BAKED LEMON GARLIC SALMON RECIPE

2 lb salmon fillet
Kosher salt
Extra virgin olive oil (I used Early Harvest Greek extra virgin olive oil)
1/2 lemon, sliced into rounds
Parsley for garnish
Zest of 1 large lemon
Juice of 2 lemons
3 tbsp extra virgin olive oil (I used Early Harvest Greek extra virgin olive oil)
5 garlic cloves, chopped
2 tsp dry oregano
1 tsp sweet paprika
1/2 tsp black pepper

Steps:

  • Heat oven to 375 degrees F.
  • Make the lemon-garlic sauce. In a small bowl or measuring cup, mix together the lemon juice, lemon zest, extra virgin olive oil, garlic, oregano, paprika and black pepper. Give the sauce a good whisk.
  • Prepare a sheet pan lined with a large piece of foil (should be large enough to fold over salmon). Brush top of the foil with extra virgin olive oil.
  • Now, pat salmon dry and season well on both sides with kosher salt. Place it on the foiled sheetpan. Top with lemon garlic sauce (make sure to spread the sauce evenly.)
  • Fold foil over the salmon (seam-side up). Bake for 15 to 20 minutes until salmon is almost completely cooked through at the thickest part (cooking time will vary based on the thickness of your fish. If your salmon is thinner, check several minutes early to ensure your salmon does not overcook. If your piece is very thick, 1 1/2 or more inches, it may take a bit longer.)
  • Carefully remove from oven and open foil to uncover the top of the salmon. Place under the broiler briefly, about 3 minutes or so. Watch closely as it broils to make sure it doesn't overcook and the garlic does not burn.)

This spring-produce-packed one-pan meal makes a healthy and satisfying weeknight dinner. Melted garlic butter coats the salmon and vegetables, adding depth of flavor and richness to the dish.

1 pound baby Yukon Gold potatoes, halved
2 tablespoons extra-virgin olive oil, divided
¾ teaspoon salt, divided
½ teaspoon ground pepper, divided
12 ounces asparagus, trimmed
2 tablespoons melted butter
1 tablespoon lemon juice
2 cloves garlic, minced
1 ¼ pounds salmon fillet, skinned and cut into 4 portions
Chopped parsley for garnish

Steps:

  • Preheat oven to 400 degrees F. Toss potatoes, 1 tablespoon oil, 1/4 teaspoon salt and 1/8 teaspoon pepper together in a medium bowl. Spread in an even layer on a large rimmed baking sheet. Roast until starting to soften and brown, about 15 minutes.
  • Meanwhile, toss asparagus with the remaining 1 tablespoon oil, 1/8 teaspoon salt and 1/8 teaspoon pepper in the medium bowl. Combine butter, lemon juice, garlic, 1/4 teaspoon salt and the remaining 1/4 teaspoon pepper in a small bowl.
  • Sprinkle salmon with the remaining 1/8 teaspoon salt. Move the potatoes to one side of the pan. Place the salmon in the center of the pan; drizzle with the butter mixture. Spread the asparagus on the empty side of the pan. Roast until the salmon is just cooked through and the vegetables are tender, 10 to 12 minutes. Garnish with parsley.

My sister made this for the family last weekend -- oh my -- it was a feeding frenzy! Don't be frightened by the amount of garlic. The roasting makes it mellow and sweet. The sis served baked cherry tomatoes as a side. Yummy!

2 medium heads of garlic, broken into separate cloves, peeled
1/4 cup olive oil
3 tablespoons unsalted butter
3 lbs whole salmon fillets
4 teaspoons fresh lemon juice
4 teaspoons fresh rosemary, chopped

Steps:

  • Preheat oven to 400 degrees.
  • Place garlic in ramekin. Pour enough oil over to cover.
  • Wrap the ramekin in double thickness of foil.
  • Bake until garlic is very tender; takes about 35 minutes.
  • Using a slotted spoon, transfer garlic and 1 T. of the oil to a food processor.
  • Add butter to processor; puree.
  • Season with salt and pepper.
  • Preheat oven to 450 degrees.
  • Place salmon on baking sheet.
  • Season with salt and pepper.
  • Drizzle with the lemon juice, then spread on the garlic puree.
  • Bake uncovered until JUST COOKED THROUGH. Don't overcook your salmon! Should take about 15 minutes but watch carefully.
  • Sprinkle with rosemary and serve.

1 red pepper, cut into strips
1 red onion, sliced
1 Tbsp. minced garlic
1 lemon, cut crosswise in half, divided
1/4 tsp. black pepper
4 small skinless salmon fillets (1 lb.)
1 jar (15 oz.) CLASSICO Creamy Tomato & Roasted Garlic Pasta Sauce
1 jalapeño pepper, seeded, chopped
1-1/2 cups panko bread crumbs

Steps:

  • Heat oven to 400°F.
  • Spread red peppers and onions onto bottom of 13x9-inch baking dish sprayed with cooking spray; sprinkle with garlic. Cut 1 lemon half into thin slices; spread over ingredients in baking dish. Sprinkle with black pepper; top with fish.
  • Squeeze juice from remaining lemon half over fish. Pour pasta sauce over ingredients in baking dish; top with remaining ingredients. Cover.
  • Bake 25 to 30 min. or until fish flakes easily with fork. Remove baking dish from oven. Heat broiler.
  • Broil ingredients in baking dish, uncovered and 4 inches from heat, 5 min. or until bread crumbs are golden brown.

I found this in a Canadian Living Magazine years ago. I don't have the magazine any more but I did write down the recipe. Here it is.

4 salmon fillets (skin removed)
4 carrots, sliced on the diagonal
2 red onions, cut into wedges
2 red peppers, cut in bite sized pieces
2 zucchini, sliced diagonally
1 (14 ounce) can artichoke hearts, drained and cut into bite size pieces
2 tablespoons olive oil
2 tablespoons white wine vinegar
1 1/2 teaspoons thyme
2 garlic cloves, minced
2 tablespoons anchovy paste
3/4 teaspoon pepper

Steps:

  • Heat 1 tbsp oil.
  • Cook onion, garlic, 1 tsp thyme, pepper, artichokes, and anchovy paste. for ten minutes in a large skillet.
  • Remove pan from heat. Add pepper, zucchini, and vinegar and place on a rimmed baking sheet.
  • Put vegetables in 425° oven for 25 minutes.
  • Remove, place salmon on top of vegetables. Brush with a mixture of 1/2 tsp thyme, a pinch of salt and 1 tbsp olive oil. Bake an addition 10 - 15 minutes.
  • Remove and enjoy.

1 1/4 pounds carrots, cut into 1-inch pieces
2 medium red onions, cut into 1-inch wedges
1 tablespoon extra-virgin olive oil
Coarse salt and ground pepper
8 skinless salmon fillets (2 pounds total)
1/2 pound orzo
2 tablespoons unsalted butter
2 tablespoons chopped fresh dill
2 tablespoons chopped fresh parsley
1 tablespoon fresh lemon juice

Steps:

  • Preheat oven to 450 degrees, with racks in middle and lower thirds. On a rimmed baking sheet, toss carrots and onions with oil and season with salt and pepper. Roast on middle rack until tender and onions are golden, about 20 minutes, stirring halfway through. Line another rimmed baking sheet with parchment. Season salmon with salt and pepper and roast on bottom rack until opaque throughout, about 12 minutes.
  • Meanwhile, in a large pot of boiling salted water, cook orzo according to package instructions. Drain, return to pot, and toss with butter, dill, parsley, and lemon juice. Season with salt and pepper. Transfer 4 salmon fillets and 1 cup vegetables to an airtight container; refrigerate, up to 3 days. Serve remaining salmon fillets and vegetables with herbed orzo.
