This is by far my favorite fall and winter treat to have available, and makes an incredible food gift to anyone without an allergy--for the holidays or any occasion! Store cooled nuts in airtight containers for up to 2 weeks.

Steps:
- Preheat the oven to 325 degrees F (165 degrees C).
- Beat egg whites with salt in a bowl until frothy; add sugar gradually, beating to stiff peaks. Gently fold in pecans, almonds, and cinnamon. Pour mixture onto a 15 1/2 x 10 1/2-inch jelly roll pan, drizzle melted butter over top, and toss to coat.
- Bake in the preheated oven, tossing every 10 minutes, until nuts are crisp, about 40 minutes. Serve warm or at room temperature.

- Preheat oven to 325 degrees.
- Place butter on a 15 1/2 x 10 1/2-inch jellyroll pan; place in oven to melt butter, about 7 minutes. Meanwhile, beat egg whites with salt until frothy; gradually add sugar, beating to stiff peaks.
- Gently fold in almonds and cinnamon. Pour almond mixture onto.

- Preheat oven to 450 degrees. Spread pecans in a 13-by-9-inch baking dish; toast until fragrant, 3 to 5 minutes. Remove pecans, and set aside (or store in a resealable plastic bag, up to 1 day).
- In a large bowl, combine sugar, lemon juice, and 1/4 cup water. One at a time (to prevent them from turning brown), halve apples through the stem end, core, using a melon baller, and immediately toss with sugar mixture.
- Arrange apples, cut side down, in baking dish; pour sugar mixture over. Tuck in cinnamon sticks; cover dish with foil. Bake until apples are easily pierced with the tip of a paring knife, 15 to 20 minutes.
- Serve apples with ice cream, topped with pan juices and pecans. Garnish with cinnamon sticks, if desired.

- Preheat oven to 225 degrees fahrenheit. Lightly grease a rimmed baking sheet. Combine the egg white and water in a mixing bowl; beat until fluffy. Fold in the pecans to coat evenly. ROASTED BRUSSELS SPROUTS AND CINNAMON BUTTERNUT SQUASH WITH PECANS AND CRANBERRIES

- Preheat oven to 400 F. Lightly grease the foil-lined baking sheet with 1 tablespoon of olive oil.
- Trim ends of Brussels sprouts and remove yellow leaves.
- Then, slice all Brussels sprouts in half.
- In a medium bowl, combine halved Brussels sprouts, 2 tablespoons of olive oil, salt (to taste), and toss to combine.
- Place onto a foil-lined baking sheet, cut side down, and roast in the oven at 400 F for about 20-25 minutes. During the last 5-10 minutes of roasting, turn them over for even browning, the cut sides should be nicely and partially charred but not blackened
- Preheat oven to 400 F. Lightly grease the foil-lined baking sheet with 1 tablespoon of olive oil.
- In a medium bowl, combine cubed butternut squash peeled and seeded,1 tablespoon of olive oil, maple syrup, and cinnamon, and toss to mix.
- Place butternut squash in a single layer on the baking sheet. Bake for 20-25 minutes, turning once half-way through baking, until softened.
- Toast pecans in the preheated oven at 350 F

- Toast the pecans for about 5 minutes maybe a bit longer in the preheated oven at 350 F until they get darker in color
- In a large bowl, combine roasted Brussels sprouts, roasted butternut squash, pecans, and cranberries, and mix to combine.
- add 2 or 4 tablespoons of maple syrup, if desired - do not add all maple syrup at once, start with 2 tablespoons, then add more, if desired, and toss with the salad ingredients to combine.
CINNAMON SUGAR ROASTED PECANS
I made these for my dad last Christnas because he loves pecans and they smelled amazing in the oven and were very addictive, everyone loved them.

- 1. Preheat oven to 225F. In a small bowl, mix together the sugar, cinnamon, and salt then set aside. In a medium-sized mixing bowl, whisk together the egg white and vanilla until foamy (about 2 minutes). Add the pecans and mix until they are coated evenly in batches, add the sugar mixture and evenly coat the pecans. Transfer to a parchment paper lined sheet in a single layer. - 1. Preheat oven to 325°. In a bowl beat egg whites till frothy, add vanilla and pecans, stir nuts until coated with egg white mixture. Add in cinnamon, cayenne pepper, and sugar, stir well. Spread pecans evenly onto a baking pan greased with non-stick cooking spray. Bake for 25 minutes, stirring once after 10 minutes. Allow pecans to cool completely before serving. Store any leftovers in an airtight container. Note: You can use 1/2 cup Xylitol (which is an all natural sugar substitute), in place of sugar.
CINNAMON ROASTED PECANS

- Beat egg white until it just begins to become frothy, not entirely white, foamy and stiff. Add salt, cinnamon, cloves, allspice and sugar. Mix well. Add pecans and stir to coat the pecans. Spread pecans onto a buttered cookie sheet and bake at 250º for 1 hour. Remove from oven and allow to cool. Break apart large clusters, if desired. 1/4 to 1/2 tsp of ginger can also be added to this recipe for a little extra kick of flavor.
