1 cup butter (softened)
1 1/4 cup packed brown sugar
2 eggs
2 tbsp milk
1 3/4 cup all-purpose flour
2 tsp vanilla
1 tsp baking soda
1/2 tsp salt
2 1/2 cups old fashioned oats
1 cup semi-sweet chocolate chips
1 cup Rolo Bites candy (already unwrapped)
Optional: 1 cup chopped pecans

Steps:

  • Preheat oven to 375ºF.
  • Prepare a 9x13 baking dish by lining it with parchment paper. If necessary, foil can be used, but it must be sprayed with cooking spray.
  • Mix together (using a stand mixer or by hand) the butter, brown sugar, and eggs.
  • Mix in the milk, vanilla, flour, baking soda, salt, and oats.
  • Stir in the chocolate chips, Rolos, and pecans.
  • Spread the dough in the prepared baking dish.
  • Bake for approximately 20-25 minutes.
  • The edges should be set and golden brown, and the tops of the bars should look mostly "dry."
  • Allow to cool for at least 10 minutes before cutting.

1 pouch (17.5 oz) Betty Crocker™ chocolate chip cookie mix
Butter and egg called for on cookie mix pouch
1 box (3.4 oz) Jell-O™ vanilla-flavor instant pudding & pie filling mix
30 Rolo® chewy caramels in milk chocolate, unwrapped, cut into quarters (about 1 cup)

Steps:

  • Heat oven to 350°F. Spray 9-inch square pan with cooking spray.
  • In large bowl, mix cookie mix, butter, egg and dry pudding mix with spoon until soft dough forms. Stir in chopped chocolates. Press evenly in pan.
  • Bake 28 to 32 minutes or until golden brown. Cool completely, about 1 hour. Cut into 4 rows by 4 rows. Store in airtight container at room temperature.

You will love these delicious chocolate chip cookie bars loaded with a rolo center.

Number Of Ingredients 11

1 cup butter (softened to room temp)
1 1/2 cups brown sugar
1/2 cup sugar
2 eggs
2 teaspoons vanilla
2 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 (12 ounce) package milk chocolate chips
77 Rolo candies (roughly eighteen ounces)

Steps:

  • Heat oven to 350 degrees F.
  • Cream together softened butter, brown sugar, and sugar until light and fluffy.
  • Beat in eggs and vanilla.
  • Mix in flour, baking soda, baking powder and salt until well blended.
  • Add in chocolate chips.
  • Chill dough for about 20 minutes.
  • Grease a 9 x 13 inch pan (I used a glass pan)
  • Spread half of the dough to cover the bottom of the pan. I just spread it around with my fingertips. You may need to use just a little more than half of the dough to get coverage.
  • Then lay the unwrapped Rolo candies all over the dough with right side up. I place them 7 rolos across and 11 Rolos down in the 9 x 13 inch pan.
  • Then flatten small portions of the remaining cookie dough and place all over the Rolos to cover them up. I used my fingers to mold the dough around a little for better coverage. It's ok if you can see a little bit of Rolos because the dough will expand upon cooking.
  • Bake at 350 for 22 - 25 minutes. These will be golden brown. You want them to be set in the center and when a toothpick is inserted it will come out clean.
  • Cool for about 30-45 minutes to set up before slicing.
