ROOT BEER FLOAT BROWNIES

Brownies baked using cocoa and root beer and topped with glaze - decadent dessert for your fall menu!

1 1/3 cups Gold Medal™ all-purpose flour
2 cups sugar
3/4 cup unsweetened Dutch processed baking cocoa
1/2 teaspoon salt
1 cup butter, cut into pieces
1/2 cup semisweet chocolate chips
4 eggs
1/2 teaspoon root beer extract
1/2 cup powdered sugar
2 tablespoons root beer

Steps:

  • Heat oven to 325°F. Spray 8-inch square pan with cooking spray.
  • In medium bowl, mix flour, sugar, 1/2 cup of the cocoa and the salt; set aside.
  • In large microwavable bowl, microwave butter and chocolate chips uncovered on High 2 minutes, stirring after 1 minute, until melted and mixture can be stirred smooth. Stir in flour mixture, eggs and root beer extract. Pour batter into pan.
  • Bake 50 minutes or until toothpick inserted in center comes out almost clean. Cool completely in pan on cooling rack, about 1 hour.
  • In small bowl, mix powdered sugar, remaining 1/4 cup cocoa and the root beer with whisk until smooth. Pour glaze over brownies. Cut into 4 rows by 4 rows.

I make super jello shots, but one day I felt like I wanted to make something more...why not pudding? So I just thought and thought and came up with a few yummy recipes. Not sure how many servings this makes..possibly 16.

1 box instant vanilla pudding, any brand
1 1/2 c cold milk, preferably whole milk
1/2 c root beer schnapps, any brand
ROOT BEER FLOAT PUDDING SHOTS

Steps:

  • 1. Empty instant vanilla pudding mix into a large glass bowl. Add milk. With mixer set to medium, blend ingredients. Add schnapps. With mixer set to medium high, mix all ingredients well for 2 minutes. Pour into approximately 16 1-oz shot glasses, chill.
  • 2. If not using immediately, put lids on the shot glasses prior to chilling. Chill for at least 2 hours. Enjoy!

1 (1 ounce) package jello sugar-free instant vanilla pudding mix
2/3 cup nonfat dry milk powder
1 1/2 cups diet root beer
1/2 cup Cool Whip Lite

Steps:

  • In a medium bowl, combine dry pudding mix and dry milk powder.
  • Add diet root beer.
  • Mix well using a wire whisk.
  • Blend in 1/4 cup Cool Whip Lite.
  • Evenly spoon mixture into 4 dessert dishes.
  • Top each with 1 tablespoon Cool Whip Lite.
  • Refrigerate for at least 15 minutes.

2/3 cup flour
1/2 cup cocoa powder
6 oz chopped semi sweet chocolate
3 oz white chocolate
4 Tbsp. butter
3 large eggs
1/2 cup white sugar
1/2 cup brown sugar
8 oz. root beer
2 tsp. vanilla
1/2 tsp salt

Steps:

  • 1.Preheat oven to 375° 2.Line a 9×9 baking dish with aluminum foil and spray lightly with cooking spray. 3.Sift flour, cocoa powder and salt in a bowl and set aside. 4.Over a double boiler (or in microwave) melt the butter, semi-sweet and white chocolates together. 5.Remove from heat when just melted and allow to cool for 5 minutes. 6.Using your mixer mix the eggs, sugars and vanilla together. 7.Slowly add in the cooled chocolate mixture. 8.Now add half the flour and half the root beer. Mix on low, scraping the sides. 9.Repeat with the remaining flour and root beer until just combined. Batter will be on the thin side. 10.Pour batter into your prepared pan and bake for 25 minutes, until center is just set. 11.Let cool completely before cutting or frosting.

I love to create new surprises for our neighborhood gatherings, so this is one that I've made in the past, but the most recent that I've posted. I think that they may be made non-alcoholic by using more flattened root beer to replace the schnapps and vodka and adding a drop of vanilla extract (but I've never tried). *NOTE: Prep time includes cooling and refrigeration time. I hope you enjoy them.

1 (3/4 ounce) envelope knox unflavored gelatin
10 ounces flattened root beer (your favorite brand)
1/2 cup root beer Schnapps (your favorite brand)
1/4 cup vanilla vodka (your favorite brand)
real whipping cream (aerosol) (optional)

Steps:

  • In a small saucepan, pour in the flattened root beer and then sprinkle the unflavored gelatin over the top. DO NOT STIR and DO NOT HEAT. Allow to sit for 2-3 minutes.
  • Whisk pan ingredients together and place the pan over medium heat and bring to a boil while stirring frequently to make sure that the gelatin dissolves. Remove from heat.
  • Allow to cool to room temperature.
  • In the meantime, line up shot glasses on a sheet pan.
  • Once cooled, add the root beer schnapps and vanilla vodka. Stir/whisk until well combined.
  • Pour the mix into little, plastic shot glass cups and place sheet pan into the refrigerator for at least 4 hours, until firm.
  • Top each shot with just a tiny squirt of whipping cream, if desired.
  • Enjoy!
