Cha Yen (Thai Iced Tea) image

This homemade Thai iced tea gets its complex flavor from black tea, rooibos tea, star anise and cloves, and its sweetness from condensed milk. Adapted from the cookbook "Bangkok" by Leela Punyaratabandhu, this version is hardly typical: Most Thai iced tea sold on the streets of Bangkok - or in Thai restaurants stateside - contains an immoderate amount of sweetened condensed milk and uses a store-bought mix, which contains food coloring. The tea blend used here is intense on its own, but mellowed by ice and milk. Chill the tea fully before pouring it over ice so its flavors don't get diluted.

Number Of Ingredients 9

4 tablespoons loose red rooibos tea leaves (or the contents of 10 rooibos tea bags)
3 tablespoons loose black tea leaves (or the contents of 7 black tea bags)
3 tablespoons granulated sugar
10 star anise pods, broken into pieces or roughly chopped
10 whole cloves
1/2 cup half-and-half
1/2 cup sweetened condensed milk
1 tablespoon vanilla extract
Ice, for serving

Steps:

  • Add 4 cups water to a medium saucepan. Cover with a lid and bring to a boil. Remove from the heat. Add rooibos tea, black tea, sugar, star anise and cloves; cover and let steep, 10 minutes. Strain tea, pressing on tea leaves and spices to extract as much liquid as possible, then discarding solids. Refrigerate tea until chilled, at least 1 hour.
  • In a measuring glass, stir together the half-and-half, condensed milk and vanilla extract.
  • Fill a pint glass with ice. Add 3/4 cup tea mixture and top with about 2½ tablespoons condensed milk mixture. Serve immediately.

ROOIBOS LIMEADE

In this tropical take on the Arnold Palmer, lime wedges, thyme sprigs, and fresh ginger are muddled together, then mixed with chilled rooibos tea.

1/4 cup superfine sugar
6 slices peeled fresh ginger (each 1/4 inch thick), plus more for serving
1 bunch fresh thyme
1 lime, quartered, plus 1/4 cup fresh juice, and lime wheels for serving
24 ounces brewed rooibos tea, chilled

Steps:

  • Combine sugar, ginger, 8 thyme sprigs, and quartered lime in a cocktail shaker. Muddle until lime quarters release their juices and ginger and thyme begin to break down. Add lime juice, stirring until sugar has completely dissolved. Strain mixture into a pitcher partially filled with ice, or divide evenly among 4 ice-filled glasses. Top with tea, stirring to evenly combine. Garnish with thyme sprigs, ginger slices, and lime wheels; serve.

ROOIBOS TEA AND GRAPEFRUIT-ADE



Rooibos Tea and Grapefruit-Ade image

2 teaspoons loose-leaf or 2 bags rooibos tea
1/2 cup sugar
1 cup fresh Ruby Red grapefruit juice (from 2 grapefruits)
Grapefruit slices, for serving

Steps:

  • Brew tea in 2 cups boiling water 4 minutes; strain or remove bag. Let cool completely. Meanwhile, combine sugar and 1/2 cup water in a small saucepan. Bring to a boil, stirring until sugar is dissolved. Let cool completely, then combine with grapefruit juice and tea in a pitcher. Refrigerate until ready to serve, up to 2 days. Serve over ice, garnished with grapefruit slices.

ROOIBOS ICED TEA



Rooibos Iced Tea image

High in anti-oxidants and also caffeine-free, this tea is not only refreshing but also a wonderfully healthy thirst quencher. Rooibos and Honeybush teas are both available in local supermarkets in Maryland. I have also purchased this tea from Cost Plus World Market.

6 tea bags, Rooibos
1 lemon, sliced
20 mint leaves
sugar, to taste
1 gallon boiling water

Steps:

  • Place teabags, lemon, mint leaves and sugar in a large pot, pour boiling water onto this and leave to steep.
  • Stir occasionally until cold.
  • Remove tea bags when tea is cold and refridgerate.
