ROASTED ASPARAGUS WITH FETA CHEESE

Steps:
- Preheat the oven to 425 degrees F.
- Divide and toss the asparagus with the olive oil, salt, and pepper, and arrange in a single layer on 2 to 3 separate large rimmed baking sheets.
- Place in the oven and roast until the spears are tender and the tips are turning golden and slightly charred, 10 to 12 minutes.
- Prepare the vinaigrette while the asparagus is roasting. To a bowl, add the Dijon mustard, vinegar, salt, and pepper. Whisk in the olive oil to emulsify. Taste for seasoning and adjust, if necessary.
- Remove the asparagus from the oven and place on a serving platter. Drizzle with the vinaigrette and sprinkle with the feta cheese. Serve warm or at room temperature.
ASPARAGUS WITH BACON AND FETA
Steps:
- Preheat the oven to 450 degrees F.
- On a baking sheet, toss the asparagus with 1 tablespoon of the oil and the salt and pepper. Arrange in a single layer and roast until the asparagus is tender, 10 to 13 minutes.
- Meanwhile, in a skillet over medium-high heat, cook the bacon until crisp, 3 to 4 minutes. Remove to a paper-towel-lined plate to drain, reserving 3 tablespoons of the bacon drippings.
- In a medium bowl, whisk the bacon drippings, mustard, vinegar, honey and the remaining 2 tablespoons oil until combined.
- To assemble: Plate the asparagus. Sprinkle with bacon and feta, and drizzle with Dijon dressing. Finish with flaky sea salt. Serve warm.

- Place asparagus in a large bowl. Drizzle olive oil over asparagus and season with garlic powder; toss well. Transfer asparagus to a baking sheet.
- Bake in the preheated oven until asparagus are tender, about 20 minutes.
- Place lettuce in the same bowl used for asparagus; top with tomatoes, feta cheese, and asparagus.

- Preheat oven to 220C (500F).
- Toss the asparagus with 2 tablespoons olive oil, salt, and pepper.
- Place in a large shallow baking pan in one layer and roast until tender, abut 10-15 minutes.
- Shake the pan once about halfway through roasting, to keep the asparagus from burning.
- Remove and transfer to a serving plate.
- Whisk together the remaining olive oil and lemon juice.
- Pour over the asparagus, sprinkle the pink peppercorns, feta, and dill on top, and serve, garnished if desired with a wedge of lemon.

ROASTED ASPARAGUS & PEPPERS WITH FETA
This is from the Kraft Canada website, but don't let that discourage you. It's very good and it doesn't use any of that "kid" food that I normally think of when I hear the name "Kraft". We just used normal, unflavored feta cheese, but I'll bet it would be even better with the feta specified in the recipe.
