3/4 pound beef top round steak, cut into 1/2-inch strips
1/4 teaspoon pepper
2 teaspoons canola oil
2/3 cup condensed cream of chicken soup, undiluted
1/2 cup beef broth
4 large fresh mushrooms, sliced
1/4 cup each chopped onion, green pepper and celery
DUMPLINGS:
1/2 cup all-purpose flour
3/4 teaspoon baking powder
1/4 teaspoon salt
2 tablespoons beaten egg
3 tablespoons 2% milk
1/2 teaspoon dried parsley flakes

Steps:

  • Sprinkle steak with pepper. In a small skillet, brown steak in oil over medium-high heat. Transfer to a 1-1/2-qt. slow cooker. Combine the soup, broth and vegetables; pour over steak. Cover and cook on low for 4-5 hours., For dumplings, in a small bowl, combine the flour, baking powder and salt. Stir in egg and milk just until blended. Drop by tablespoonfuls onto meat mixture. Sprinkle with parsley., Cover and cook on high until a toothpick inserted in a dumpling comes out clean (do not lift the cover while cooking), about 1 hour.

3/4 cup flour
1 tablespoon paprika
1 teaspoon onion powder
1 teaspoon garlic powder
3 lbs beef round steak (cut into serving size pieces. I just use little steaks)
2 -3 tablespoons oil
1 medium onion (chopped)
1 1/3 cups water
1 1/3 cups beef broth
2 (10 3/4 ounce) cans condensed cream of chicken soup (undilluted)
1/2 teaspoon pepper
3 cups all-purpose flour
1/4 cup onion, minced
2 tablespoons baking powder
1 teaspoon garlic powder
1 1/2 teaspoons celery salt
1 1/2 teaspoons poultry seasoning
3/4 teaspoon salt
6 tablespoons oil
1/2 cup milk
1 cup dry breadcrumbs
1/4 cup melted butter

Steps:

  • combine first four ingredients in a large resealable plastic bag.
  • Add beef a few pieces at a time, and shake to coat.
  • In a dutch oven, over medium-high heat, brown steak in oil on both sides in batches.
  • remove and keep warm.
  • In the drippings saute onions until tender.
  • stir in water, broth,soup, and pepper.
  • Bring to a boil.
  • put meat and gravy mixture in a large oven- proof dish.
  • Cover and bake at 350 for 1 1/2 hours.
  • For dumplings, combine the flour, onion, baking powder, garlic powder, celery salt, poultry seasoning, and salt in a bowl.
  • Combine milk and oil; stir into dry ingredients just until moistened.
  • After 1 1/2 hrs, increase the temp to 425.
  • In a bowl combine bread crumbs and butter.
  • Drop dumpling batter by rounded tbs into crumb mixture; roll to form dumpling.
  • Place on top of simmering beef mixture.
  • Cover and bake 20-25 minute longer.or until toothpick inserted in dumpling comes out clean.
  • DO NOT lift the cover while baking.

1/2 cup flour
1 1/2 teaspoons paprika
1/2 teaspoon salt

1 (10 ounce) can cream of chicken soup

2 tablespoons dried onion flakes (or fresh)
1 tablespoon baking powder
2 teaspoons poppy seeds (optional)
3/4 teaspoon celery salt
3/4 teaspoon poultry seasoning
1/2 teaspoon salt
3/4 cup milk
3 tablespoons canola oil
1/2 cup breadcrumbs
2 tablespoons butter, melted

Steps:

  • Combine the flour, paprika and salt in a resealable bag. Shake the meat in the flour mixture and brown in oil. (Use an oven safe dutch oven if you have one).
  • Remove the meat and keep warm. Saute the onion in the pan drippings and stir in the water, soup and pepper. Bring to a boil.
  • Add meat and cover tightly and bake at 325 degrees for 30 minutes, then turn oven up to 425 degrees.
  • Dumplings: Combine the dry ingredients, then add the milk and oil, stirring just until moist.
  • Mix the breadcrumbs and melted butter in a small bowl. Drop the dumpling batter into the crumbs and roll until coated. Once the oven is heated to 425, place the dumplings on top of the meat mixture and bake 20-25 minutes or a toothpick inserted in dumpling comes out clean.
  • Do not lift lid while baking.

2 cups fresh bread cubes
1/2 cup chopped celery

2 lbs round steaks
1 cup flour
3 teaspoons paprika
1/4 cup shortening
2 (10 3/4 ounce) cans cream of chicken soup
1 (15 ounce) jar small onion, drained and reserve liquid, I use Holland Style onions
1 (4 1/2 ounce) jar whole mushrooms, drained and reserve liquid
1 (1 lb) container sour cream
2 cups flour
3 teaspoons baking powder
1 tablespoon poppy seed
1/2 teaspoon salt
1 teaspoon poultry seasoning
1 tablespoon dried onion flakes
1 teaspoon celery seed
4 tablespoons shortening
1 cup milk
1/2 cup butter, melted
1 cup seasoned bread crumbs

Steps:

  • Preheat oven to 350 degrees.
  • Pound meat, cut into 12 two inch cubes, roll in flour paprika mixture (1 cup flour with 3 tsp paprika). Heat heavy skillet with 1/4 c Crisco and brown meat on all sides. Put meat in large 13 x 9 casserole, 3 pieces per row. Put drained onions and mushrooms over meat. Heat one can of soup in skillet with meat drippings, along with one can of liquid made up of reserved liquid from onions and mushrooms, add water to fill can to top. Heat to boiling and pour over the meat. Bake uncovered at 350 degrees for 45 minutes.
  • Biscuit Topping: Mix dry ingredients (2 c flour, 3 tsp baking powder, 1 Tbs poppy seeds, 1/2 tsp salt, 1 tsp poultry seasoning, 1 Tbs minced onion, 1 tsp celery seed). Cut in with pastry blender, 4 Tbs shortening until shortening is size of small peas or smaller. Mix well with 1 cup milk. Melt butter and place in a bowl, put bread crumbs in another bowl. Take about 2 Tbs biscuit, place in melted butter, then roll in bread crumbs, pat until they are about 1/2 inch thick and 3 inches in diameter. Place biscuits on top of meat.
  • Increase oven to 425 degrees, bake 20 minutes longer.
  • Sauce: Heat 1 can of cream of chicken soup with sour cream on low heat, stirring often until bubbly.

2 pounds beef top sirloin steaks, (about 1 pound each)
4 bacon strips, diced
1 medium onion, chopped
1-1/2 cups unseasoned stuffing cubes
2 tablespoons minced fresh parsley
1/2 teaspoon salt
1/2 teaspoon celery salt
1/4 teaspoon rubbed sage
1/4 teaspoon pepper
1 cup beef broth
1 can (8 ounces) tomato sauce
4-1/2 teaspoons cornstarch
2 tablespoons cold water

Steps:

  • Flatten steaks to 1/4-in. thickness; set aside. In a large skillet, cook bacon over medium heat until crisp; using a slotted spoon, remove to paper towels. Drain, reserving 3 tablespoons drippings. , Saute onion in the drippings. Add the croutons, parsley, salt, celery salt, sage, pepper and bacon. Spread over each steak to within 1 in. of edges. Roll up jelly-roll style, starting with a long side; tie with kitchen string., Place in a greased 13-in. x 9-in. baking dish. Pour broth over steaks. Cover and bake at 325° for 1 hour. Drizzle with tomato sauce. Bake, uncovered, for 45 minutes or until meat is tender., Remove meat to a serving platter and keep warm. Pour drippings and loosened brown bits into a measuring cup; skim fat. In a saucepan, combine cornstarch and water until smooth; gradually stir in drippings. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with sliced steak.

This is one of the first recipes I learned to cook when I was a teenager. Mom taught me to cook over the phone, after I got home from school every day. She was working and I didn't think about it at the time, but later I realized my calls were reassuring to her, since she knew I was safely home. Even when Mom told me how to do it, I nearly always tweaked it! Most of the time, it turned out okay. Mashed potatoes and biscuits are perfect with this, along with a vegetable.

Number Of Ingredients 10

1 (2 1/2 pound) tenderized round steak, cut into 6 pieces
salt and ground black pepper to taste
1 cup all-purpose flour, divided
1 teaspoon garlic powder, or to taste
½ cup cooking oil, divided
1 large onion, sliced
1 cup water
1 teaspoon beef base (such as Better than Bouillon®)
1 teaspoon Worcestershire sauce
2 cups milk

Steps:

  • Sprinkle each side of the round steak pieces with salt and pepper, rubbing seasoning into the meat.
  • Combine 1/2 cup flour and garlic powder in a 1-gallon resealable bag. Add steak pieces, seal bag, and shake to evenly coat all the pieces.
  • Heat 1/3 cup of oil in a large skillet over medium heat until hot. Add seasoned and floured steak pieces to the skillet in a single layer in batches and cook until browned, 4 to 5 minutes per side. Remove from the skillet and keep warm. Repeat with remaining pieces, adding more oil, if necessary, until all are browned.
  • Add onion slices to the same skillet and stir, coating onions with pan drippings, until onion slices have separated and are just beginning to soften, about 2 minutes. Move onions to one side of the skillet and return browned steak pieces to the skillet. Spread steak evenly in the skillet and place onions on top.
  • Stir together water, beef base, and Worcestershire sauce in a microwave-safe container. Microwave on high for 1 minute, stir, and pour into the skillet. Cover, reduce heat to a simmer, and cook until the steak is tender, about 45 minutes.
  • Remove the steak from the skillet and add reserved 1/2 cup of flour to the pan drippings. Increase heat to medium; stir briskly and cook until bubbly, 2 to 3 minutes.
  • Stir in milk and keep stirring until gravy bubbles again. Return steak, onions, and any accumulated juices to the skillet, cover, and reduce heat to a simmer. Simmer, stirring occasionally, until flavors are well combined, about 10 minutes.
