Oven-roasting vegetables brings out maximum flavour, in my opinion. I eat these like potato chips - can't stop at just one.

2 1/2 lbs assorted small potatoes (such as fingerling, Yukon Gold or red Bliss, scrubbed)
1 acorn squash, peeled and cut into 1 1/2 inch chunks
3 cups butternut squash, cut into 2 inch chunks
1/3 cup extra virgin olive oil
1 tablespoon fresh rosemary (or 1 tsp dried, crumbled)
1 tablespoon fresh thyme (or 1 tsp dried, crumbled)
1 1/2 teaspoons fresh oregano (or 1/2 tsp dried, crumbled)
3 cloves garlic, peeled and roughly chopped
1 1/2 tablespoons balsamic vinegar
1 teaspoon salt
3/4 teaspoon fresh ground black pepper

Steps:

  • Preheat the oven to 425F.
  • Cover the bottom of a large baking sheet with aluminum foil.
  • Place the potatoes and squash in a large bowl and toss with olive oil, rosemary, thyme, oregano, garlic, balsamico and salt and pepper to coat well.
  • Transfer vegetables to large baking sheet and spread into a single layer, keeping any leftover oil from the bowl.
  • Roast the vegetables until tender, turning every 15 minutes with a long-handled spoon, about 45 minutes to 55 minutes.
  • The veggies should be tender on the inside and caramelized in places on the outside.
  • Adjust seasoning to taste.
  • Serve immediately.

1 unpeeled butternut squash, seeded and cut in 12 pieces (about 1-1/2 lb)
2 lbs unpeeled whole baby potatoes, washed or 2 lbs fingerling potatoes, are good too
12 large shallots, peeled
5 garlic cloves, sliced
1/4 cup olive oil (more or less to taste and diet)
1 sprig rosemary
3 leaves fresh sage
1 sprig thyme

Steps:

  • Preheat oven to 425°F.
  • Combine squash, potatoes shallots and garlic in large shallow baking pan.
  • Drizzle with oil.
  • Salt and pepper to taste.
  • Top with herbs.
  • Bake 45-50 minutes, turning once after vegetables are browned on one side.
  • The skins of the potatoes and squash have lots of fiber and vitamins so I leave them on you can remove them if you want.
  • Season with salt and pepper if desired.

4 delicata squashes (about 3 pounds total), cut crosswise into 1/2-inch rounds, seeds removed
1/2 cup combined large sage leaves and snipped rosemary sprigs
1/4 cup extra-virgin olive oil
Kosher salt and freshly ground pepper

Steps:

  • Preheat oven to 425°F. Arrange squashes in a single layer on two rimmed baking sheets. Sprinkle with herbs; brush both sides of squashes and herbs evenly with oil. Season with salt and pepper.
  • Roast until squashes are golden brown on bottom, about 15 minutes. Flip squashes and herbs; roast until tender, about 5 minutes more.

A wonderful side dish that I make as soon as the yellow squash start coming in. When I first started making this about 30 years ago, I used the bacon grease. I found I like the margarine better and I like the squash to cook so that you have a few browned pieces in. Oooohh, that gives it so much flavor!

1/4 cup margarine (or a little bacon grease)
3 medium size yellow squash (cut in chunks)
2 medium potatoes (cut in chunks)
1 small onion (halved and sliced)

Steps:

  • Wash and Cut up squash, potatoes and onions.
  • Melt butter in lg. fry pan.
  • Add squash.
  • Add potatoes on top of squash.
  • Add onions on top of potatoes.
  • Cover and simmer till potatoes are done stirring occasionally (about 1/2 hour).
  • Add salt and pepper to taste.
  • Add small amount of water if it starts sticking (usually not necessary due to water content in vegetables).

1 1/2 pounds winter squash, such as Hubbard or butternut, peeled and cut into 1-inch cubes
1/2 cup extra-virgin olive oil
2 tablespoons fresh rosemary
Sea salt and freshly ground pepper to taste

Steps:

  • Preheat the oven to 400 degrees and soak the potatoes in cold water for 5 minutes, to remove excess starch. Drain the potatoes and pat dry.
  • Place the potatoes and the squash in one layer in a nonstick roasting pan. Drizzle with the olive oil, sprinkle with rosemary and season with salt and pepper. Roast for 30 minutes and then stir so that the vegetables cook evenly. Continue roasting until well browned, about 30 more minutes and serve immediately.

Yet another roasted potato recipe, I know! I love potatoes, so I am always looking for another way to prepare them. This one is a little different and tastes amazing. This recipe is easily doubled for a large group of people. It can also be prepared ahead of time, just cover and refrigerate, then reheat in a 400ºF oven for 6-9 min, stirring occasionally. **If using dried herbs, only use 1 tsp.

1/4 cup olive oil
1/4 cup balsamic vinegar (white if you can find it)
1/8 cup shallot, chopped
2 1/2 teaspoons fresh thyme, chopped
2 1/2 teaspoons fresh rosemary, chopped
1 teaspoon fennel seed, chopped
3 lbs red potatoes, medium sized and each cut into 8 wedges

Steps:

  • Preheat oven to 400ºF.
  • Oil a large baking sheet.

2 acorn squashes (about 1 1/2 pounds each)
2 tablespoons plus 1 teaspoon extra-virgin olive oil
Coarse salt and freshly ground pepper
1 pound mixed black and red grapes (about 3 cups)
1 large shallot, thinly sliced (about 1 cup)
2 tablespoons packed small fresh sage leaves
1 1/3 cups cooked spelt, wheat berries, barley, or other whole grain

Steps:

  • Preheat oven to 400 degrees. Cut squashes in half lengthwise. Scoop out seeds and reserve, if desired (see note, above).
  • Brush cut sides of squash halves with 1 teaspoon oil; season with salt and pepper. Place, cut sides down, on a rimmed baking sheet. Combine grapes, shallot, and sage in a bowl and drizzle with remaining 2 tablespoons oil. Season with salt and pepper; place around squash. Roast, stirring grape mixture once, until squash is tender and grape mixture is caramelized, 35 to 40 minutes. To serve, fill squash with grain and grape mixture.
