4 1/2 lbs russet potatoes, peeled, cut into 2-inch pieces (about 5 large)
1 1/2 cups half-and-half
2 teaspoons fresh rosemary, finely chopped
1/2 cup unsalted butter, room temperature (1 stick)

Steps:

  • Cook potatoes in large pot of boiling salted water until tender, about 40 minutes. Drain. Return potatoes to pot; mash.
  • Combine half and half and rosemary in small saucepan; bring to simmer. Remove from heat; stir into mashed potatoes. Add butter; stir to melt. Season to taste with salt and pepper. (Can be made 2 hours ahead. Cover; let stand at room temperature. Before serving, stir over low heat until warm.).

Number Of Ingredients 6

6 medium baking potatoes (about 3 lbs.)
1 large head of garlic, bulb (whole)
4 1/2 teaspoons olive oil, divided
1 teaspoon minced fresh rosemary
3/4 cup nonfat milk
3/4 teaspoon salt

Steps:

  • Scrub and pierce potatoes. Bake at 400F for 45-55 minutes or until tender.
  • Meanhwile, remove papery outer skin from garlic bulb (do not peel or separate cloves); cut top off bulb. Place on a piece of heavy-duty foil; drizzle with 1/2 teaspoons of oil. Wrap foil around bulb. Bake at 400F for 30 to 35 minutes or until softened. Cool for 10 minutes.
  • Squeeze softened garlic into a large mixing bowl. Cut potatoes in half; scoop out pulp and add to garlic. Discard potato skins. Mash potatoes.
  • In a small saucepan, saute rosemary in remaining oil for 2 minutes; add to potato mixture.
  • Add milk and salt; beat until fluffy.

5 pounds potatoes, Yukon gold, washed and cut in 2 to 3-inch pieces
2 tablespoons olive oil
4 tablespoons garlic, minced
2 teaspoons freshly minced rosemary leaves
1/2 cup skim milk
2 teaspoons salt
1 teaspoons white pepper
1/4 cup chives

Steps:

  • Add cut potatoes into a large pot and cover by about 1-inch with cold water. Place over medium heat and simmer (do not boil) potatoes for 15 minutes or until fork tender.
  • Strain potatoes from pot, and set aside. In same pot add oil, garlic and rosemary. Lightly saute over medium heat. When slightly brown add potatoes back to the pot, and mix with garlic and rosemary.
  • Remove from heat, add milk, salt and pepper, and mash with potato masher. Garnish with chives.

3 1/2 Tbsp olive oil
1 1/2 lb russet potatoes, peeled, cut into 2-inch pieces
1 1/4 lb yams, peeled, cut into 2-inch pieces
1/2 c milk
2 Tbsp butter
1 tsp rosemary, minced
6 Tbsp parmesan cheese, grated

Steps:

  • 1. Preheat oven to 350F.
  • 2. Place garlic in small ovenproof cup or ramekin. Drizzle 2 tablespoons olive oil over garlic.
  • 3. Bake until garlic is very soft, about 25 minutes.
  • 4. Cool; peel garlic, reserving oil in cup.
  • 5. Brush 8x8x2-inch glass baking dish with 1/2 tablespoon olive oil.
  • 6. Cook all potatoes in large pot of boiling salted water until tender, about 25 minutes.
  • 7. Drain, reserving 1 cup cooking liquid.
  • 8. Return all potatoes to same pot.
  • 9. Add milk, butter, rosemary, roasted garlic, and reserved oil to potatoes.

2 lbs cubed peeled yukon gold potatoes
1 cup chopped onion
2 tablespoons plain fat-free yogurt or 2 tablespoons nonfat sour cream
1 teaspoon dried rosemary, chopped

1/4 teaspoon fresh ground black pepper

Steps:

  • Preheat oven to 350 degrees.
  • Remove white papery skin from garlic heads (do not peel or separate the cloves). Wrap each head separately in foil.
