Chicken and Wild Rice Supreme image

This family favorite is something I often make as a "carry-in dinner" for someone who has just come home from the hospital after surgery, or for new parents after coming home from the hospital with a new baby. 1 pkg long grain and wild rice mix (6 oz.)
1/4 c butter or margarine
1/3 cup c chopped onion
1/3 c all purpose flour
1 c half and half
1 c chicken broth
1/2 tsp salt
1 dash(es) pepper
2 c cubed cooked chicken
1 tsp chopped parsley

Steps:

  • 1. Prepare rice according to package directions.
  • 2. Melt butter in a heavy saucepan; add onion and cook until transparent. Blend in flour and cook for 1 minute. Gradually add half and half and chicken broth; cook, stirring constantly until thickened. Stir in salt and pepper.
  • 3. Combine cooked rice, chicken, and cream sauce. Add parsley. Spoon mixture into a lightly greased 2-quart casserole. Bake at 425 degrees for 30 minutes or until hot and bubbly.
