I saw a recipe for baked radishes in a magazine long, long ago and the thought so intrigued me I just had to give it a try. This is my personalized version of the original. I often switch out the thyme with either rosemary, basil, or crushed garlic, depending on my mood and what main dish these will be served with.

2 bunches radishes, trimmed
2 tablespoons extra-virgin olive oil
1 teaspoon ground thyme
salt to taste
½ lemon, juiced

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Line a baking sheet with aluminum foil.
  • Cut radishes into halves; cut any large radishes into quarters. Stir olive oil and thyme together in a bowl and toss radishes in mixture to coat. Spread radishes onto prepared baking sheet; sprinkle with salt.
  • Roast in the preheated oven until tender but firm in the centers, tossing every 5 minutes, 15 to 20 minutes. Drizzle with lemon juice.

1 bunch radishes (halved if large) and their greens
1 tablespoon extra-virgin olive oil
Coarse salt and freshly ground black pepper

Steps:

  • Heat oven to 375 degrees.
  • Separate radishes and their greens and arrange on 2 rimmed baking sheets. Drizzle each with olive oil and season with salt and pepper. Toss to combine.
  • Bake, until radishes are tender and caramelized and greens are crisp, 15 to 20 minutes. Let cool.

2 pounds radishes with greens attached
2 tablespoons unsalted butter, melted
2 teaspoons minced garlic, divided
1 teaspoon sea salt
½ teaspoon ground white pepper
1 teaspoon olive oil
1 small red onion, julienned

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Cut greens from radishes. Rinse and soak greens until all grit is removed and the water is clear; set aside to dry. Rinse and dry radishes; cut in half.
  • Stir butter, 1 teaspoon garlic, salt, and pepper together in a medium bowl. Add radishes and toss to coat. Arrange radishes, cut-sides down, on a baking sheet.
  • Roast in the preheated oven until radishes are soft enough to easily cut through with a fork, 15 to 20 minutes.
  • While radishes are roasting, heat olive oil in a large skillet over low heat. Sauté onion in hot oil until almost soft, about 5 minutes. Add greens and remaining 1 teaspoon garlic. Sauté until greens are wilted, 5 to 8 minutes.
  • Divide sautéed greens and onions among serving plates and top with roasted radishes.

It seems like such a waste to throw away or compost beautiful greens. Radish greens have a slightly peppery taste similar to arugula. They are best fresh from the farmers' market.

1 tablespoon extra-virgin olive oil
1 ½ teaspoons butter
1 clove garlic, minced
4 medium purple radishes, sliced
1 bunch radish greens, washed and chopped
¼ cup crumbled feta cheese

Steps:

  • Heat olive oil and butter in a saucepan over medium-low heat until butter melts. Add garlic and sauté until softened and fragrant, about 1 minute. Add radish slices and sauté to bring out their sweetness, 1 to 2 minutes. Add greens and sauté until wilted, 1 to 2 minutes.
  • Remove from the heat and stir in feta cheese.

2 pounds radishes with greens
2 tablespoons extra-virgin olive oil
2 tablespoons balsamic vinegar
Coarse salt and freshly ground pepper
2 cloves garlic, minced

Steps:

  • Preheat oven to 400 degrees. Separate greens from radishes; wash both well. Slice radishes in half; toss with 1 tablespoon each oil and vinegar. Season with salt and pepper. Arrange in a single layer on a rimmed baking sheet, cut-side down. Roast until tender and golden, 25 to 30 minutes.
  • Meanwhile, heat remaining oil and vinegar and the garlic in a medium skillet over mediumhigh heat. Cook radish greens, tossing, just until wilted, about 1 minute. Season with salt and pepper. Serve with radishes.
