3 tablespoons unsalted butter
1 cup pine nuts
4 green onions, minced green parts only
2 (8 ounce) frozen peas, slighty thawed
2 tablespoons fresh rosemary, or
2 teaspoons dried rosemary
1/2 teaspoon sugar
salt & pepper

Steps:

  • Melt butter in a large skillet over medium heat.
  • Saute pine nuts until golden.
  • Add green onions and saute 2 minutes.
  • Add peas, rosemary and sugar to skillet and continue to cook until heated through.
  • Season with salt and pepper to taste.

1/2 cup chicken broth (low sodium)
1/2 medium onion, sliced
1/2 teaspoon sugar
20 ounces frozen peas
1 teaspoon olive oil
1 ounce pine nuts
1 teaspoon dried rosemary (or italian seasoning)
1/4 teaspoon salt
black pepper

Steps:

  • Bring broth, onion, and sugar to a boil over high heat. Add peas and cook until tender, about 3 minutes. Drain. Discard liquid and onion slices and set peas aside.
  • Heat oil in a large skillet over medium heat. Add pine nuts and cook, stirring, about 3 minutes or until golden brown. Add rosemary, then peas and saute until heated through. Season with salt and pepper and serve.

¼ cup pine nuts
1 (15 ounce) can chickpeas (garbanzo beans), drained with 1/4 cup of the liquid reserved
¼ cup lemon juice
¼ cup olive oil, plus more for drizzling
2 tablespoons tahini
4 cloves garlic, minced
2 ¼ teaspoons ground cumin
¼ teaspoon paprika
2 pinches salt
½ teaspoon crushed peppercorns

Steps:

  • Heat a small skillet over medium heat. Toast pine nuts in skillet, stirring frequently, until fragrant and beginning to brown, 3 to 5 minutes.
  • Blend chickpeas, reserved liquid, lemon juice, 1/4 cup olive oil, tahini, garlic, cumin, paprika, salt, and crushed peppercorns in a food processor until smooth. Stir toasted pine nuts into the puree. Drizzle olive oil over the hummus.

Rosemary and two kinds of pepper ramp up the flavor of this tempting, inexpensive entrée.

Yield serves 8, 1 1/2 cups per serving

12 ounces dried medium wholegrain pasta shells
1 tablespoon olive oil
1 20-ounce package frozen green peas (4 cups)
3/4 cup coarsely chopped onion (sweet preferred, such as Vidalia, OsoSweet, or Maui)
2 tablespoons bottled minced garlic or 12 medium garlic cloves, minced
1 teaspoon dried rosemary, crushed
1/4 teaspoon crushed red pepper flakes
1/2 teaspoon pepper
1/4 cup shredded or grated Parmesan cheese

Steps:

  • Prepare the pasta using the package directions, omitting the salt and oil. Reserve 2 cups cooking liquid. Drain the pasta well in a colander.
  • Meanwhile, in a large skillet, heat the oil over medium heat, swirling to coat the bottom. Stir in the peas, onion, garlic, rosemary, and red pepper flakes. Cook, covered, for 7 to 10 minutes, stirring occasionally.
  • Stir in the reserved cooking liquid and pepper. Cook, covered, for 3 minutes, stirring occasionally.
  • In a large bowl, stir together the pasta and pea mixture. Sprinkle with the Parmesan.

1/2 cup breadcrumbs, fresh
1/2 cup pine nuts
4 salmon fillets or 4 steaks
1 1/2 tablespoons Dijon mustard
1 tablespoon shallot, minced fine
1 tablespoon olive oil
1 tablespoon butter
2 tablespoons fresh lemon juice
1/4 cup heavy cream
1/4 cup cold butter
1 teaspoon minced dill (fresh)
salt and pepper

Steps:

  • Preheat oven to 350 degrees F (170C).
  • Spread the breadcrumbs and pine nuts in a baking dish and bake for 10 minutes. (Chopped almonds may be used in place of the pine nuts.).
  • Wash the salmon fillets.
  • Pat dry, and brush with the Dijon mustard.
  • Sprinkle the bread crumb mixture over the salmon steaks, pressing to adhere to the fish.
  • Heat the oil, butter and shallot in oven-proof skillet over medium-high heat.
  • Add salmon, crumb-side down and cook until golden brown, 3 to 5 minutes.
  • Turn fish over.
  • Transfer skillet to oven.
  • Bake 8 to 10 minutes more, until cooked.
  • For the sauce: Reduce the lemon juice in a saucepan to 1 teaspoon.
  • Add the heavy cream and boil until slightly thickened.
  • Whisk in the butter until smooth. Add the fresh dill.
  • Season to taste with salt and pepper.
