Yukon Gold Roasted Potatoes With Bacon, Onion and Garlic image

You can use any kind of potatoes for this but Yukon Gold are simply the best! All ingredients can be adjusted to taste. If you do not like your garlic crispy then just add in two or three whole bulbs garlic (outer layer of skin removed) sprinkle with oil and place in the roasting pan with the potatoes and separate the cloves after roasting. If desired, roast 1-2 pounds fresh mushrooms in the oven with a bit of butter or oil until they are soft and release their juices, remove to a bowl and continue with the recipe, add in the mushrooms to the roasting pan just before serving, I have done this many times if I have fresh mushrooms handy.

10 slices bacon (can use more)
5 large yukon gold potatoes, unpeeled and cut lengthwise into 4 large wedges
3 medium onions, cut into 4 wedges
20 garlic cloves, peeled (or to taste, about 2 large heads, separated and peeled)
3 teaspoons dried thyme (or to taste, rubbed between fingers to release the flavor)
salt and black pepper (I use seasoning salt)

Steps:

  • Set oven to 425ºF.
  • Prepare a large roasting pan.
  • In the roasting pan cook the bacon in the oven until crisp (this should take about 10 minutes) remove from the roaster and crumble, then set aside to a plate to cool slightly (DO NOT drain the bacon fat, leave in the roaster).
  • Place the potato wedges skin-side down in the roasting pan; toss to coat in the bacon fat (you can also add in some oil if it seems too dry).
  • Add in onion wedges (the onion wedges will separate).
  • Sprinkle the peeled garlic cloves in the pan around the potatoes and onions.
  • Sprinkle the veggies with rubbed thyme, salt and pepper.
  • Roast uncovered for about 40-45 minutes, or until the potato wedges are fork-tender and browned.
  • Before serving sprinkle with crumbled bacon and season with more salt and pepper if desired).

1 kg medium salad potatoes, peeled (a waxy type of potato)
30 g unsalted butter
1 small onion, halved and thinly sliced
300 ml double cream
400 g smoked rindless streaky bacon
12 -18 sage leaves

Steps:

  • Put the potatoes in a saucepan of cold water and bring to the boil, adding salt to the water.
  • Cook for 12 minutes, or until you can just pierce the potatoes with a skewer.
  • (they should be not quite cooked).
  • Drain well and slice as thinly as possible.
  • Melt half the butter in a frying pan, add the onion and cook until softened and translucent, about 5 minutes.
  • Preheat the oven to 200*C 425*F.
  • Put the cream in a saucepan and bring to the boiling point, then simmer for 3 minutes.
  • Arrange one third of the bacon in a large baking dish, greased with butter.
  • Put 4 sage leaves on top.
  • Add a layer of half the potato slices, then another of half the onion.
  • Pour inhalf the cream.
  • Put half the remaining bacon on top and 4 more sage leaves.
  • use the remaining potatoes and onion in the same way, pour in the remaining cream, then put the remaining bacon and sage on top.
  • Dot the sage with the rest of the butter.
  • Bake in the oven for 20 minutes.
  • Cover the dish with foil and bake for a further 30 minutes.
  • Using a skewer, test to see if the potatoes are soft all through.
  • If necessary, return to the oven, uncovered, for a further 5 to 10 minutes, making sure that the bacon and sage don't burn.

1 - well seasoned cast iron skillet
3 - potatoes, new red, sliced
2 clove(s) garlic, chopped
2 slice(s) bacon, uncooked, chopped
3 dash(es) of salt, paprika, granulated garlic, granulated onion and black pepper
4 tablespoon(s) butter, melted

Steps:

  • Preheat oven to 425 degrees F. Coat a well-seasoned cast iron skillet with oil.
  • Arrange sliced potatoes in a spiral in the skillet.
  • Spread chopped garlic on potato. Season with salt, black pepper, granulated garlic and onion (if desired), and paprika.
  • Chop raw bacon and place on top and in between the potatoes. As this dish cooks, the bacon will become crispy, the fat will baste the potatoes.
  • Put skillet in the oven, cook for 45 minutes.
  • After 45 minutes, remove the skillet and pour a little melted butter over the potatoes.
  • Put skillet back in the oven and cook for 5-10 minutes.
  • Garnish with shredded cheddar cheese, chopped green onions, and sour cream.

1 1/2 lbs small potatoes, halved
1/3 cup flour
1 1/2 tablespoons oil
4 garlic cloves, minced
1/4 cup sage leaf, chopped
1 tablespoon unsalted butter
kosher salt
fresh pepper, ground

  • Preheat oven to 450°F and place a large, heavy skillet or roasting pan in the oven to heat.
  • Place the potatoes in a large saucepan and cover with cold salted water. Put on high heat to boil. Once boiling, lower heat and simmer for 5 minutes.
  • Drain the potatoes well, and place on paper towels. put the flour on a plate. When the potatoes are dry, roll them in the flour to coat.
  • Remove the hot skillet from the oven and add the oil and potatoes. Roast, shaking the pan occasionally until the potatoes are golden brown all over, about 30 minutes.
  • Remove from the oven and add the garlic, sage and butter. Return to the oven for one minute.
  • Season generously with salt and pepper and serve.
