Acorn squash with maple syrup image

Well, I had it all planed out to make this and then forgot all about it until I was rummaging around trying to find some potatoes and found my acorn squash hidden in the back. Then after we had dinner, and we had eaten our squash, did I realize that I had not taken the final photo. Dang.

1 large acorn squash
4 tablespoon(s) butter
2/3 cup(s) brown sugar
1/2 cup(s) maple syrup (mrs. butterworth)
2 large dashes of pumpkin pie spice

Steps:

  • Preheat oven at 350 degrees. Cut acorn squash in half and remove seeds.
  • Set into a microwave safe baking dish that will hold both halves. Add 2 Tbsp butter, 1/3 cup brown sugar, and 1/4 cup of maple syrup into each half and sprinkle the pumpkin pie spice on each.
  • Add about 1/4" to 1/2" water into bottom of baking dish. Cover with plastic wrap and microwave for 10 to 15 minutes depending on the size of your squash. (or cover with foil and bake at 350 degrees for 30 to 45 min)
  • Carefully remove from microwave and serve.
