12 cups popped unsalted popcorn (from 1/2 cup kernels)
1/2 cup golden raisins
1 1/3 cups granulated sugar
3/4 cup water
5 tablespoons light corn syrup
1/4 teaspoon salt
1/2 teaspoon distilled white vinegar

Steps:

  • Combine popcorn and golden raisins in a large bowl.
  • Bring sugar, water, corn syrup, salt, and vinegar to a boil in a saucepan, stirring until sugar has dissolved. Clip a candy thermometer to side of pan, and continue to cook, without stirring, until mixture reaches 290 degrees, about 14 minutes.
  • Pour hot syrup over popcorn mixture, and stir until well coated. Working quickly, shape mixture into 2 1/2-inch balls, and transfer to parchment to cool.

  • Bring 1/4 cup light corn syrup, 2 tablespoons butter, 1 cup confectioners' sugar, 1 cup mini marshmallows and 1 tablespoon water to a boil in a large pot over medium heat, stirring. Add 1/2 teaspoon almond extract and a pinch of salt. Remove from the heat; using a rubber spatula, stir in 12 cups popcorn until coated. Butter your hands, then shape into balls and roll in toasted shredded coconut.

1 package (10 to 12 ounces) white baking chips
1/2 teaspoon rum extract
3 cups Rice Krispies
1 cup raisins

Steps:

  • Line 56 mini-muffin cups with paper liners. In a large bowl, combine butterscotch and white chips. Microwave, uncovered, on high for 30 seconds; stir. Microwave in additional 30-second intervals, stirring until smooth., Stir in extract, Rice Krispies and raisins. Drop by rounded tablespoonfuls into prepared mini-muffin cups. Chill until set. Freeze option: Freeze treats in freezer containers, separating layers with waxed paper. Thaw before serving.

No-Bake Rum-Raisin Balls image

All the rum balls I saw on this site use cookie or wafers crumbs as a base. This one come from New Zealand and has raisins and coconut. They need to be made a day in advance, though. This recipe comes from "The Joy of Cookies" by Sharon Tyler Herbst. Cook time is the 24 hours that they need to sit overnight and the 1 hour that the rum and oats rest.

1/3 cup dark rum
1/3 cup rolled oats
2 cups powdered sugar
3 tablespoons unsweetened cocoa powder
2/3 cup chopped toasted walnuts
2/3 cup golden raisin
2/3 cup shredded coconut
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon
1/3 cup butter, melted and cooled
3 tablespoons granulated sugar

Steps:

  • In a large bowl, combine rum and oats; cover and set aside 1 hour.
  • Add all remaining ingredients except granulated sugar; stir until well combined. Cover and refrigerate 1 hour.
  • Roll teaspoons of mixture into 1-inch balls. Place sugar in a small bowl. Roll balls in sugar, coating each generously.
  • Store 24 hours in an airtight container at room temperature before serving. May be stored in an airtight container for up to 10 days or freeze for longer storage.
