2 lbs boneless skinless chicken breasts, cut into 1 inch cubes
3 medium onions, quartered
2 carrots, cut into 1 inch cubes
2 potatoes, cut into 1 inch cubes
2 (14 ounce) cans fat-free chicken broth
1 teaspoon celery seed
1 teaspoon dried thyme leaves
1/2 teaspoon black pepper
8 ounces mushrooms, halved
1 cup frozen corn
1 cup frozen peas

Steps:

  • Combine the first 5 ingredients in the crockery pot.
  • Stir in the next 5 ingredients.
  • Cover and cook on LOW until the chicken is done and the vegetables are tender, 7-9 hrs.
  • or on HIGH 4-6 hrs.
  • Stir in the peas and cook until they are done, 15 to 30 minutes.
  • (Note: Baby carrots make a quick and easy substitute for the 1" thick carrot slices).

I can't image the Autumn/Winter season without soup and stews on my weekly menu rotation. And on my list of the top-ten recipes, this one emerges pretty close to the...

PLAN/PURCHASE
2 medium chicken breasts, sautéed and roughly torn into pieces
5 c fresh chicken stock, not broth
3 Tbsp white wine, dry variety
1 tsp lemon juice, freshly squeezed
2 Tbsp sweet butter, unsalted
1/4 c heavy or whipping cream
2 medium carrots, 1/2-inch slices, cut on the bias
1/2 medium yellow onion, thinly sliced
2 stalk(s) celery, 1/2-inch slices, cut on the bias
2 Tbsp flour, all purpose variety
1/3 c filtered water
salt, kosher variety, to taste
black pepper, freshly ground, to taste

Steps:

  • 1. PREP/PREPARE
  • 2. Gather your ingredients.
  • 3. Melt the butter in a saucepan, over medium heat.
  • 4. When the foaming subsides, add the wine, lemon juice and 1/2 cup of chicken stock.
  • 5. Chef's Note: This is a standard base for many hearty soups and stews. If you don't want to use the white wine, you can always substitute an equal amount of white grape juice.
  • 6. Bring to a simmer, and allow the liquid to slowly reduce by half, about 10 to 12 minutes.
  • 7. Mix in the cream.
  • 8. Add the remainder of the chicken stock.
  • 9. Chef's Note: If you are using store-bought chicken stock, or (heaven forbid) broth. Then, when you season the soup watch the salt.
  • 10. Add the flour and water to a small bowl, and whisk together.
  • 11. Add to the pot, and simmer until it begins to thicken, about 3 to 5 minutes.
  • 12. Add the carrots, and continue to simmer for 10 - 12 minutes.
  • 13. Add the onions, celery, , and then bring the pot back up to a simmer.
  • 14. Continue to simmer for 10 to 12 minutes.
  • 15. Add the chicken, and then let it warm up with the soup, about 5 minutes.
  • 16. Chef's Note: Although I am a big fan of brining chicken breasts, for this recipe, don't. It isn't necessary, and it will add unwanted additional salt.
  • 17. Chef's Tip: If you want to add an additional level of flavor to this dish, then salt & pepper the chicken breasts, and sauté them in a bit of olive oil and sweet butter. When they are cooked, tear them into rustic pieces, and pour the liquid from the sauté pan into the pot, when you add the chicken stock in step 8.
  • 18. VARIATIONS ON A THEME

  • 20. Pasta: Get you favorite egg noodles and stir into the soup. Follow package directions as to how long the noodles need to cook. If you are using homemade egg noodles (YUM) they will only need about 3 to 5 minutes in the liquid before they are cooked.   • 21. Chef's Note: If you don't want to make your own dumplings, or pasta, no worries. Just pick up your favorite brand at the local grocer. However, if you take the time to make homemade (it really isn't that difficult), you will be glad that you did.

A rich and hearty stew that will warm you up on the cold days. It is easy to put together with ingredients that you usually have on hand. If you prefer to have your veggies cut a little smaller, that works too - just watch that they do not overcook. The nice thing about this recipe is that you can do most of the prep as the stew is cooking. The chicken thighs and mushrooms add a great meaty texture. Try this with some crusty bread.

5 cups chicken broth
2 dried bay leaves
1 1/2 lbs chicken thighs, boneless skinless
1 1/2 cups carrots, large dice
2 cups russet potatoes, unpeeled, cut into 1 cubes (peel them if you prefer)
2 tablespoons butter
1 1/2 cups onions, coarsely chopped
1 cup celery, coarsely chopped
1 1/2 cups button mushrooms (halved or quartered)
1/2 teaspoon dried thyme
2 teaspoons dried parsley (2 tablespoons fresh chopped)
1/4 cup flour
1/4 cup milk (or 1/4 cup cream)
1 cup frozen cut green beans, thawed
salt and pepper

Steps:

  • In a large saucepan, bring broth to a low simmer and add bay leaves and chicken thighs. Simmer for 20 minutes. Remove chicken with a slotted spoon and coarsely chop when cool enough to handle. While chicken is cooling, add carrots and potatoes to broth. Add chicken when chopped.
  • Meanwhile, melt butter over medium heat in a non-stick frying pan. Add onion, celery and mushrooms and sauté until soft, about 5-7 minutes, stirring occasionally. Stir in thyme, parsley, and flour. Stir until flour is absorbed and add mixture to broth.
  • Simmer stew for 15 to 20 minutes or until your potatoes and carrots are almost cooked to your preference. Add beans and milk or cream and let heat for 5 minutes. Add salt and pepper to taste. Remove bay leaves and serve!

1/2 c water
1 Tbsp seasoned salt
2 tsp parsley flakes
1/2 tsp ground black pepper
1 1/2 lb red skinned potatoes, halved
3 Tbsp cornstarch
1/2 c milk

Steps:

  • 1. Place chicken, seasonings, and all vegetables into slow cooker. Cook on low 6 hours.
  • 2. Whisk corn starch into milk, stir into slow cooker and cook 15 additional minutes on high.
  • 3. To freeze this recipe for later use: Place chicken, seasonings, carrots, and onions into gallon-sized freezer bag. Thaw overnight in refrigerator. Dump bag into slow cooker, add potatoes. Cook on low 6 hours. Continue from step 2.

1 medium onion, chopped
4 clove garlic,minced
1 c carrot, finely chopped
1 Tbsp oil
2 c fresh or frozen corn kernels
3 1/2 c chicken broth or stock
1 1/2 c shredded rotisserie chicken or seasoned cooked chicken breast
salt and fresly ground black pepper to taste
1 c diced tomatoes (canned or fresh)
2 c parmesan cheese, freshly grated
1/2 c cilantro, chopped
lime wedges
chopped green onions

Steps:

  • 1. Chop onions and mince garlic. In a dutch oven, heat oil over medium-high heat and saute onions until tender. Add garlic and stir 30 seconds to 1 minute. Add carrots and cook 3-5 minutes.
  • 2. Add corn and cook 3-5 minutes or until vegetables are slightly browned and corn turns a golden color. Add tomatoes and chicken stock and mix thoroughly. Add shredded rotisserie chicken and heat through. Add salt and pepper to taste.
  • 3. Serve in bowls - add parmesan cheese, cilantro and green onions to the top. Squeeze a little lime juice if desired.

1 T. Lawry's Seasoned Salt
2 t parsley flakes
1/2 t ground black pepper
ITEMS THAT DO NOT GET FROZEN:
1.5 lbs red skinned potatoes, halved
3 T cornstarch
1/2 cup milk

Steps:

  • Place chicken, seasonings & all vegetables into slow cooker. Cook on low 6 hours.
  • Whisk cornstarch into milk, stir into slow cooker and cook 15 additional minutes on high.

1 can black beans, drained
1 carrot, chopped
1 zucchini, sliced or chopped
1 yellow squash, sliced or chopped
32oz clamato
water (to cover)
tabasco
oregano
Lawry's seasoned salt
red pepper flakes

Steps:

  • Place chicken in Clamato and cook for 10 minutes in large pot. Add all vegetables and seasonings except squash Cook 30 minutes Add squash and cook 10 minutes more until vegetables are firm tender and chicken can be pulled.
