, on the prepared baking sheet. Whisk together the vinegar, honey, basil, olive oil, garlic and Dijon mustard. Brush half of the mixture over the salmon. Bake the fish, on the middle rack, basting with the remaining glaze, for 10 minutes. Broil for 1 to 2 minutes or until salmon is browned and flakes easily when tested with a fork. Serve with the prepared Alfredo Pasta Primavera.
SMOKED SALMON FETTUCCINE WITH HEALTHY DILL ALFREDO SAUCE
"Healthy alfredo sauce" is probably an oxymoron, but this is the way I always make a creamy sauce for pasta. It's obviously not an authentic alfredo, but we like it. I created this dish to use up some smoked salmon, and we totally enjoyed it. While I think you can adjust most of the ingredients here to your taste, I wouldn't mess with the smoked salmon or the capers, since they really are the dominant flavors.

- Boil and prepare fettuccine as directed on package instructions; drain and set aside.
- (Before draining, reserve about 1/4 cup of pasta cooking water, which you can use later to thin the sauce or moisten the vegetables as you cook them, if necessary).
- Place cottage cheese, 1 Tbsp parmesan cheese,flour, black pepper, lemon juice, garlic, and dill weed in a food processor bowl and pulse until smooth; set aside.
- In a large nonstick pan or wok, heat oil over medium heat and saute green pepper and onion for about 3 minutes.
- Turn heat down to low or low-medium and allow the pan to cool enough that the next ingredients won't burn.

- Prepare tortellini per instructions for al dente. Set aside in large serving bowl. On stove top, heat olive oil on medium heat. While heating oil, coat salmon fillet with Mrs. Dash Seasoning, salt and pepper. Add salmon to fry pan, skin side down and fry for 3-5 min. Turn salmon over, adding more olive oil if necessary to prevent sticking. Fry until cooked through, about 3-5 more minutes. Remove from heat. Gently toss light alfredo sauce, peas and pinenuts with tortellinis. Remove salmon skin and flake/chunk salmon with a fork. Add chunks of salmon to tortellini dish and gently mix in. This dish can be served hot or chilled is delicious as well!
