SPICY SMOKED RIBS WITH PINEAPPLE RUM GLAZE



Spicy Smoked Ribs With Pineapple Rum Glaze image

Just loaded with wonderful flavor, even without using the dipping sauce, that really compliments the pork. These ribs are a real departure from the usual approach! In fact, this is our preferred way to have ribs most of the time now. I've adapted this recipe from the "License to Grill" show to the '3-2-1 method' of cooking ribs that I always use now. You can easily re-adapt this to your way of cooking ribs if you want, but the 3-2-1 method does yield great results every time. Don't let the list of ingredients and instructions intimidate you, it's really not that difficult or labor intensive to make. If you happen to have a pineapple on hand, you could add some rind from it along with the wood chips for an extra complimentary layer of flavor in the smoke.

3 racks of baby-back pork ribs, membrane removed
3 cups cherry wood chips
4 cups apple wood chips
1/2 cup pineapple juice
1/2 cup brown sugar
1 tablespoon salt
2 tablespoons ground coriander
1 tablespoon black pepper
1 tablespoon garlic powder
1 tablespoon onion powder
2 teaspoons dried thyme
1 tablespoon ground allspice
1 tablespoon ground cinnamon
1 tablespoon chili powder
2 cups pineapple juice
2 tablespoons apple cider vinegar
1/8 cup butter
1 teaspoon ground black pepper
1 tablespoon onion powder
1 tablespoon garlic powder
3/4 cup jamaican rum
2 cups pineapple juice
2 tablespoons hot sauce
3 tablespoons fresh cilantro, chopped
1 tablespoon ginger, minced
1/2 cup ketchup
4 tablespoons cider vinegar
2 tablespoons Worcestershire sauce
4 tablespoons brown sugar
1 tablespoon soya sauce
1 tablespoon ground black pepper

Steps:

  • Remove the membrane from the back of the ribs. This is easy to do by using a paper towel to get a good grip on the membrane at one end of rack with your fingers, and then simply peel it off. It seems to go easier by starting at the more narrow end.
  • Combine all the dry rub ingredients in a bowl and mix, then rub generously all over the ribs. Place the ribs in large ziplock bag and place in the fridge for 4 hours to marinate.
  • Place the wood chips in water to soak for an hour. If using a gas grill, only soak half of the chips, otherwise soak all of them for use on a charcoal grill.
  • Prepare the barbecue for indirect grilling by preheating to 225-240°F with only the burner on one side on and the grate above it removed.
  • For a gas grill you will make two smoke pouches. Divide the soaked wood chips onto two separate sheets of aluminum foil at one end of each one after squeezing out the excess water from the chips. Divide the dry chips and add them to each pile. Mix the dry and wet chips up a bit and fold over the other end of the foil to meet the end the chips are near, crimp along the edges to seal all around and poke holes into both sides with a fork. Repeat to create the other pouch. Place one of the smoke pouches directly over the hot burner. Close the lid and wait for smoke to start.
  • For a charcoal gill, simply squeeze out the excess water and add half of them directly onto the coals after they have turned ash white.
  • When the smoke starts to billow, place the ribs on the "cool" side of the grill and then close the lid. Cook for 3 hours. Replace the smoke pouch (or add the rest of the wood chips onto the fire bed for a charcoal grill) after it stops smoking, about an hour.
  • After the ribs have cooked for 1 hour, spray both sides with the pineapple juice in a spray bottle. Spray them again after two hours have passed, then a third time after 3 hours.
  • After they've cooked for 3 hours and the third spraying of pineapple juice has had some time to set in a bit, completely wrap up the ribs tightly in foil wrap and return them to the grill and close the lid to continue cooking this way for 2 hours. This is where the real cooking takes place.
  • In the meantime, combine the pineapple rum glaze ingredients in a sauce pan and bring to a boil. Reduce the heat and simmer until sauce has reduced to about half and has thickened, then set aside.
  • In another pot, start the rib sauce by bringing the pineapple juice, hot sauce and cilantro to a boil, and then reduce to medium heat. Add the remaining sauce ingredients and cook for 13 minutes. Reduce to low and simmer for 10 minutes, or until slightly thickened and then set aside.
  • After the ribs have cooked for 2 hours wrapped in foil, remove them from the foil wrap and return them carefully to the grill. At this point, the ribs are extremely tender and can easily fall apart, so you may want to slid them onto the grill from the foil, rather than lift them on.
  • Continue to cook for 1 hour, hence the term '3-2-1' (hours). Baste the ribs frequently with the rum glaze during this last hour.
  • Remove the ribs from the grill (they will have firmed up after this last hour of cooking in the open again, and will be much easier to handle) and let them rest for 10 minutes. Serve with the rib dipping sauce.

1 cup packed brown sugar
1/2 cup chili sauce
1/4 cup ketchup
1/2 cup dark rum
1/4 cup soy sauce

2 garlic cloves, crushed
1/8 teaspoon fresh ground black pepper

Steps:

  • Cut ribs into individual pieces. Line a roasting pan with a double thickness of foil. Place ribs in pan and seal tightly in foil.
  • Bake at 350°F (180°C) for 45 minutes. Unwrap ribs and pour off drippings.
  • Combine remaining ingredients; pour half the sauce over ribs. Return to oven and bake for about 11/2 hours or until meat is tender, turning ribs occasionally and basting with remaining sauce.

2 cans (8 ounces each) tomato sauce
1 cup dark rum
1 cup honey

  • Place ribs in two ungreased 13-in. x 9-in. baking pans, bone side down. Reduce heat; simmer, uncovered, for 15-20 minutes or until slightly thickened., Drain ribs and discard cooking liquid. Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack. Brush half of the sauce over ribs. 3 -4 lbs ribs
2 cups cola
4 tablespoons soft dark brown sugar
4 tablespoons tomato ketchup
4 tablespoons cider vinegar
2 garlic cloves, peeled and crushed
1 teaspoon Worcestershire sauce
2 tablespoons rum
tomato ketchup, to serve

Steps:

  • Lay the ribs in a pan of cold water, place on the stovetop and bring to the boil. Reduce the heat and simmer the ribs for about 30 mins, or until they are tender.
  • Drain the ribs, rinse them under cold running water to cool quickly, then drain well and place in a bowl.
  • To make the marinade, put all the ingredients except the rum in a saucepan, place on a low heat and stir until the sugar has melted. Increase the heat and bring the sauce up to a simmer and cook until the volume has reduced by about half. Remove the pan from the heat, stir in the rum, and leave the sauce to cool.
  • Pour the cold sauce over the ribs and stir them to ensure they are well coated. Cover the bowl and leave to marinate overnight (or a couple of days) stirring the ribs a couple of times if possible.
  • Lift the ribs out of the marinade and cook them on a hot grill for 10-15 mins, turning them occasionally until they are heated through.
  • Any extra marinade can be brushed over the ribs during cooking.
  • Serve immediately with tomato ketchup as a dipping sauce.

It's been a tradition of men on the grill, but I've recently learned how to smoke and grill ribs and I love it!

2 racks back ribs, membrane removed
4 Tbsp olive oil, divided
2 Tbsp blackened seasoning
1/2 c onion, chopped fine
1 c water
1/2 c raisins
1/2 c molasses
1 1/4 c ketchup
1/3 c dark rum

Steps:

  • 1. Rub the ribs with 2 Tbs. olive oil, and then the blackened seasoning to coat well.
  • 2. For the sauce: (can be made ahead of time). Heat 2 Tbs. of the oil in a 3-qt. saucepan over med-low heat. Stir in the onion, water, raisins, molasses, ketchup and rum. Continue cooking for 25 minutes, reduce to simmer.
  • 3. Gas Grill Method: Oil the grid. Pre-heat grill for indirect cooking to medium heat. Place ribs meat side down on grid. Cook 15 minutes on each side. Remove, baste with sauce only(no raisins) and wrap tightly with foil. Place back on grill and cook for 45 more minutes. Remove foil, cook 10 minutes. Smoker Method: Smoke over hickory at 250 degrees for two hours. Prepare sauce. At the 2-hour mark, remove ribs, baste with sauce only (no raisins) and wrap tightly in foil. Place back on heat and continue to cook for one hour. Remove foil, cook for 30 minutes.
  • 4. Drizzle remaining raisin sauce over before serving. Makes two racks.

1/2 cup brown sugar
1/8 cup ketchup
1/8 cup Worcestershire sauce
1/8 cup rum (I use Bacardi Gold)
1/8 cup chili sauce
1 clove garlic
1/2 teaspoon mustard powder
1/2 teaspoon black pepper

Steps:

  • Mix all ingredients together in a sauce pan and warm on stove.
  • Do not simmer or boil: warm only.
  • Place ribs on grill.
  • I use a drip pan under my ribs filled with water to keep the ribs moist.
  • Cook over medium flame for 1 1/2 hours.
  • Generously baste the ribs with the marinade and sit at room temperature for 1 hour.
  • Return to grill and cook for 30 minutes.
  • Oven cooking: Place ribs in a pan and foil the top.
  • Cook at 350 degrees for 1 1/2 hour.
  • Remove from oven.
  • Generously baste the ribs with the marinade and sit at room temperature for 1 hour.
  • Return to oven (no foil) and bake for 30 minutes.

Ingredients:
1 cup pineapple juice
2 tablespoons brown sugar
1 tablespoon sweet paprika
2 teaspoons coarse salt (kosher or sea)
1 teaspoon ground cinnamon
1 teaspoon fennel seed
1 teaspoon granulated onion or onion powder
1/2 teaspoon granulated garlic or garlic powder
1/2 teaspoon caraway seed
1/2 teaspoon ground ginger
1/2 teaspoon freshly ground black pepper
1/8 teaspoon ground cloves
2 racks baby back pork ribs (4 to 5 pounds total)
Ginger-Pineapple-Rum Barbecue Sauce (recipe follows)
Other Items Needed:
Spray bottle (optional); 1-1/2 cups wood chips or chunks (optional;
preferably pecan or hickory), soaked for 1 hour in water to
cover, then drained.

Steps:

  • Place the pineapple juice in a spray bottle or in a bowl and set it aside.
  • Place the brown sugar, paprika, salt, cinnamon, fennel seed, granulated onion and garlic, caraway seed, ginger, pepper, and cloves in a small bowl and mix with your fingers, breaking up any lumps in the brown sugar.
  • Prepare the ribs: Place a rack of ribs meat side down on a baking sheet. Remove the thin, papery membrane from the back of the rack by inserting a slender implement, such as a butter knife or the tip of a meat thermometer, under it. The best place to start is on one of the middle bones. Using a dishcloth, paper towel, or pliers to gain a secure grip, peel off the membrane. Repeat with the remaining rack.
  • Sprinkle the rub over both sides of the ribs, rubbing it onto the meat. Cover the ribs with plastic wrap and refrigerate them while you set up the grill.
  • Thread the ribs onto the rotisserie spit: Place a rack of ribs bone side up on a work surface. Using a sharp, slender knife, make starter holes in the center of the meat between every 4th or 5th rib. Twist the knife blade to widen the holes; this will make it easier to insert the spit. Repeat with the remaining rack of ribs. Use an over and under weaving motion to thread the spit through the holes in the racks of ribs.
  • Set up the grill for spit roasting following the manufacturers instructions and preheat to high. Place a large drip pan in the center of the grill directly under the spit.
  • When ready to cook, attach the spit to the rotisserie mechanism, turn on the motor, and cover the grill. After 20 minutes, spray the ribs with the pineapple juice. Cook the ribs until they are golden brown and cooked through, 30 to 45 minutes, spraying with pineapple juice every 10 minutes.
  • When the ribs are done, the meat will have shrunk back from the ends of the bones by about 1/4 inch.
  • Just before you are ready to remove the ribs from the spit, brush them on both sides with the Ginger-Pineapple-Rum Barbecue Sauce. Let them continue to turn on the spit until the sauce is sizzling, about 2 to 3 minutes.
  • Transfer the spit with the ribs to a cutting board. Carefully remove the skewer, then let the ribs rest for a few minutes. Serve the racks, whole or cut into individual ribs, with the remaining Ginger-Pineapple-Rum Barbecue Sauce.
  • Ginger-Pineapple-Rum Barbecue Sauce

  • cups diced ripe pineapple
  • cup ginger marmalade
  • tablespoons kejap manis (sweet soy sauce) or Thai chile sauce, or
  • more to taste
  • cup dark rum
  • Coarse salt (kosher or sea) and freshly ground black pepper
  • Directions:
  • Puree the pineapple in a food processor or blender. Pour it into a heavy nonreactive saucepan and bring to a boil over medium heat. Add the ginger marmalade and kejap manis. Let simmer until the marmalade melts, whisking to blend.
  • Increase the heat to high and whisk in the rum. Let the sauce boil until thick and richly flavored, 3 to 5 minutes. Taste the sauce for seasoning, adding more kejap manis as necessary and salt and pepper to taste (you may not need much salt on account of the soy sauce). Let the sauce cool to room temperature before serving. It can be refrigerated, covered, for several weeks. Let the sauce return to room temperature before using.

1/2 cup Heinz Chili Sauce
1/2 cup Heinz ketchup
1/2 cup canned crushed pineapple in juice
1/4 cup HP steak sauce
1/4 cup brown sugar
1/4 cup green onion, finely chopped
1/4 cup dark rum
1 teaspoon lime zest
1 teaspoon minced ginger
1 pinch ground allspice
4 lbs pork back ribs, parboiled

Steps:

  • To parbboil ribs, cut each rack into 2-bone portions. Place in a large pot with 1 sliced lime and equal part of each water and chicken broth to cover ribs. Bring to a boil; reduce heat and simmer, cover for 45 minutes. Discard lime slices. Cool ribs in cooking broth for 1 hour. Drain well. Grill as directed or wrap tightly and reserve for up to 24 hours in the refrigerator.
  • Stir Heinz Chili sauce with Heinz Tomato Ketchup, pineapple, HP sauce, and brown sugar. Bring to a boil in a saucepan set over medium heat. Cook, stirring, for 5 minutes. Remove from heat; stir in the green onion, rum, lime zest, ginger and allspice until well combined. Cool slightly.
  • Preheat grill to medium-high. Toss ribs with half of the sauce mixture; grill, turning and basting often with remaining sauce, for 10-15 minutes, or until glossy and well marked.

This recipe was so different we had to try it - Turned out so great we want to share it! Sweet with a Kick - or was it a Kick with a little sweet? Either way it was delish! NOTE: You will need 6 to 8 chunks of cherrywood, applewood, or hickory wood. NOTE:Be sure to set aside 2 1/2 teaspoons of the rub mixture to be used in the mop sauce and the Caribbean Rum Sauce. NOTE: I could not find "mango nectar" - so I used a can of Sliced Mangos in Mango Juice and smashed the mango slices to make a chunky "juice" .

1 1/2 teaspoons dry mustard

1 tablespoon cider vinegar (and reserved rub)
1/2 cup onion, chopped (1 medium)
1 tablespoon vegetable oil
1 cup barbecue sauce
3/4 cup mango nectar
1/4 cup spiced rum (Captain Morgan)
2 tablespoons honey (and reserved rub)

Steps:

  • . Soak wood chunks for at least 1 hour before smoke-cooking. Drain before using.
  • For the rub, in a small bowl, combine salt,brown sugar, dry mustard, chili powder, garlic powder, thyme, all spice, cumin, crushed red pepper, and black pepper.
  • Set aside 2 1/2 tablespoons of the mixture.
  • Sprinkle the remaining mixture evenly over ribs; rub in with your fingers.
  • Cover and let stand at room temperature of 15 minutes.
  • For mop sauce, in a small bowl, combine nectar, vinegar, and 1 1/2 teaspoons of the reserved rub.
  • Set aside the remaining 2 tablespoons rub for the Caribbean Sauce.
  • Prepare the smoker. Add four to six of the drained wood chunks to smoker. (Add one or two additinal chunks when only a wisp of smoke comes through top vent.).
  • Place ribs on top and middle racks of smoker.
  • Cover and smoke at 225 to 250 degrees F for 3 1/2 hours, brushing with mop sauce after 2 to 3 hours.
  • For Caribbean Rum Sauce cook 1/2 cup chopped onion in 1 tablespoon hot vegetable oil in medium saucepan over medium heat until tender. Stir in 1 cup bottled barbecue sauce, 3/4 cup mango nectar, 1/4 cup spiced rum, 2 tablespoons honey, and the reserved 2 tablespoons of tub. Bring to boiling; reduce heat. Simmer, uncovered, about 20 minutes or until sauce reaches desired consistency. Makes 2 cups.
  • Remove ribs from smoker. Brush again with mop sauce; lightly brush with Caribbean Sauce. Wrap each slab in foil and return to smoker.
  • Cover and smoke for 30 to 60 minutes more or until ribs are tender. (When you lift each rack with tongs, the meat should tear easily.).
  • Unwrap ribs and return to smoker. Cover and smoke 20 minutes more or until tops of ribs appear dry. Brush with additional sauce before serving.
