3 1/2 pound calabaza (Caribbean pumpkin; often sold in large wedges) or butternut squash
3 tablespoons olive oil
Accompaniment: lime wedges

Steps:

  • Preheat oven to 475°F with racks in upper and lower thirds.
  • Seed and peel calabaza, then cut into 3/4-inch-wide pieces (about 3 inches long).
  • Toss with oil, 1 1/2 teaspoons salt, and 3/4 teaspoon pepper, then divide between 2 large shallow heavy baking pans, spreading in 1 layer.
  • Roast calabaza, switching position of pans and turning calabaza over halfway through cooking, until tender and starting to caramelize, 35 to 45 minutes.

1 teaspoon tuna caviar
1/2 cup extra virgin olive oil
1 lemon, juiced
1 lime, juiced
2 tablespoons pumpkin seed oil
1/2 cup toasted, ground pumpkin seeds
1 tablespoon garlic chives, chopped
1 pound Big Eye Tuna, diced
Salt and pepper, to taste
1 pound Calabaza squash, 1-inch dice
2 tablespoons olive oil
Salt and pepper, to taste
8 ounces peppercress
1 tablespoon pumpkin seed oil
1 tablespoon extra virgin olive oil
1 lemon, juiced
1 lime, juiced
Salt and pepper, to taste

Steps:

  • Blend tuna caviar, olive oil, lemon and lime juice and pumpkin seed oil in a blender. Fold into that mixture the pumpkin seeds, garlic chives, tuna and salt and pepper. Reserve 4 tablespoons of dressing. Refrigerate until ready to assemble dish.
  • For the Calabaza: Toss all the ingredients and bake in a preheated 400-degree oven until tender, about 5 to 8 minutes. Once cooked, chill.
  • For the salad: Mix all ingredients together.
  • Assembly: In a 3-inch round mold, first layer the Calabaza squash. Then layer the tuna. Remove the mold and top with peppercress salad. Drizzle the remaining 4 tablespoons of caviar dressing on the plate.

Simple roasted pumpkin recipe I came across on epicurious.com. Substitute the squash below for Calabaza. Calabaza is often sold already chopped into chunks in many Latin markets. This is because of the difficulty many have in chopping the whole squash. Select pieces with a fresh, moist and unblemished flesh. Soft or wet spots means the squash is beginning to spoil. The color of the flesh should be a bright orange. Whole squash are more difficult to find, but if you find one, select one that still has the stem attached and is heavy for its size. You should avoid purchasing a squash with bruises, cuts, or soft spots. Calabaza is available year round.

1 lime, cut into wedges
salt and pepper

Steps:

  • Preheat oven to 475°F.
  • Remove the seeds and peel the calabaza, then cut into 3/4-inch-wide pieces
  • Toss with oil, salt, and pepper.
  • Spread onto baking pans in a single layer.
  • Roast the calabaza for 20 minutes then turn each piece.
  • Roast for another 20 to 30 minutes or until they are caramelized.
  • Serve with lime wedges spritz onto squash.

This is a fusion Hungarian-Jamaican recipe with calabaza squash that's really, really good!

½ calabaza
1 tablespoon olive oil, or to taste
salt and ground black pepper to taste
½ small lime, juiced
4 tablespoons hot sauce
3 tablespoons sweet paprika
2 teaspoons honey
6 (8 ounce) chicken leg quarters

Steps:

  • Preheat the oven to 475 degrees F (245 degrees C).
  • Cut the calabaza into wedges; clean out all seeds and pulp and cut away the peels. Put the wedges flat in a baking dish. Drizzle with olive oil and season with salt and pepper on each side.
  • Bake in the preheated oven for 15 minutes.
  • While squash bakes, combine lime juice, hot sauce, paprika, honey, salt, and pepper. Dry chicken legs and toss in sauce until evenly coated. Place chicken in a separate baking dish.
  • When calabaza has baked for 15 minutes, lower oven temperature to 450 degrees F (230 degrees C) and place chicken alongside it.
  • Bake until chicken is no longer pink in the centers and juices run clear and calabaza is soft, about 15 minutes. An instant-read thermometer inserted near the bone of a leg quarter should read 165 degrees F (74 degrees C). Remove and plate.

Half of a Jamaican Calabaza
salt and pepper to taste
olive or peanut oil
3 tablespoons sweet paprika and more to taste
4 tablespoons hot sauce
Half a small lime
2 tsp honey
6 chicken legs

Steps:

  • Preheat the oven to 475. Cut the calabaza into wedges. Clean out all seeds and pulp. Cut away the peels. Put the wedges flat on a baking dish. Drizzle with oil and season with salt and pepper on each side. Bake for fifteen minutes. In the meantime, combine hot sauce, honey the juice of half a lime, paprika, salt and pepper. Dry chicken legs. Combine sauce with chicken legs and make sure everything is evenly covered. Lower temperature to 450 degrees. Put chicken legs in seperate dish, sprinkling additional paprika, and place in the oven. After fifteen minutes, test calabaza. If soft, remove. Probe chicken with thermometer to check if 160 degrees. If not crispy enough, broil for five minutes. Remove chicken and plate.
