PORK, APPLE AND SAGE MEATLOAF

Ground pork sweet apples and fresh sage are baked topped with ketchup.

2 cups (about 2) apples, cored, peeled and grated
2 pounds (907 grams) ground pork
3/4 cup (200 grams) yellow onion, finely chopped
1/2 teaspoon dried oregano
1/4 cup (small handful) fresh sage leaves, chopped
1 large egg, lightly beaten
2/3 cup (38 grams) breadcrumbs
1/2 cup (118 ml) milk
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 cup (235 grams) tomato ketchup
2 cups (472 ml) beef stock/broth
Cornstarch or flour

Steps:

  • Preheat oven to 400°F/200°C.
  • Wrap the grated apples in a clean towel and squeeze out as much moisture as you can. THIS IS AN IMPORTANT STEP SO YOU DON'T GET SOGGY MEATLOAF.
  • To a large bowl add the ground pork, apples, onion, oregano, sage, egg, breadcrumbs, milk, salt and pepper. Mix until everything is well combined.
  • Add the meat mix to a 9 x 13. inch (23 x 33 cm) casserole dish and mold into a meatloaf shape, 10 inches long and 5 inches wideT (25 x 13 cm). Top with ketchup and pour beef broth to the bottom of the pan.
  • Cover with foil and bake for 30 minutes. Remove the foil and contine to bake for 30 more minutes, or until a thermometer when inserted into the center reaches 165°F/74°F.
  • Remove from the oven and allow to rest for 10 minutes before slicing and serving.
  • To make the gravy using cornstarch, strain through a sieve and add to a saucepan. Mix a little cornstarch with water and stir into the gravy, simmer until thickened. Using flour, mix a little flour in a bowl with a little of the warm gravy, pour into the pan and whisk bringing to a simmer until thickened.

Wiltshire is known for it's pork production. In North America you will see "salisbury steak" on menus in restaurants and diners. It's actually a form of Salisbury Ground Pork Meatloaf but in America it's made with ground beef. I found this recipe while searching for recipes for ZWT.

1 lb ground pork
1 onion, small
1 green apple, medium
1/2 cup fine breadcrumbs
1/2 cup sage, fresh (or 1 tbsp ground)
1 tablespoon salt
1 tablespoon white pepper
2 eggs, well beaten

Steps:

  • Peel and core apple and cut as finely as possible. Peel and finely chop the onion (can use processor for both).
  • In a large bowl place ground pork, apple, onion, breadcrumbs, sage, salt and pepper.
  • Mix well.
  • Add beaten eggs. Hand mix all toghether and shape into loaf. Place in pan.
  • Bake for 1 1/2 hours at 350°F.
  • Carefully drain off any fat.
  • Serve in thick slices with mustard/cheese sauce.

1 lb ground pork
1 large egg, beaten
1 small onion, minced
1 small tart apple, peeled, cored and finely chopped
2 cups soft breadcrumbs
salt and pepper
1 cup applesauce
1/8 teaspoon nutmeg
2 tablespoons apple cider vinegar
1 tablespoon Dijon mustard
2 tablespoons brown sugar

Steps:

  • Preheat oven to 350 degrees.
  • In a large bowl, combine beef, pork, beaten egg, minced onion, finely chopped apple, bread crumbs, salt and pepper. Blend together well w/ clean hands.
  • Shape mixture into loaf and place in a baking dish.
  • Mix together all the apple glaze ingredients in a seperate bowl and set aside.
  • Bake meatloaf 350 degrees for 45 minutes. After 30 minutes, evenly pour the apple glaze over top of the meatloaf.
  • Return to 350 degree oven and continue to cook for about another 45 minutes -- basting with your glaze every 15 minutes, or until done and no longer pink.

2 lbs ground lean pork
1 medium granny smith apple
2 medium red onions
6 tablespoons plain breadcrumbs
1 bunch fresh sage
salt and pepper
2 tablespoons margarine
1 bunch fresh sage
8 hamburger buns

Steps:

  • Put the pork into a large bowl - it is easier to work with if it is not too cold from the fridge. Grate the apple and the onion together (this can be done in the food processor). Add to the pork in the bowl. Add the bread crumbs to the mixture and work together with clean hands until everything is well blended.
  • Finely chop the sage and add to the mixture with a pinch of salt and a grind of pepper, and continue working until completely mixed.
  • Divide the mixture into eight equal portions and form into patties. Refrigerate until ready to use, or wrap each tightly and freeze for up to 3 months.
  • Lightly salt and pepper the patties.
  • Put patties on the grill and 20 min or until cooked thoroughly.
  • Cut up second onion, and caramelize them in vegetable oil.
  • While the burgers are cooking, put butter in a small pan. Put it on medium heat until it starts to bubble. Turn down to low heat, chop the sage and put it in the butter. Cook for 5 minute Dip buns in the browned butter and place on grill to toast.
  • Remove buns and burgers and put it all together and top with caramelized onions.

2/3 cup milk
1 tablespoon Worcestershire sauce
1 cup crushed saltines
1/4 cup finely chopped onion
1 teaspoon salt

1/4 cup ketchup
3 tablespoons brown sugar
1 teaspoon ground mustard

8 ounces day-old white bread, in cubes
water or milk, for soaking
2 lbs ground lean pork
1 medium onion, chopped
1 teaspoon fresh sage, chopped
salt and pepper

Steps:

  • Soak cubed bread in enough water or milk to cover.
  • When soft, squeeze out excess moisture.
  • Mix the bread, pork, onion, sage, salt, and pepper.
  • Mince mixture in a food processor.
  • Lightly grease a loaf tin.
  • Place mixture in tin, pressing down firmly and evenly.
  • In a preheated 375F oven, bake 1 1/2- 2 hours.
  • If top browns too quickly, slip aluminum foil over the tin.
