1/4 cup chopped fresh sage
4 pounds medium-size red-skinned potatoes, scrubbed, quartered
1 teaspoon dried rubbed sage
16 shallots, peeled, halved lengthwise

Steps:

  • Preheat oven to 375°F. Cook butter and fresh sage in small saucepan over medium-heat until butter simmers and is well flavored with sage, about 4 minutes.
  • Toss potatoes with dried sage and 2 tablespoons sage butter in bowl. Sprinkle with salt and pepper. Transfer potatoes to 2 baking sheets. Bake 20 minutes.
  • Toss shallots in same bowl with 1 tablespoon sage butter. Season with salt and pepper. Divide shallots between baking sheets. Roast until potatoes and shallots are tender and golden, turning occasionally, about 35 minutes longer. Transfer potatoes and shallots to large bowl. Add remaining sage butter; toss. Season with salt and pepper.

4 garlic cloves, minced

Steps:

  • Preheat oven to 450°F and place a large, heavy skillet or roasting pan in the oven to heat.
  • Place the potatoes in a large saucepan and cover with cold salted water. Put on high heat to boil. Once boiling, lower heat and simmer for 5 minutes.
  • Drain the potatoes well, and place on paper towels. put the flour on a plate. When the potatoes are dry, roll them in the flour to coat.
  • Remove the hot skillet from the oven and add the oil and potatoes. Roast, shaking the pan occasionally until the potatoes are golden brown all over, about 30 minutes.
  • Remove from the oven and add the garlic, sage and butter. Return to the oven for one minute.
  • Season generously with salt and pepper and serve.

1 pound skinless, boneless chicken breast halves
1 pound small red potatoes, halved
1 tablespoon olive oil, or to taste
1 bunch fresh sage, chopped, or to taste, divided

½ cup Italian-seasoned bread crumbs
¼ cup grated Parmesan cheese
3 clementines
¼ cup fresh lemon juice, or as needed
2 tablespoons melted butter
1 teaspoon Italian seasoning
¾ teaspoon garlic powder, or to taste, divided
2 cups broccoli florets
2 clementines, sliced

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C). Line a rimmed baking sheet with parchment paper or a silicone mat.
  • Slice chicken breasts into 3 or 4 tenders about 2 inches wide.
  • Toss potatoes with olive oil to coat; sprinkle with 1/3 the sage. Season with salt and pepper. Lay potatoes in a single layer on the prepared baking sheet.
  • Bake in the preheated oven until golden, 20 to 25 minutes.
  • Combine bread crumbs, Parmesan cheese, and another 1/3 the sage in a shallow bowl.
  • Zest, halve, and juice 3 clementines. Add enough lemon juice to make 1/2 cup of citrus juice. Quarter juiced clementines; reserve.

  • Sweet Potatoes:

1 three-rib prime rib of beef (about 7 pounds), trimmed and frenched
3 pounds russet potatoes, preferably small, peeled and halved lengthwise

Steps:

  • Stir together bay leaves, sage, oil, 1 1/2 teaspoons salt, and orange zest in a small bowl. Season with pepper. Rub herb mixture all over roast. Refrigerate roast, covered, at least 8 hours and up to 1 day.
  • Submerge potatoes in a large pot of water. Bring to a boil; season with salt. Cook 5 minutes. Drain. Score lines lengthwise in potatoes with the tines of a fork.

4 poussin chickens
12 rashers dry-curled streaky bacon
1 pound potatoes, peeled
Handful fresh sage, thyme or rosemary (all are good)
12 cloves garlic, peeled
1/2 cup white wine, plus 1 cup
Sea salt and freshly ground black pepper
Olive oil

Steps:

  • Preheat your oven and an appropriately sized roasting tray to 425 to 450 degrees. Boil your potatoes in salted water until perfectly cooked (don't overcook). Drain and allow to cool. Remove any fat from inside the chicken cavity. Wash and pat dry with kitchen paper. Slice your potatoes thickly, season with salt and freshly ground black pepper, add your freshly torn herbs and enough olive oil just to coat. Toss over and then stuff your chickens with the potatoes. Place them into the tray with about 12 cloves of garlic and cook for 30 minutes. After this time the chicken should be looking as handsome as its inventor and the skin should be crisp and golden.
  • At this point lay your streaky bacon snugly over the breast meat and add a 1/2 cup of wine to the pan to get some sticky marmitey juices happening. Cook for another 15 minutes. Remove the chicken from the oven. Take them out of the tray and allow them to rest for 5 minutes while you make a quick bit of gravy. I normally remove as much fat as possible from the tray before placing on gentle heat. Splash the remaining 1 cup of white wine into it. Then boil up and scrape away all the goodness from the sides of the tray. Simmer this for a couple of minutes until tasty. It's not a thick, robust gravy, just a tasty gesture. (Another nice option at this point is to add a little cream to the gravy which works really well.) Served with something nice and green like steamed spinach and the potatoes pulled out from the chickens.

Stir bacon into potato mixture and continue to roast until potatoes are tender and beginning to brown, about 15 minutes longer. Transfer mixture to large serving bowl. Prime Rib and Oven-Roasted Potatoes with Bay Leaves and Sage image

A proper Victorian Christmas dinner had a roast at its center. The archetypal English "joint," prime rib of beef, features a burnished crust and a rosy interior. Although Mediterranean in origin, bay leaves and sage pair beautifully with cold-weather fare, enhancing the prime rib and accompanying potatoes.

15 dried bay leaves, crumbled, plus whole leaves for garnish
1/3 cup coarsely chopped fresh sage leaves, plus whole leaves for garnish
1/2 cup extra-virgin olive oil
Coarse salt
1/3 cup finely grated orange zest, (from 3 oranges)
Freshly ground pepper
1 (about 7 pounds) three-rib prime rib of beef, trimmed and frenched
3 pounds russet potatoes, peeled and halved lengthwise

Steps:

  • Stir together bay leaves, sage, oil, 1 1/2 teaspoons salt, and the orange zest in a small bowl. Season with pepper. Rub herb mixture all over the roast. Refrigerate roast, covered, overnight.
  • Put potatoes into a large pot of water. Bring to a boil; add salt. Cook 5 minutes. Drain. Score lines lengthwise in potatoes using the tines of a fork.
  • Preheat oven to 450 degrees. Transfer roast, fat side up, to a metal roasting pan; let stand until it comes to room temperature, 30 minutes to 1 hour. Roast 15 minutes. Add potatoes; roast 15 minutes. Reduce temperature to 350 degrees. Roast, turning potatoes after 30 minutes, until an instant-read thermometer inserted into meat (away from bone) registers 115 degrees for rare, about 1 hour. Let stand 20 minutes (temperature should rise to 125 degrees), and slice. Garnish with bay leaves and sage.

Roasted Potatoes With Sage and Garlic image

1 1/2 pounds small creamer potatoes, halved
1/3 cup flour
1 1/2 tablespoons vegetable oil
4 cloves garlic, minced
1/4 cup chopped sage leaves
1 tablespoon unsalted butter
to taste Kosher salt and freshly ground black pepper

Steps:

  • Preheat oven to 450 degrees and place a large, heavy skillet or roasting pan in the oven to heat up. Place the potatoes in a large saucepan and cover with cold salted water. Place over high heat and bring to a boil. Lower the heat and simmer 5 minutes.
  • Drain the potatoes well and place them on paper towels. Place the flour on a plate and when the potatoes are dry, roll them in the flour to coat, shaking off any excess. Remove the hot skillet from the oven and add the oil and potatoes. Roast, shaking the pan occasionally until the potatoes are golden brown all over, about 30 minutes. Remove from the oven and add the garlic, sage and butter. Return the pan to the oven for one minute. Season generously with salt and pepper and serve.
