Roasted Mini Potatoes are crispy and flavorful. They're a quick and delicious side dish that requires minimal effort and yields excellent results!

Number Of Ingredients 7

1 lb mini potatoes
1 teaspoon fresh rosemary, (finely chopped)
1 tablespoon fresh parsley, (chopped)
1 teaspoon fresh thyme, (finely chopped)
3 cloves garlic, (minced)
1 tablespoon olive oil
salt and pepper to taste

Steps:

  • Preheat oven to 365 F
  • Toss all ingredients in a medium sized mixing bowl until potatoes are fully coated. Transfer the potatoes to an 8-10'' baking dish and cover with foil. Bake for 30-40 minutes.
  • Remove the pan from the oven and toss the potatoes with a wooden spoon. Uncover the potatoes and increase the heat to 450 F. Bake for 10-15 minutes or until the potatoes are crispy and easy to poke with a fork (keep an eye on them since potato sizes can vary!) Garnish with fresh chopped parsley and serve.

1 (24 ounce) bag unpeeled golden baby potatoes
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon chopped fresh rosemary, or to taste
sea salt and freshly ground black pepper to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Combine potatoes, olive oil, garlic, rosemary, sea salt, and pepper in a bowl. Toss until potatoes are covered and garlic is evenly distributed. Transfer to a rimmed baking sheet.

2 pounds small potatoes, baby Yukon gold or red skin potatoes
6 cloves garlic, cracked away from skin
2 to 3 tablespoons extra-virgin olive oil, enough to just coat potatoes
2 tablespoons fresh rosemary leaves, chopped

  • Preheat oven to 450 degrees F.

3 pounds baking potatoes, peeled and cut into 1 1/2-inch cubes
1/2 cup olive oil
4 garlic cloves, minced
1 1/2 teaspoons dried oregano, crumbled
1 teaspoon salt
Freshly ground black pepper
1/2 cup beef stock or chicken stock
1/3 cup freshly squeezed lemon juice
2-3 tablespoons chopped fresh oregano

Steps:

  • Preheat oven to 400°F.
  • Place the potatoes in a single layer in a 13-x-9-inch baking dish and pour the oil over them. Add the garlic, dried oregano, salt and pepper to taste and toss well to coat with the oil.
