I fell in love with the curry vegetable pot pie at a local but very pricey bakery, so I decided to try and make my own version! This is what I came up with using a few other recipes as guidelines. I think it's even better than what I was trying to mimic. Any combination of squash, sweet potato, potato, carrots, parsnips, turnips, rutabaga, pumpkin etc. will do. I can recommend highly a combination of sweet potato, mini red potatoes, parsnips, and carrots.

1 ¾ cups sweet potato, peeled and cut into 2-inch chunks
1 ¾ cups red potatoes, peeled and cut into 2-inch chunks
1 ¾ cups parsnips, peeled and cut into 2-inch chunks
1 ¾ cups carrots, peeled and cut into 2-inch chunks
2 tablespoons olive oil
sea salt and ground black pepper to taste
1 tablespoon butter
1 cup chopped onion
2 tablespoons butter
1 ½ cups vegetable broth
½ cup whole milk
3 tablespoons all-purpose flour
1 ½ teaspoons curry powder, or more to taste
1 (17.25 ounce) package frozen puff pastry, thawed and cut into four 5-inch squares

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place sweet potato, red potatoes, parsnips, and carrots in a roasting pan. Toss with olive oil; season with sea salt and black pepper.
  • Roast sweet potato mixture in the preheated oven until vegetables are slightly softened, 20 to 30 minutes.
  • Heat 1 tablespoon butter in a pot over medium heat; cook and stir onion until slightly softened, 3 to 5 minutes. Add sweet potato mixture and 2 more tablespoons butter; season with salt and black pepper. Cook and stir until butter is melted, 2 to 3 minutes.
  • Heat vegetable broth and milk together in a separate saucepan over medium heat until mixture is almost at a boil.
  • Stir flour and curry powder into sweet potato mixture until evenly coated. Gradually pour broth mixture into sweet potato mixture; stir until liquid is thickened, about 3 minutes. Divide mixture among four pot pie dishes. Top each with a puff pastry square.
  • Bake in the preheated oven until pastry is golden brown and puffed, 17 to 20 minutes.

These savory pies are stuffed with sweet potatoes, parsnips, celery root, and-of course-chicken, for a satisfying, comforting meal.

3 cups low-sodium chicken stock
1 cup diced Yukon Gold potatoes
1 cup diced sweet potatoes
1 cup diced celery root
1 cup diced parsnip
1 large white onion, diced
1 pound boneless, skinless chicken breasts, diced
2/3 cup all-purpose flour
1 1/2 cups whole milk
1 cup fresh or frozen peas
1/4 cup chopped flat-leaf parsley
2 tablespoons chopped cilantro
1 teaspoon hot sauce
Salt and freshly ground black pepper
1 sheet frozen puff pastry dough, thawed

Steps:

  • Preheat the oven to 400°F.
  • Place the chicken stock in a large soup pot. Bring to a boil and add the Yukon Gold and sweet potatoes, celery root, parsnip, and onion. Cover and reduce the heat to medium-low, then simmer for 5 minutes. Add the chicken and simmer for 10 minutes longer or until the chicken is just cooked. Remove the chicken and vegetables from the stock with a slotted spoon and reserve.
  • Place the flour in a mixing bowl and gradually add the milk, whisking it into the flour until well blended. Add this mixture to the stock and bring to a simmer for 5 minutes or until thickened. Add peas, parsley, cilantro, hot sauce, and the reserved chicken and vegetables to the stock and season with salt and pepper.
  • Place four 16-ounce ramekins on a baking sheet. Fill the ramekins with the chicken and vegetable mixture.
  • Cut the puff pastry into 4 pieces and lay each one over a ramekin. Gently press the dough over the edges of the ramekins.
  • Bake for 20 to 25 minutes or until the puff pastry is golden brown and the filling is bubbly.
  • Place the hot ramekins on serving plates and enjoy.

A creamy sauce is poured over hearty root vegetables like carrots, parsnips and sweet potatoes and topped with layers of puff pastry. It takes less than 30 minutes to whip up, making it perfect for a weeknight dinner with just a few dishes to clean!

Nonstick cooking spray, for greasing
3 tablespoons unsalted butter
2 teaspoons fresh thyme leaves, chopped
1/4 teaspoon ground cinnamon
Pinch ground allspice
2/3 cup all-purpose flour, plus more for dusting
3 cups low-sodium vegetable broth
Kosher salt and freshly ground black pepper
2 medium sweet potatoes, chopped into 1/4-inch cubes (about 3 cups)
3 large carrots, peeled and sliced into thin half-moons (about 2 cups)
3 large parsnips, peeled and sliced into thin half-moons (about 2 cups)
2 stalks celery, finely diced
One 14-ounce bag frozen pearl onions, thawed and drained
Two 17.3-ounce packages puff pastry, thawed (4 sheets)
1 large egg

Steps:

  • Preheat the oven to 400 degrees F. Spray a half sheet pan (18-by-13-inches) with cooking spray.
  • Put the butter, thyme, cinnamon and allspice in a small saucepan over medium heat and cook until the butter melts, about 1 minute. Whisk in the flour and cook, stirring constantly, until the mixture is a sandy consistency, about 1 minute. Pour in the vegetable broth, whisking constantly, until smooth. Stir in 2 teaspoons salt and a few grinds of pepper and bring to a boil, about 2 minutes. Reduce the heat to medium-low and simmer gently until thickened and the flour flavor is gone, about 10 minutes.
  • Meanwhile, put the sweet potatoes, carrots, parsnips, celery, pearl onions, 1 teaspoon salt and a few grinds of pepper on the prepared half sheet pan and toss to combine. Set aside.
  • Stack the 4 puff pastry sheets on top of each other on a lightly floured surface. Roll out the puff pastry to a 20-by-15-inch rectangle. Pour the gravy on top of the vegetables on the sheet pan and toss together to coat. Place the puff pastry evenly over the filling so there is about a 1-inch overhang on the edges. Trim the overhang with kitchen shears, making sure that the filling stays completely covered. Using the shears, make 12 small X marks all over the pastry; these slits will help steam escape. Beat the egg with a splash of water in a small bowl. Brush the pastry with the egg wash and bake until deep golden brown, 35 to 40 minutes. Let the pot pie cool for 10 minutes, then slice and serve.

3 large carrots, chopped
1 small onion, chopped
3 red potatoes, chopped

1 teaspoon dried thyme
3 cups water, or as needed

Steps:

  • Combine carrots, onion, red potatoes, parsnips, turnips, celery, lentils, garlic, oregano, rosemary, and thyme in a large pot. Cover with water and bring to a boil. Lower heat and simmer, stirring occasionally, until vegetables and lentils are tender, about 30 minutes. Add more water if needed.
  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch pan.
  • Pour cooked vegetables and lentils into the prepared pan. Gently layer biscuits atop the vegetables. Sprinkle with Colby Jack cheese.
  • Bake in the preheated oven until vegetables are bubbling and cheese is browned, 20 to 40 minutes.

Roasted Pork Loin with Almond Pesto 5 Spice Root Vegetable Pot Pie image

1 1/4 cups toasted slivered or whole almonds (save 1/4 cup for garnish)
3 serrano chiles
Juice of one lime
6 cloves of garlic
1 tablespoon minced ginger
2 cups picked Thai basil leaves
1 cup picked mint leaves
3/4 cup peanut oil
3 to 4 pound pork loin, cut into at least 4 (2-inch) pieces, pounded flat
Salt and black pepper to taste
Canola oil to cook
1/4 cup sliced green scallions for garnish
1 tablespoon butter
1 cup diced red onions
1 tablespoon 5 spice powder
1 cup diced carrots
1 cup diced celery
1 cup diced celery root
1 cup diced parsnip
2 cups chicken stock
1 tablespoon cornstarch slurry (1/2 tablespoon cornstarch mixed with cold water)
Salt and black pepper to taste
2 cups all purpose flour
4 ounces, 1 stick of butter, cut up into small pieces and frozen
1 teaspoon salt
Pinch of 5 spice powder
2 eggs lightly beaten with 1 tablespoon ice water

Steps:

  • In a food processor, place almonds, chilies, lime juice, garlic and ginger and mix well. Add the basil and mint leaves. Slowly drizzle in the oil to achieve a thick puree. Check for seasoning. Season the pork and spread the pesto on each pork escalope. Save a little pesto for garnishing. Roll the pork escalopes and tie each one with string. In a hot saute pan coated with oil, sear the pork roulades on all sides. Place pork in a 350 degree oven for about 20 minutes. An internal temperature of 155 to 160 degrees is ideal. I love my pork pink. Let loin rest for at least 5 minutes before slicing.
  • Add a little oil to thin out the remaining pesto.
  • For the 5 Spice Root Vegetable Ragout: In a 2 quart saucepan on medium heat, add the butter, onions and 5 spice powder. Saute for 3 minutes then add carrots, celery, celery root and parsnips. Saute for 10 minutes then add chicken stock. Reduce stock by 30 percent until the vegetables are soft but not mushy. Stir in the cornstarch slurry to thicken. Check for seasoning.
  • For the Pastry Cups: In a food processor with the blade, add flour, butter, salt and 5-spice. Pulse until butter ends up in very small, tiny pieces. Add the egg mixture and pulse until a ball is formed. If ball is too dry, add a little water or, if too wet, add a little flour. In either case, pulse to incorporate. Wrap ball in plastic and refrigerate for 1 hour. Roll out dough to 1/4-inch thick and dock dough (make small holes). Cut out circles or squares and place on an upside down muffin pan. Place a sheet of parchment on top then weigh down with a sheet tray. Bake at 425 degrees for 18 to 20 minutes or until golden brown.
  • PLATING: Zigzag pesto oil on white plate. Place one pastry cup in the center of a plate and generously over fill with vegetable ragout. Slice thick slices of pork and surround cup. Garnish with toasted almonds and sliced scallions.

3 carrots, peeled and cut into 1/4-inch pieces, (about 2 cups)
2 Cup peeled and 1/2-inch diced rutabaga
2 parsnips, peeled and cut into 1/4-inch pieces, (about 1 cup)
1/4 Cup diced leeks, white and light green parts only
2 Teaspoon fresh thyme leaves
1 Teaspoon finely chopped garlic
1 bay leaf
1/2 Cup dry white wine or water
1 Pound small red potatoes, washed and quartered
2 Cup reduced sodium chicken or vegetable broth
2 Tablespoon cornstarch
2 Tablespoon cold water
1/2 (1 kg) tube store-bought polenta, cut into 12 rounds
1 Cup grated cheddar cheese

Steps:

  • 1.Preheat broiler to high. 2.In a Dutch oven, heat olive oil and butter over medium heat. Add carrots, rutabaga, parsnips, leeks, thyme, garlic and bay leaf; season with salt and pepper. Cook until vegetables are golden brown and beginning to soften, about 8 minutes. 3.Pour wine into pan, reduce by half while scraping any flavourful browned bits from the bottom of the pan. Add potatoes and vegetable or chicken broth; stir and bring to a boil. Reduce heat, cover and simmer until vegetables are tender, about 10 minutes. Stir cornstarch and water together until blended. Stir into sauce and boil gently for 2 minutes or until thickened. 4.Cover top of root vegetables with rounds of polenta, overlapping as necessary and sprinkle with cheddar cheese. Bake under broiler until cheese is melted and polenta is heated through and golden brown, about 5 minutes.
